Shitake Mushroom, Spinach & Fig Oatmeal with Cardamom 5oz Sliced, Shitake Mushrooms 5oz Fresh, Baby Spinach leaves 5 Sliced, Dried Black Mission Figs 2 cups Oat milk 1 cup rolled oats 1 tsp ground cardamom (*see instructions for preparing cardamom from whole seeds. The flavor and aroma will be worth it!) 1 tsp ground ginger Course Sea Salt Coconut Oil – refined. *Cardamom seed prep- In dry, heated skillet, add 1tbsp of whole cardamom seeds and toast for 2-3 mins. Then pop the pods from the seeds to either grind with pestle & mortar or coffee bean grinder. In large skillet – heat generous amount of coconut oil to medium heat. Add mushrooms and gently sauté until tender with hints of golden brown. Add more oil and reduce heat if mushrooms start to stick. Add spinach leaves and continue to sauté med/low until completely reduced (about 15mins). Add figs and sauté for another minute. Add Oat milk, ground cardamom, ginger and sea salt. Bring to low boil. Add oats. Simmer and stir occasionally until most of the milk is absorbed and oats are tender. Serve Warm. Serves 2
