I Didnʼt Know That:” by Christina Alfonso, resident of Southbridge ([email protected] ) The kitchen is the heart of the home. We cook and even entertain there. We spend hours in the kitchen everyday; cooking, cleaning, and warming up food. While most people think that cooking is the number one thing performed in the kitchen thatʼs not true, itʼs actually the prep work (cutting, chopping, etc.) to make that dish that consumes most of our time in the kitchen. Prep work plays a huge role in our lives. I know that the more prep work involved, the less likely I am to make the recipe. I mean, who likes to spend hours in the kitchen, and prep work can really take up half, if not more, of the time it takes to make a recipe. When I first starting cooking daily, I noticed I was in the kitchen at least an hour a day to complete a full meal. That time, didnʼt even include the cleaning of all the dishes I made! Cooking was consuming a lot of my life and I hated it! I couldnʼt afford to eat out every day, who can, and since eating is essential to living, not cooking wasnʼt an option. So I got to thinking, what can I do to reduce my cooking time? An idea hit me, look for quick recipes that stated 30 minutes or less to make, that would solve everything! I went to my computer and downloaded a bunch of 30 minute recipes. I was so excited, my tireless kitchen experience was over, Yea!!! The first day I made a 30 minute recipe it took me 45 minutes, the next day and another recipe later, it took me 50 minutes! I was confused, frustrated and thinking, “what the heck, they liedʼ! Well they didnʼt lie, but what they did forget to explain was that, yes it could take 30 minutes to make that meal but only if you have the right tools. Months after I tried the 30 minute meal recipes, I was talking with a co-worker at lunch about my experiences. You see my co-worker, was an ex-chef. As soon as I finished explaining that those meals never really take 30 minutes to prepare, he gave me the best kitchen advice I have received to date. He said ʻyou have the wrong toolsʼ. I was so confused, of-course I had the right tools! I had tons of knifes, pans, bowls, and every kitchen tool I could think of. “What do you mean?” I asked. etc. If youʼre not using the right ones youʼre creating more work for yourself, not less”. That was the defining moment that turned the tide of me hating cooking to feeling a more enjoyable experience with cooking. After coming to my house a couple days later to see what I had, it turns out, a lot of my tools were useless and of the ones that werenʼt, I was using them the wrong way. What I slowly began to learn over the next couple of months is something they never talk about in those cooking shows, or what the recipes leave out; there are certain kitchen items that can change the way you spend your time in the kitchen.

Over the next few columns Iʼm going to share the top 12 kitchen tools I use in my kitchen all the time. The ones that multi-task, that slice, dice, chop, etc., my vegetables, meats and fruits in no time and allow me to actually make a 30 minute meal in 30 minutes!

Of course one of the most important tools are a set of knifes. All of us have them. We have the butcher block with numerous knifes, but do you know the different uses for each, when to use which knife and why? I didnʼt. After my education by my ex-chef coworker, I was amazed with the difference in my cutting time and even the force which I applied by my hand when cutting. You see when you use the right knife, you cut quicker, with less force and exertion. So how can you find out the different uses of each of your knifes? Well, head over to my ʻbest friendʼ Google. There are tons of websites that have illustrations and descriptions of each of the over 100 different type of knifes out there and what they work best on. One site I found when ʻGooglingʼ that was useful was: http://

www.recipetips.com/kitchen-tips/t--1075/types-of-kitchen-knives.asp., but there are hundreds of sites that provide great information.

Another hugely important aspect of knives is their sharpness. Did you know that even with moderate use, some knives (depending on their quality) can dull out within a year. So how do you find out if your knives are sharp? Here are a few tests you can try. The first is cutting a piece of paper, hold a piece of paper in the air and cut it vertically, if your knife can cut through it then itʼs sharp. You can also try a tomato. If the knife cuts right through the tomato, with very little effort on your part and without squeezing out the mushy inside, your knife is sharp. If your knives arenʼt sharp, there are different sharpening tools you can use. Often times a honing steel or butcher steel comes with your set of knives. This is that long metal rod that comes in the center of your butcher block (google ʻbutcher steelʼ for a pic). You can also buy a knife sharpener at any store that sells knives. After I conducted the above sharpness test and found out my knives were dull, I sharpened them. WOW, what a huge difference in the reduction amount of effort and time I needed to cut and chop! Now with my new found knowledge, cutting, slicing, and dicing takes minimal effort and time. Allowing for my spending less time in the kitchen!

In the next couple of columns, I will discuss some of my other favorite kitchen tools that are must haveʼs in my kitchen.

Paying Your Association Maintenance Assessments on Time

A majority of us live on a budget. As we approach the fall and upcoming holiday season, you may be tempted to “juggle” your bills. In doing so, you will decide which bills will be paid on time and which ones wonʼt. You may decide to hold off on paying your association maintenance assessments – donʼt! For starters, you will likely incur late charges and/or interest on late payment(s). If payment is further delayed, your account could wind up being sent to the Associationʼs attorney for collection. This will result in your incurring attorneyʼs fees and costs in addition to the late charges and interest on your account as provided in your Associationʼs governing documents and Florida statutes.

Many people donʼt realize that it is equally as important to timely pay your maintenance assessments as it is your mortgage payment. Community associations in Florida have the right to file a lien foreclosure action if assessments are not paid timely. The end result could be the loss of a home, just like in a mortgage foreclosure action. In addition, by the end of an association lien foreclosure action, the cost to resolve the delinquency may far exceed the delinquency itself due to the additional charges described above. Fall Selling Season"Where did the year go", how many times

Well, holidays will soon be upon us….again! Where did the year go???  Time to get out those quick, easy recipes that we bring to the parties, serve our out of town guest and our family after a very  busy day.

When in doubt as to what to make, I always start off with my favorite ingredient…ground meat (also called chopped meat and hamburger meat).  This meat can take a lot of abuse. I canʼt really think of too many ingredients that DOES NOT go well with this protein.  Mix a lot or a few things with this, put it into a casserole dish, bake and dinner is really!

I always try and have some stables around, so at the last minute, all I need is a pound of ground meat.  You will be surprise how a can of this and a can of that can turn out to be so tasty.  Look over the recipes below and add, delete or mix any of the ingredients and create a family favorite.  So, start heating up the skillet, add a lot of good ingredients and like always….LET THE GOOD TIMES ROLL!!!! POTATO/BEEF CASSEROLE          1 pound ground beef                           1 cup onion, chopped          1 can cream of mushroom soup          1 can cream of celery soup          1 24- package frozen potato puffs       1 pound cheddar cheese, grated 

Brown beef and onions together.  Salt and pepper.  Drain. Layer half of the mixture in casserole dish. Mix the soups together. Pour half of this over the beef.  Layer half of the potatoes over this, top with half the cheese and repeat layers.  Bake 400 degrees for 30 minutes or until hot and bubbly. 

SOUTH TEXAS CASSEROLE          1 pound ground beef                         1 15 oz. can yellow corn (or frozen corn)          1 cup sour cream                                1 cup salsa (your favorite)          1 pound cheddar cheese, grated        ¼ cup black olives (can be omitted)          1 ½  cups broken corn chips 

Brown beef and drain.  Mix all ingredients together EXCEPT the corn chips.  Put in casserole dish.  Bake 350 for 25 minutes.  Add chips and bake 5 minutes more. 

MEXICAN CASSEROLE          1 pound ground beef                          1 onion, chopped          1 clove garlic, minced                         1 can Enchilada sauce          1 can Ro-Tel tomatoes                        1 can cream of mushroom soup          1 cup cheddar cheese, grated             Tortillas, quartered

Sauté beef, garlic and onions.  Add enchilada sauce and simmer.  Combine tomatoes and soup.  Add this to the beef mixture. Stir until well mixed. Grease a 2 qt. casserole dish and place ½ of the tortillas, topped with ½ meat mixture.  Repeat.  Top with cheese.  Bake uncovered at 350 for 30 minutes.
