Kitty Hoynes opened in Syracuse, NY in July 1999 in the historic Crown Building on the corner of West Fayette and Franklin in Armory Square. The Pub is named after David’s mother, Catherine (Kitty) and her spirit continues to inspire us every day to offer a truly genuine Irish Pub experience -- the warmest hospitality, One Hundred Thousand Welcomes, and Mighty Craic! The roots of Kitty Hoynes are in Thomastown, County Kilkenny, Ireland in 1920 where Grandfather, William Hoyne, started the Bar, grocery, hardware & undertaking business. A typical Irish small town business, its diverse history included buying things like rabbits for export to the UK during World War II, buying wool from sheep farmers, cutting their own meats for the grocery store, making hand hewn coffins, selling farmers feedstuffs, bottling Guinness and Whiskey from wooden casks into individually labelled bottles, auctioneering land and tillage, and stocking builders materials.The bar tradition continues today in Syracuse. Look around you and you will see the many bric a brac items from back then. The stained glass Pheasant doors and Fisherman from Kavanagh’s Pub, an old road sign from Kilmacthomas, old clay jars from the shop along with the many signs, fixtures and fittings that make Kitty Hoynes a traditional Irish Pub & Restaurant.

Irish Coffee was invented at Foynes, a small town in the West of Ireland, in the 1940’s. Foynes was an airbase near Limerick, which by 1940, was handling large numbers of traveling American passengers, including many American politicians and Hollywood stars. Foynes and their iconic flying boats are closely connected to Irish Coffee, playing a significant role in the invention of our favorite Irish Cocktail. Of course, as with anything in Ireland (and Syracuse) the weather played a role too. In 1942, a new restaurant opened, led by Irish Chef Joe Sheridan. The restaurant catered to the important passengers passing through Foynes and worked to show people from around the world what Irish hospitality was all about. One night, there was a relentless storm, and Joe and his staff were asked to prepare food and drink for the cold and tired passengers. Sheridan decided to prepare something unique to warm the passengers up. He brewed dark, rich coffee, added in some Irish Whiskey, some brown sugar, and floated freshly whipped cream on top of each cup.As the passengers enjoyed Sheridan’s creation, one American passenger said, “Hey Buddy, is this Brazilian Coffee”? “No”, said Joe, “that’s Irish Coffee”. The Irish Coffee became an instant hit at Foynes, but may never have become an international success, had the travel writer, Stanton Delaplane, not brought the recipe back to Jack Koeppler, who began serving the Irish Coffee as a bartender at the Buena Vista Hotel in San Francisco. From its invention at Foynes airport in Ireland, raised to popularity at The Buena Vista Café in San Francisco, the classic Irish Coffee has found a home in Syracuse at Hoynes, expertly built by our bar team using quality ingredients.
