    Serious eaters know that Vermont is the place for craft beer, award-winning cheeses and flavorful maple syrup. But salami?While meat-curing rooms are still more common in Italy than in the Green Mountains, theyre the reigning trend at an increasing number of Vermont restaurants.

    At Hen of the Wood in Burlington the award-winning Waterbury resto opened this second location last year chef Eric Warnstedt sources whole local animals and employs almost every cut in his hearty dishes, from head cheese to sausage. A few miles away, the commissary for the Farmhouse Group supplies its five restaurants including South Burlingtons Guild Tavern and Church Streets newest spot for Italian fare, Pascolo Ristorante with fresh speck, etc.

    As nose-to-tail cookery has gained in popularity, so have options for those who dont eat meat or gluten. Many Vermont chefs recognize that a growing number of people eschew wheat, and they roll out gluten-free pizzas, pastries and breads that are sometimes barely distinguishable from the real thing. Burlington has two new vegetarian restaurants Revolution Kitchen and Pingala Caf & Eatery that ply the local populace with meat-free goodies such as seitan-poblano fajitas and eggplant bacon.

    What hasnt changed since we began publishing 7 Nights more than 10 years ago is the dizzying array of eateries in our state, from classic diners to centuries-old taverns to sleek cocktail bars. Whether youre looking for a hip Winooski bakery or a sumptuous mountaintop meal in Stowe, weve got it covered.

    After a recent visit to the Green Mountains, Connecticut-based food and travel blogger Linda Orlomoski noted, Everything just tastes different in Vermont.

    People still talk about a kitschy Montgomery Center restaurant that closed a dozen years ago. Zacks on the Rocks was less celebrated for its food than for its namesake, a purple-robed proprietor who presided over the dining room wearing a crown and ermine-lined robe.

    Jon Payne Zack Zachadnyk was a tough act to follow. But Nick Barletta and Scott Pasfield are pulling it off with a two-man show at the INN. The couple credit Jay Peaks close-knit community of big-city expats for luring them north. Barletta,

    a former vice president of operational risk at American Express, lent his financial acumen to the project. Pasfield, a photographer famous for his groundbreaking book, Gay in America, added a passion for art. The pair share a culinary aesthetic that would be unusual anywhere, much less in rural northern Vermont.

    Just like at nearby townie pubs, diners can sidle up to the bar at the INN and order a plate of wings. But theres always a twist: The Buffalo sauce dressing on the wings is combined with hoisin. The blue-cheese dipping sauce isnt made with some nameless supermarket

    crumble its Roquefort. Drink with that? The bartender is ready to mix up something equally eclectic, such as a cocktail that includes floral St-Germain, fresh cilantro and ginger.

    At dinnertime, guests eat in one of a warren of dining rooms adorned with antlers and idiosyncratic objets such as a wax bust of Elvis and a couch stenciled with silhouettes of automatic weapons. They feast on fusion food that spans the globe, not only from dish to dish but on each individual plate. One main course, St. Louis pork ribs, combines Vermont and Japanese flavors with a maple-miso glaze emboldened by the crunch of a brussels-sprout-and-apple slaw.

    The best blend of all? At the INN, New York flair meets small-town Vermont. Pasfield and Barletta have restored quirky quality to Zacks beloved Monkey Center.

The playful Baby Bucco is a plate of two mini-braised veal shanks over beans and rice. The gingery sauce on the chopped kale salad gives it an Asian kick that cuts through the heavy winter flavors featured in other dishes.

    Five years ago, Newport was designated one of two Vermont food deserts, meaning its residents lacked access to fresh, affordable food. It was a gentle call to arms for the passionate farmers, chefs and activists of this city on the shores of Lake Memphremagog.

    A string of community gardens sprang up, and a downtown natural-foods market expanded. Then, last year, a clutch of food producers transformed an ex-department store into a locavore mecca anchored by a butcher, baker and cider maker and a caf called Brown Dog Bistro.

    The airy, boho-chic eatery has floor-to-ceiling front windows that look out on Newports main drag, while its side is exposed to the wealth of cheeses, meats, veggies and maple products inside the ambitious new Northeast Kingdom Tasting Center. Chef Bill Small blends these raw materials into hearty, Qubcois-style comfort food, with local goodies spiking everything from drinks to dessert.

    The rose-hued Orleans Bitter aperitif is distilled from local apples and flavored with fresh herbs. The bird inside the duck-confit rillettes, served with fig jam, was raised just over the Canadian border near Lac-Brome.

    These Nordic delights are just the beginning of a leisurely French Canadian feast of mustardy corned-beef-and-cabbage soup, citrus-spiked rice salad, and luscious braised short ribs slathered in a peppery sour-cherry glaze. Small supplies plenty of creative flourishes. Sauted calamari arrive in a tart ice-cider sauce dotted with raisins; grilled-cheddar sandwiches are laced with kimchi; and succulent, smoky cider-glazed pork belly comes on a roll with tarragon-spiked coleslaw.

    Brown Dogs fare is some of the most imaginative and satisfying in Vermonts Northeast Kingdom. From this vantage point, the desert appears to be blooming.
