8 ounces penne (gluten free for gluten free)2 tablespoons butter1 onion, diced2 cloves garlic, chopped3 tablespoons flour (rice flour or masa harinafor gluten free)2 cups milk4 ounces cream cheese, room temperature1/4 cup parmigiano reggiano (parmesan),grated1/2 cup mozzarella, shredded1 (14 ounce) can artichoke hearts, coarselychopped8 ounces spinach, coarsely choppedsalt and pepper to taste
1. Start cooking your pasta as directed on thepackage.
2. Melt the butter in a pan over medium heat, addthe onion and cook until tender, about 57minutes.
3. Add the garlic and cook until fragrant, about aminute.
4. Sprinkle in the flour and cook for a few minuteswhile stirring.
5. Add the milk and cook while stirring until itthickens up, about 12 minutes.
6. Add the cheese and cook while stirring untilthey melt, about 12 minutes.
7. Add the artichokes and spinach and cook whilestirring until the spinach wilts, about 12
