Q: Do you have any special Thanksgiving traditions? A: Thanksgiving is our favorite eating holiday! We have the same food every year; traditional and delicious. We spend the day - watching the parade and football on TV and generally just relaxing. In the past few years since our children are now old enough to participate, we have made PB & J sandwiches at one homeless shelter and delivered meals to shut ins with another worthy organization.

About the WomanShelter/Companeras  

WomanShelter/Compañeras operates a confidential emergency shelter for women and children who are trying to escape from dangerous relationships. The goal of the shelter staff is to keep families safe in a home-like atmosphere and assist them in their efforts to establish violence-free lives. WomanShelter/Companeras also works with men who are victims of abuse, and will help find safe housing.

Thank you for all the the generous donations to the U.S.O. Stockings for Soldiers drive! Bob Mason of our Kia store and his wife Shirley collect items to stuff stockings

and ship them to our troops overseas. The Lincoln Elementary school’s 4th grade class also handmade cards to send. The U.S.O or United Services Organization, is a nonprofit organization that provides for our soldiers on

Spinach & Artichoke Stuffed Chicken -brought to you by Renee Charles

Ingredients:  Chicken:

● 4 boneless, skinless chicken breasts

● 2 tablespoons Italian Seasoning ● 1 teaspoon mild paprika (optional) ● salt and pepper to season

Spinach and Artichoke dip: ● 4 oz frozen spinach thawed ● 8oz block cream cheese ● 6oz bottled or canned artichoke

hearts in brine ● ½ cup shredded mozzarella cheese ● ¼ cup finely grated parmesan

cheese ● 1 tablespoon minced garlic ● salt to taste

Optional Cream Sauce: ● remaining spinach/ artichoke dip ● 1 cup milk

Ingredients:  For the Chicken:

1. Place each chicken breast on a flat surface. Season both sides of each breast with the Italian seasoning and paprika. With your hand supporting each piece, cut a slit or pocket about ¾ of the way through, being careful not to cut all the way.

For the Dip Filling: 1. Squeeze any and all excess liquid out of the spinach.

Discard the water released. In a medium-sized bowl, combine the spinach, cream cheese, artichokes, mozzarella, parmesan and garlic; mix well to combine.

2. Fill chicken ‘pockets’ with 1-2 tablespoons of the spinach artichoke dip, spreading evenly with the back of the spoon. Reverse the leftover dip for the optional cream sauce.

3. Seal with two or three toothpicks near the opening to keep the dip inside while cooking.

4. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the chicken and fry until golden. Rotate and fry on the other side, covering pan with a lid, until cooked through (about 6-7 minutes per side). Transfer chicken to a warm plate to make the optional cream sauce.

For the Cream Sauce: 1. Pour milk into the skillet / pan and bring to a simmer. Add

the remaining dip (you should have half remaining) and stir until sauce is combined and thickened. Add the chicken back into the pan and serve immediately!
