The Twelve Days of Everest

Employee Spotlight: Danisha Bethune Written by Cathy Dugdell

What field of study did you receive your master’s degree in? I actually have two master’s degrees. I have a master’s degree in Communications from University of South Florida. I recently graduated from Everest University Online with a Master of Business Administration (MBA) with a concentration in Human Resource Management. What motivated you to continue your education to the master’s degree level? I’ve always been interested in organizational communication and training/consulting. I be-lieve communication is what makes any group, family or organization function properly. Without communication, we’re stumbling around without a designated purpose. Groups can be dysfunctional and survive without appropriate communication and processes, but it will hinder that group from reaching its full potential. I later found that knowing and understanding an organization from a managerial/business perspective is equally important, so I became interested in getting an MBA. I did not have the time or desire to go to another ground campus, so Everest University Online was a good fit for me at the time. Do you plan to further your education even more? No, I’ve been in school a long time. APA style has been burned in my brain and now I feel it is time to use my degrees and gain some experience, and so on. Also, a healthy resume re-quires both education and experience. What types of challenges have you overcome while attending school? At Everest University Online specifically, my main issue was self-pacing and discipline. Online offers a lot of freedom and I liked that, but I also had to make sure that I did meet my post-ing requirements within the required timeframe. The quicker I completed my assignments, the more time I had for other things. What tips can you offer students to help balance personal, work and school life to make the college experience successful? I think looking at one’s syllabus at the beginning of the term is a good thing to do. It gave me a snap shot of what I was going to learn for the term. However, I actually managed my assignments on a weekly basis because I could then focus on what specifically I needed to do during the week.

I also have some other quick tips: Always plan ahead.

Set realistic expectations for yourself. If you hate studying on the weekend, then don’t do it — study during the week.

Complete your reading assignments early so if you have questions about it, you can email your instructor and ask for help in a timely manner

What satisfaction have you achieved from completing your master’s degree? I felt a sense of completion. As corny as it sounds, it’s true. I finished! This degree can potential-ly give me an opportunity to work with an organization using the knowledge I’ve learned. I look forward to my future. How do you plan to utilize your degree in your career field or will you possibly be entering a new career field? I currently work at Everest University Online and plan to continue in my current position while seeking other opportunities in the organization. I appreciate the autonomy and work process I have in my current position as a scheduling advisor. I would really like to work at Everest Uni-versity Online in a creative capacity dealing with organization development and change if that position or project ever presents itself.

Study Tips for Single Parents Written by Joanna Cassidy

Children do not come with directions, but each parent puts forth the best effort. As an advisor, one of the first things I ask a new student, is why he or she wishes to earn a degree. Commonly, a new student will say to improve the life of his or her children. Attending graduation, I find there is nothing like seeing the pride of a child watching mom or dad walk across the stage. Below are some tips gathered from parenting magazines, other universities, and Everest University Online students.

Time Management – Most successful students, especially parents, have a schedule for life and school. This starts with understanding that a full-time credit load is a full-time job. Parents should communicate the importance of school to their children, which includes the study time. Jennifer Burleson, a fourth-year Criminal Justice bachelor’s degree student says, “My children are well aware when I am studying, I am not to be bothered! Every student should schedule time frames as to not be overwhelmed or be interrupted.” To Jennifer’s point, if the children are old enough, placing a schedule on the

refrigerator is one way of making study time visible for the whole family. Include things, such as a block of family time will show that they are not forgotten.

Studying with children helps parents gain more study time while the children are awake. Creating a little competition with grades helps both child and parent with academic goals. If the children are younger, they may sit at the table coloring or working on a puzzle. Waking an hour early is another way to gain some quiet time for studies. “I get most of my work done in the mornings while my daughters sleep,” says Lisa McMillon, third year Criminal Justice bachelor’s degree student.

Keeping notes or readings on hand helps utilize time, such as when waiting at the doctor’s office or while picking up the children from school. CourseSmart offers a mobile app for etexbooks that may be loaded onto most smart devices: http://www.coursesmart.com/go/mobile. Everest University Online also offers an e-Mobile app that allows a student to post to discussion, view her gradebook, or check course announcements (under “Everest University Online” in app store).

“Trust yourself. You know more than you think you do.” —Dr. Benjamin Spock, pediatrician and parenting author.

Setting a bed time for the children is important. This allows time while the children sleep, for you to complete house chores and studies. “What I usually do is wait until my children are in bed to do my school work. If I can get someone to watch my 4-year-old then I do my school work then. I will admit it is rough at times. Sometimes I do not go to bed until 1 or 2 a.m., but I get my assignments done,” says Connie Voss, third term Business associate degree student.

Support – Deciding to attend school is a huge commitment. Students should really consider who can be personal supporters.

If not done at the beginning, a student should consider having a conversation with the best supporters, so he/she knows who can be counted on for an hour of babysitting or to help pick up the kids from school.

Building a relationship with a student advisor also provides support. Advisors under-stand the resources the school offers such as tutoring, the library, and CARE Student Assistance Program (http://www.everestcares.com/). Additionally, advisors listen when a student needs to vent frustrations or needs a reminder of why he/she has deciding to take on this challenge.

Communicate with Instructors – Many students feel intimidated by instructors. However, instructors are humans too and a huge part of student success. Most instructors want to see their students succeed and understand that life happens. Just as it is easier to go to a close friend for help, students who develop relationships with instructors find it easier to request instructor assistance.

On the first day of class, a student should introduce himself/herself. Additionally, a student should make note of each instructor’s office hours and phone

number. With the instructors now available on Skype, it is even easier to communicate.

Knowing late work policies will also help. If an instructor can see that a student is making an effort, he/she is more likely to give consideration.

“For all the single parents out there furthering their education, my heart goes out to you. Congratulations and good luck,” say Connie.

Attendance Policy Changes

Every year, Everest University Online takes a day to help out the Metropolitan Ministries organization with donations that come in to support the Tampa area families that are homeless or those that are at risk of becoming homeless. The Everest employees assist in everything from sorting clothes, sorting food donations and toy donations for the holiday season. In addition to the time invested for the day, the employees have been raising money throughout the year through various campaigns to provide additional money to support this awesome charity .

Top Ten Christmas Survival Guide Written by Danisha Bethune

The Christmas season is coming up soon and I know there are a lot of things to do from decorations to dinner. It can be a wonderful time or a stressful time. I have listed some suggestions that will hopefully make your season merry and bright!

1. Look for deals online – there are sales galore right now.

2. Verify what the host wants you to bring to the house for the holiday, that way

you can get the ingredients for your masterpiece early and make it in a timely

manner.

3. Volunteer to bring something for dinner that you are comfortable with making.

4. Look online for quick recipes/snacks (Chex mix, etc.).

5. Remember what the holiday is about; it is better to give than to receive.

6. Ask for Christmas lists early if you intend to bring presents.

7. Keep an eye out for sales in stores; there are still a few out there.

8. Buy wrapping paper in bulk and use what’s left for next year.

9. Shop for decorations and wrapping paper at area bargain stores.

10. The day after Christmas shopping is great for wrapping paper and decorations

(there are a lot of sales for holiday decorations; they rarely go out of style).

Red Velvet Cake Roll

Here are some of our favorite holiday recipes. Don’t forget to visit us on Pinterest! http://www.pinterest.com/everestuonline/

INGREDIENTS

3/4 cup all-purpose flour* 2 tablespoons cocoa 1/2 teaspoon baking powder 4 large eggs 3 large yolks 3/4 cup Imperial Sugar Extra Fine Granulated Sugar 1 teaspoon vanilla extract 3 tablespoons buttermilk Pinch salt 1 teaspoon red food color gel or paste 3 large egg whites, no traces of egg yolk! 3 tablespoons Imperial Sugar Confectioners Powdered Sugar 2 tablespoons Imperial Sugar Extra Fine Granulated Sug-ar Cream Cheese Frosting *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scoop-ing measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

DIRECTIONS

1) Preheat the oven to 420°F. 2) Sift together flour, cocoa powder and baking powder and set aside. 3) Line a jelly roll pan (12.5 x 17.5 inches) with parch-ment paper and brush lightly with melted butter. Sprinkle evenly with flour and shake out excess. Set aside. 4) Using a stand or hand held mixer whip eggs and yolks until in a bowl large enough to hold all ingredi-ents until well combined. Add first listed sugar and whip for at least 7 minutes on medium speed and un-til the mixture is thick, mousse-like and pale. 5) On lowest speed add vanilla, buttermilk, salt and red food color. Mix only until everything is combined. Remove from machine, using a hand held spatula delicately fold in the dry sifted ingredients ensuring to retain a light, airy and fluffy batter. 6) In a clean separate bowl, whip egg whites with remaining sugar until soft peaks-do not whip until stiff.

7) At once add whipped egg whites and fold very delicately trying to retain a light and fluffy batter. 8) Pour onto prepared jelly roll pan and spread as evenly as possible. 9) Place in oven and bake until the center of the cake bounces back and until you see the cake re-tracting from the sides in a few areas. 10) While still hot, using a sift cover evenly with a thin coat of Confectioner’s sugar. 11) Turn over immediately onto a large kitchen towel. Allow the cake pan to retain over the cake until the cake is completely cold. 12) Meanwhile prepare cream cheese icing. 13) Remove jelly roll pan followed by parchment pa-per. Oftentimes the very top layer of cake will peel off, if so, remove it. 14) Place cake with its wide horizontal side towards you. Spread 3/4 of cream cheese frosting evenly over the surface. Starting with the bottom roll up the cake tightly. Using kitchen towel roll it forward. 15) Lay roll with the seam on bottom. Using your kitch-en towel transfer the roll onto a serving tray. If you en-counter difficulty keep roll in the kitchen towel and place it on the back of the jelly roll pan. Place in the refrigerator to properly firm up and roll is easier to handle. 16) Pipe additional frosting on the surface of the roll.
