hristopher Columbus first laid eyes on Bocas del Toro on October 6,1502, on his fourth and final voyage to the new world.

There are several theories on how Bocas del Toro got its name. Many historians suggest that it owes its name to a native chief called Boca de Toro, known for his strong character and a tireless fighter. The name evolved over time to Bocas del Toro. Bocas is made up of 9 large islands, about 50 smaller ones and over 200 mangroves. It’s located 493km west of Panama city, and its capital and international airport are in the town of Bocas on Isla Colon. The flight is only 45 minutes from Panama City on Air Panama.

Bocas possesses a rich history that dates back to the arrival of Christopher Columbus, later becoming a haven for pirates and subsequently a trade center for cacao and bananas in the nineteenth century. In the early twentieth century, Bocas became the first headquarters of the United Fruit Company, and was once located in the building now occupied by the Hotel Bahia. The dock across from the Hotel Bahia was the main pier for the United Fruit Company, and many of the old houses surrounding it today belonged to employees. At the time, the main medical center was established west of Cayo Solarte which is where it got the name Hospital Point.

The natural beauty of Bocas del Toro has made it one of the top destinations to visit in Panama. Its beautiful landscapes, abundant wildlife and colorful people are just some of the reasons you should visit.

ristóbal Colón llegó a Bocas del Toro el 6 de octubre de 1502, en su cuarto y último viaje. A pesar de que existen varias versiones sobre el origen del nombre de esta provincia, historiadores de

Bocas del Toro indican que debe su nombre a un cacique indígena llamado Boca de Toro, el cual era de un carácter fuerte e incansable luchador, con el tiempo el nombre cambió a Bocas del Toro.

Está conformado por un grupo de nueve islas de gran tamaño, aproximadamente 50 islotes y 200 manglares. Se encuentra ubicado a 493 kilómetros de distancia de la Ciudad de Panamá. La cabecera es Bocas del Toro o Isla Colón, en donde se encuentra el aeropuerto; el vuelo desde la ciudad de Panamá toma 45 minutos aproximadamente.

Bocas posee una rica historia que se remonta a la llegada de Cristóbal Colón, sigue al convertirse en lugar de descanso de piratas ingleses y luego como un próspero sitio para el comercio del cacao y banano en el siglo XIX, hasta convertirse en el hogar de la primera casa matriz de la United Fruit Company a principios del siglo XX, en el mismo edificio que hoy ocupa el Hotel Bahía. El muelle en el frente del Hotel Bahía solía ser el muelle principal de la compañía, y muchas de las casas viejas eran los hogares de los trabajadores y empleados. En esa época el centro médico modelo de la región fue establecido al oeste de Cayo Solarte, hoy día conocido como “Hospital Point”.

La exuberante belleza natural de Bocas del Toro lo han convertido en uno de los destinos más importantes para conocer en Panamá. Sus hermosos paisajes, la gran cantidad de animales en su hábitat natural y el encanto de su gente, son solamente algunas de las razones por las que debemos conocer Bocas.

The Ecylpse de Mar Acqua Lodge is committed to conservation. Los lugares para visitar en Bocas del Toro son muchos, por esto se han creado diferentes tours que ofrecen la oportunidad de admirar toda la belleza de las diferentes islas del área.Después de un corto viaje cruzando las isletas de manglares del Parque Marino se puede visitar el pueblo de Bastimentos. Además puede conocer: los Cayos Zapatillas, Playa Bluff con sus distintiva arena naranja; Playa de las Estrellas, en la cual se encuentran una gran cantidad de estrellas de mar, las cuales no debe sacar por ningún motivo fuera del agua ya que esto las afecta gravemente; Red Frog, en donde podrá admirar estas ranitas rojas de tamaño diminuto; Cayo Coral, el paraíso para los amantes del esnórkel; Bahia de los delfines donde puede ver estos animales en su hábitat natural; además puede ver desde la lancha Isla Pájaros un santuario de aves impresionante; también puede ir en automóvil a Boca de Drago una playa que se encuentra a 20 minutos de Isla Colón y la famosa Gruta en donde se encuentra la cueva de murciélagos.

There are many places to visit in Bocas del Toro, which is why there are many tour options for visitors to explore, enjoy and admire the natural beauty of the Bocas area. Taking a short boat ride through the mangrove islets of the marine park, you can visit the village at Bastimentos. Stopover at the Zapatilla Keys or Bluff Beach with its distinctive orange sand. Hundreds of starfish decorate the shallow waters of Starfish Beach and are fascinating to see, but must never be removed from the water. Other tour options include Red Frog Beach, with its tiny frogs, or Coral Key, a paradise for snorkelers. On a boat ride to Dolphin Bay, you can enjoy dolphins in a natural setting and see the multitudes of birds on Bird Key, a sanctuary island. A twenty minute drive on Isla Colon will take you to Boca del Drago where you can visit the interesting bat caves.

Son dos islas dentro del parque nacional marino isla Bastimentos, estas islas son conocidas como Cayo Zapatilla 1 y Cayo Zapatilla 2, se encuentran a aproximadamente una hora en lancha de Isla Colón. La más recomendable para visitar es Cayo Zapatilla 1, ya que posee una extensión más amplia con 34 hectáreas, las cuales se pueden recorrer en 30 minutos aproximadamente. Está rodeada de un arrecife de coral bien preservado y muy diverso. Poco profundo y bueno para el esnórkel, si no hay olas el agua está muy transparente. Usted puede preguntar por los diferentes Tours que están disponibles en Isla Colón para visitar esta magnifica reserva natural.

Made up of two islands, Zapatilla 1 and Zapatilla 2, located within the Bastimentos National Marine Park. They can be reached by boat in one hour. We recommend visiting Zapatilla 1 since it is larger but can still be explored in around 30 minutes. Surrounded by a well preserved and diverse coral reef, the clear shallow waters make it perfect for snorkeling. Get information on Isla Colon about the different tours to these magnificent islands.

3. Surf

The best surfing spots are Bluff Beach, The Dump, and the point at Carenero Island. Bluff Beach is a long beach with strong wave action, but it is not always suitable for surfing. The Dump is a favorite with local surfers. It can be dangerous because the waves break close to a reef, and the surfers need to veer off before reaching it. The point at Carenero Island can also be dangerous because, like The Dump, it is in a reef area.

Los sitios preferidos por los surfistas son: Playa Bluff , ‘’The Dump’’ y en la punta de Isla Carenero. La primera es una playa larga con olas muy fuertes, no siempre buena para surfistas. La larga caída subacuática produce largas y continuas olas que rompen casi en la playa. ‘’The Dump’’ es favorita entre los surfistas locales. Es peligroso porque las olas rompen cerca de un arrecife de coral y los surfistas deben tener cuidado de acabar antes de llegar a ese punto. Isla Carenero es tan peligrosa como ‘’The Dump’’, con muchos arrecifes de corales cerca de las olas.

Si desea practicar la observación de aves puede hacerlo tanto por mar, con la observación de aves marinas, como en tierra, con la observación de aves en el bosque. La atracción absoluta entre todas las aves es el Rabijunco Etéreo, que anida en Swan´s Cay (Isla Pájaros), declarado santuario de aves. Entre las aves marinas podrá observar el pelícano pardo y en las costas de los manglares los ardeidos y garcetas. Además en Isla Popa habitan los hermosos tucanes.

Históricamente, las tortugas marinas han llegado a las costas de Bocas del Toro durante siglos. Cuatro tipos de tortugas marinas arriban a las playas de las islas a anidar: tortuga carey, tortuga caguama, tortuga laúd y la tortuga verde. Esta última hace una migración importante durante los meses de julio y agosto. Entre los lugares ideales para la observación de tortugas en Bocas están Playa Bluff, donde grupos conservacionistas organizan actividades para ayudar a conservar los nidos, y Playa Long en el Parque Marino, en donde usualmente no hay turistas.

Colon Island Bocas del Toro es un pueblo con una personalidad fuerte. La arquitectura de las casas viejas, con su viejo estilo caribeño, es parte de la identidad de Bocas. Sea turtles have been coming to the coasts of Bocas del Toro for centuries. There are four types of sea turtles that arrive to nest on the beaches, tortuga carey, tortuga caguama, tortuga laúd y la tortuga verde. The major migrations of the green sea turtles takes place during the months of July and August. Ideal spots to obseve the sea turtles of Bocas are on Bluff Beach where conservationists organize activities to protect the nests, or on Long Beach and the marine park where there are usually no tourists.

Bocas Del Toro is a community with a big personality and the Caribbean architecture of its old houses is part of what identifies it. Silently, they tell the story of the rich banana plantation days of the early 20th century when the United Fruit Company opened its offices on Isla Colon.

If bird watching is your thing, you can watch both sea birds and forest birds in Bocas. The prime attraction for birdwatchers is the red-billed tropicbird which can be seen at Swan’s Cay bird sanctuary. Among seabirds commonly seen are the brown pelicans, and on the mangrove coasts, herons and egrets. Toucans are regularly seen on Isla Popa.

The best word to describe the local cuisine around the island is delicious. Some of the dishes that can be enjoyed are rondon, fried fish, pig’s feet, coconut bread and many other Caribbean flavored treats.

Afro-Caribbean Cuisine

If you are interested in native cultures, it is a good idea to visit San Cristobal, Popa 2, Salt Creek and Bahia Honda. These communities are known for their craftsmanship and traditions. Women make small bags, called chacaras, from a vegetable fiber called pita. Chacaras usually contain beautiful geometric patterns from natural dyes.

g Los mejores lugares para esnorquel están en la bahía de Almirante, donde los arrecifes de corales están más protegidos, las aguas son usualmente cristalinas y no hay oleaje. The best places to snorkel are in Almirante Bay where the reefs are better protected and the water is calm and shallow. Many of the snorkeling areas are also good for scuba diving since the reef depth can go down to 60 feet. Some notable diving spots are Hospital Point and the Garden on Solarte Key, on the coast of Isla Colon, Mangrove Point, Big Baight and Boca del Drago. In the Bastimentos National Marine Park are Zapatilla Keys, Crawl Key, Cristonal Light and Cristobal One. The reefs surrounding Bocas are very healthy, with a large population of fish, corals and sponges. There are endless spots for divers to enjoy and discover due to the abundance of clear water filled with a variety of plant and wildlife throughout the area.

Only a few miles from Isla Colon is Bastimentos Island, the largest in the archipelago. It has preserved the colorful Caribbean life. A weekly celebration is held on Mondays known as “Blue Mondays”. This tradition dates back to the time of the United Fruit Company, when its workers organized dances on Monday nights.

destination, the ancestral lands of the Ngöbe in the Bocas del Toro Archipelago.

A united community

Rutilio is an expert in wildlife and has agreed to show us all of the hidden secrets locked away in the mangroves of Bahia Honda. This community is a model example of low impact eco-cultural tourism.

The local natives have taken the opportunity to offer tourism services and have become the hosts and guides for the areas nature trails, ancestral fishing, traditional cuisine and artisan crafts.

Near Bahia Honda is a canal flanked by countless red mangroves which leads to the Sendero del Perezoso (Sloth Trail), a path dominated by the tides which is available for tours due to the natives. As we advance silently, we admire the intact ecosystem.

A fearsome snake, the fer-de-lance, crawls along a branch in search of some unsuspecting squab. A few yards away, a mother begins a slow retreat to the top of the mangrove’s canopy. It is a three-toed sloth protecting her young that clings to her breast. The abundance of orchids and birds further demonstrate the lushness of this paradise, at risk of urban development.

La Otra Cara de la IslaAcabada la aventura, partimos hacia la otra cara de la isla, donde existe una aldea de pescadores artesanales.En un pequeño restaurante conozco a Oscar Powell. Me cuenta con preocupación cómo la pesca ha ido mermando la fauna y flora de la isla, debido al uso de redes de trasmallo y a la captura indiscriminada de pequeños ejemplares de langostas, versión que corroboran otros pescadores de Bastimentos.Powell nos alerta también por el uso irresponsable de lejía (técnica que consiste en echar en el agua disueltos de álcalis o sus carbonatos. La que se obtiene cociendo ceniza sirve para la colada), para atrapar pulpos escondidos en los corales.“La sobrepesca llevó a mirar con esperanza esta nueva industria que es el turismo”, cuenta el pescador. “Pero, si queremos algo para nuestros hijos, vamos a tener que ordenarnos y conservar lo poco que nos queda”.Anochece. Visto desde Bastimentos, el mar parece de plata pura. Las luces de Bocas marcan el camino de retorno hacia la “civilización” y el “progreso”, donde el cemento crece.

The other side of the island

With our adventure completed, we head to the other side of the island, occupied by a village of artisan fisherman. In a small restaurant I meet Oscar Powell. He voices his concern on how the fishing has slowly been diminishing the local flora and fauna due to the use of drag nets and the indiscriminate capture of young lobster, a story that is corroborated by other local Bastimentos fishermen. Powell also alerts us to the irresponsible use of bleach products (a technique which involves dissolving alkali carbonates in the water) to capture octopus hidden in corals.

“Overfishing made us put all our hope in tourism,” says the fisherman. “But if we want to leave something for our children, we will have to conserve and manage the little we have left.”

It darkens, the lighting makes the ocean look as if it were made of liquid silver. The lights from the town of Bocas signal the way back to “civilization” and “progress”, where the cement grows.

In Sweden, in the 1700’s Carl Linnaeus, a poet turned naturalist, developed the first comprehensive tree of life and is, therefore, known as the father of modern taxonomy.

One might ask whether, in the intervening 300 years have they not discovered all of the species—thus putting themselves out of work. The answer is a resounding “NO!”

Panama holds living secrets that date to when the isthmian land bridge formed between North and South America. Suddenly animals, plants and insects from North America and South America came into contact with each other. Panama = abundant life!The marine life that once existed in the great seaway between the continents were forever forced to dwell either in the cold Pacific or the warm Caribbean and go their separate evolutionary ways when the seaway closed. They became sister species that could no longer mate even if you could reunite them.. As a result of this, Panama is one of the most biodiverse small countries in the world.

The Smithsonian Tropical Research Institute inaugurated its new Bocas del Toro research station on Isla Colon in 2003. Station director Rachel Collin, herself a curious taxonomist, decided to promote the station. With funds from the Smithsonian and the U.S. National Science Foundation, the station now sponsors annual courses. The Training

in Tropical Taxonomy Program attracts groups of students who spend several weeks a year hunting for treasures of organisms and they are turning up new species!

Now there are more than 6000 species in the Smithsonian’s online database of species found in Bocas del Toro.

With the help of the scientific community, earth-minded individuals, business leaders who are concerned about sustainability and curious young science students trying to find their role in this wonderful world, the scientists at STRI continue to add and contribute to the tree of life by discovering and studying these organisms.,

Why haven’t we heard about these organsims? The amount of public funds spent to understand the organisms on Earth still pales in the face of the amount spent to study our neighboring planets. Knowledge gained at STRI in Panama promotes a greater understanding of the earth. As the human population reaches 7 billion, we are likely to face a horrific problem when disease organisms become resistant to most known antibiotics, and the source of the few new antibiotics we have are fairly obscure animals, plants, fungi and bacteria from relatively unknown places like Bocas Del Toro or Coiba National Park on Panama’s Pacific Coast.

Los Científicos descubrieron una versión enana de los perezosos de tres dedos, encontrados únicamente en la isla de Escudo de Veraguas. Scientists discovered a dwarf version of the three-toed sloth, found only on the island of, Escudo de Veraguas. The unusual sleep patterns of this sloth—studied by Bryson Voirin a visiting scientist at the Smithsonian from the Max Planck Institute-- have been the subject of National Geographic, BBC and Nick Baker’s Wild Creatures documentaries.

Between 2005 and 2009, University of Florida professor Arthur Anker, and his colleagues collected shrimp that they did not recognize in the region. Alphaeid shrimp don’t usually have spines or teeth on their shells, but they found four specimens, two in Bocas del Toro, two in the Panamanian Pacific (Playa Venao) and the Colombian Pacific and one in Mexico with teeth. They named them Triacanthoneus toro, Triacanthoneus pacificus and Triacanthoneus alacranes. Triacanthus means three teeth.

Researchers also discovered a new peppermint shrimp species, Lysmata hochi. This shrimp species starts out its life as a male and later becomes a hermaphrodite, capable of reproducing.

Studies in Belize noticed that starfish devour some bright orange fire sponges called Tedania ignis, but seem to avoid others that appear only subtly different. In Panama the same brighter species seemed to be more affected by a disease than Tedania ignis. Researchers compared DNA sequences of the two sponges and found that they were two different species. They called the new species Tedania klausi. The genetic differences between the two species were the same in Belize and in Panama.

There’s a reason to wear dive booties! The gastrotrich! gastrotrichs are a group of tiny, spineless animals that live in both fresh and salt water: tiny as in a tenth of a millimeter to 3 millimeters long. They live in the muck. . Their name comes from “gaster” meaning stomach and “thrix” meaning hair. See the nice picture! Gastrotrich experts have described more than 700 species. And there is a new one in Bocas!

¿Como recuerda el Bocas del Toro de su niñez?En mi niñez, Bocas era bastante sano y tranquilo, la belleza de nuestras playas eran las mismas, pero no había este auge turístico. En vacaciones tenías la oportunidad de aprender a tocar algún instrumento musical en los bomberos, inglés en la iglesia metodista o francés en cursos que daban en Isla Colón.

¿Cuando y como empezó el desarrollo turístico?Empezó a raíz del terremoto del 22 de abril de 1991, cuando vinieron voluntarios internacionales como La Cruz Roja Internacional y La Media Luna Internacional de Alemania a colaborar . Estas personas conocieron toda la belleza natural que hay aquí y quedaron encantados, algunos regresaron con sus familias, otros recomendaron a amigos y familiares visitarnos, así comenzaron a llegar los turistas. Para ese entonces muchos conciudadanos abandonaron Bocas asustados por el terremoto así que estos extranjeros empezaron a comprar estas propiedades y terrenos, hasta llegar al desarrollo turístico que tenemos hoy día.

What are your childhood memories of Bocas del Toro? As a child, I remember Bocas being a very quiet and calm place. The beauty of our beaches was the same, but the tourism boom had not yet reached us. During school vacations, we had the opportunity of learning music from the firefighters, English in the Methodist church, or French through courses taught in Isla Colon. When and how did the development of tourism begin?It began following the earthquake on April 22, 1991. Volunteers from the International Red Cross and the Red Crescent arrived and were astonished and enchanted by the natural beauty of Bocas. Some later returned with their families, and others recommended it to their friends. With this, waves of tourists began to arrive. At that time, many locals began to leave Bocas out of fear of another earthquake. The current situation is a result of foreigners that stepped in and invested in land which they later developed.

¿En que punto se encuentra el turismo en este momento?El turismo en Bocas se encuentra en su etapa más alta de los últimos 5 años, a pesar que ha bajado un poco por la crisis internacional. Somos uno de los principales destinos para visitar en Panamá por nuestras hermosas playas, arrecifes y naturaleza virgen.

¿Que planes futuros tiene el municipio para ayudar al turismo local?Nuestro principal proyecto es la disminución de la pobreza; queremos capacitar a las personas para que tengan acceso a trabajos dignos en la industria del turismo. Nuestro segundo objetivo es limpiar nuestras calles y playas, empezamos por cerrar un vertedero a cielo abierto que se encontraba en playa Bluff, construyendo un relleno sanitario en el otro extremo de la isla. Estamos acondicionando Isla Colón para recibir al turista con una ciudad más ordenada.

In what stage of development is the tourism market at the moment?Currently, it’s at its highest point in the last 5 years, although we have felt a bit of the impact due to the world financial crisis. We are still one of the top destinations to visit in Panama because of our beautiful beaches, reefs and unspoiled natural wonders. What future plans does the municipality have to support tourism?At a municipal level, our main goal is to fight poverty and extreme poverty. We are working on training people to have access to decent jobs they can be proud of. The tourism market is growing and demands more and more jobs every day. We want to be able to meet that demand. Our other main goal is to keep the streets and beaches clean. One of our initial projects was closing and moving the landfill that was near Bluff Beach. We are also renovating Isla Colon to give our visitors a better and more orderly town. Could you recommend a local dish to taste?The Rondon! It’s a soup made with coconut milk, vegetables and fried fish. It is delicious and very typical to the area. What place would you recommend visiting in Bocas del Toro?With so many options, it’s hard to mention only one. Some of my favorites are Cayo Zapatilla, Playa Bluff, Boca de Drago, Bahía de los Delfines y Playa De Las Estrellas.

Inicios del siglo XVII. Dos hombres que habitan Panamá, colonia de la Corona Española, se preparan para un duelo. En una mano, uno de los combatientes porta la espada para neutralizar a su oponente, y en la otra, una daga con la cual bloqueará los ataques en su contra.

Cuatro siglos después, una daga parecida es hallada durante la excavación seca del Programa de Ampliación, dando así la oportunidad de documentar otro episodio histórico del país.

“Se le puede denominar una daga de desvío o bloqueo, utilizada junto con una espada ropera para defensa personal, duelo, o la esgrima con ambas armas desenvainadas”, dijo Suart W. Pyhrr, curador del Departamento de Armas y Armaduras en el Metropolitan Museum of Art en Nueva York.

In the early seventeenth century, two residents of Panama are preparing to duel in a colony belonging to the Spanish Crown. In one hand, one of the gentlemen carries a sword to neutralize his opponent, in the other, a dagger to block the attacks against him.

Four hundred years later, a similar dagger was found during an excavation for the expansion of the Panama Canal, permitting us to document another historical event in our past.

“This is what is known as a defensive or blocking dagger, and it would have been used along with a rapier sword for defending attacks in duels or fencing” said Stuart W. Pyhrr, arms and armor curator at the Metropolitan Museum of Art in New York City.

Y John Clements, director de la Asociación de las Artes Marciales del Renacimiento en Georgia, Estados Unidos, aclaró que este tipo de daga servía tanto para la defensa, como para la ofensiva.

A particular ring design and small oval plate allowed Tobias Capwell, arms and armor curator of the Wallace Collection in London, to catalogue it as a commonly used weapon between 1590 and 1610.

John Clements, director of the Association of Renaissance Martial Arts in Georgia, USA, said that this type of weapon was used for both defensive and offensive techniques.

Desde mayo pasado la daga colonial de 34.6 centímetros de largo forma parte de la colección del Museo del Canal Interoceánico, entidad a la cual la Dirección Nacional de Patrimonio Histórico le cedió su custodia.

La daga quedó recluida por una semana bajo observación antes de iniciar una restauración que se prolongó por más de dos meses, a cargo del conservador y restaurador Erin Oscar Herrera, pupilo de la antropóloga e historiadora panameña Reina Torres de Araúz.

La daga llegó con desprendimientos en las capas de metal y atacada por el óxido. El primer tratamiento manual con bisturí removió la suciedad en su superficie para luego dar paso a los químicos que finalizaron la limpieza.En ese momento se inició el proceso de consolidación, durante el cual, con la ayuda de un químico especial, se protege el metal y se detiene su deterioro.

Por espacio de un año los especialistas vigilarán el comportamiento de la daga para detectar cualquier desgaste en su estructura. Pero antes, la pieza cumplirá con otro compromiso: formar parte de la Exhibición de la Ampliación que se inaugurará este año en el Museo Interoceánico del Canal.

The dagger was held for a week before a two month restoration project was carried out by Erin Oscar Herrera, a pupil of renowned Panamanian historian and anthropologist, Reina Torres de Arauz.

The dagger was suffering from rust and detaching metal layers. The first step of restoration involved removing the superficial dirt and grime with a scalpel to later finalize the cleaning with special chemicals. The last step is applying more chemicals that protect the metal from further deterioration.

The 34.6cm colonial dagger will be studied for a year to monitor the integrity of the metal. At the same time, it will be on display at the new Panama Canal Expansion wing of the Panama Canal Inter-Oceanic Museum.

El RondónIf you are looking for the best cuisine in any town, ask a local. They may

not direct you to the swankiest spot around, but it is always a good bet if

your goal is to find the most authentic and delicious local fare. That is what

the Escapes team did on its recent visit to Bocas Town. We went in search

of Rondon, a Caribbean fish and coconut milk soup, famous all along the

Caribbean coast and islands of Central America.

Everyone we spoke to directed us to El Beso Del Dragon for the best Rondon in

town. Rondon, local patois for “run down”, is fish soup simmered in coconut

milk. In the early days, when shops were scarce, creative housewives and

cooks found it necessary to “run down” the ingredients needed to produce a

meal. Freshly caught fish and coconuts were easy, you could run those down

everywhere, but the other ingredients needed to be “run down” wherever

they could be found: in farms, garden patches, or the bush; hence, there are

many varieties of Rondon. Even with these variations, the base is, and always

was, fish and coconut milk. Nowadays, everyone has similar adaptations of

carefully guarded recipes that usually have secret ingredients and particular

preparation techniques that make their version of Rondon special.

El Beso Del Dragon’s is indeed a sumptuous concoction of delicious and

nutritious ingredients perfectly prepared and enthusiastically enjoyed.

They kindly shared their Rondon recipe with us, and we share it with you.

They never told us the secret ingredient, so feel free to see what you can “run

down” and discover one of your own.

Si buscas la mejor cocina en cualquier pueblo, pregunta a un local. Puede que no te dirijan al lugar más elegante, pero es el camino correcto si su objetivo es encontrar la más auténtica y deliciosa comida local. Hoy en día, todos tienen adaptaciones similares de recetas cuidadosamente guardadas, que usualmente llevan ingredientes secretos y técnicas particulares de preparación, que hacen de su versión un Rondón especial.

El del Beso del Dragón es de hecho una mezcla suntuosa de deliciosos y nutritivos ingredientes perfectamente preparados. Crack the coconut (crack it in a receptacle to save the milk) grate the coconut meat, and soak it in 2 liters of water. Squeeze the coconut meat, heat the coconut water and milk to a boil, stirring constantly for 20 minutes. Add the culantro, onion, yuca, plantain, breadfruit, and otoe root. Simmer until tender. In a separate pan, fry lightly floured and salted fish until golden. Serve the coconut and vegetable broth hot, in a wide lipped bowl. Top it with the whole fish.

Serve with good picante.

Abra el coco (en un recipiente para preservar la leche) raspe la pulpa, y sumérgela en 2 litros de agua. Exprima la pulpa, caliente el agua de coco y leche hasta que esté a punto de ebullición, revolviendo constantemente por 20 minutos. Añada el culantro, la cebolla, la yuca, los guineos verdes, la fruta de pan y el otoe. Cocine a fuego lento hasta que esté blando. En una sartén aparte, fría el pescado ligeramente harinado y salteado hasta dorarlo. Sirva el coco y el caldo de vegetales, en un recipiente amplio. Para terminar la sopa colócale el pescado entero.

Found in the waters of every continent except Antarctica, the universal appeal of the bottlenose dolphin has made it an icon of the seven seas.

Bottlenose dolphins can be divided into two ecotypes, coastal and offshore. The coastal residential varieties are found in warm tropical inlets and bays. They are smaller and stay in specific areas and rarely migrate. Offshore varieties are larger, adapted to colder deeper water and migrate. The dolphins of Dolphin Bay in Bocas Del Toro are an example of coastal, residential dolphins.

Millenniums of myths and legends have linked humans and dolphins in symbiotic relationships. There have been documented cases of dolphins rescuing humans at sea and saving their lives. The Lions Club of Panama began the Commercial, Farming and Crafts Fair in 1961 and it was celebrated on the current David fair grounds until 1966.

In 1967 The first International Central American Fair was organized by the Lions Club of Panama. In 1977 it becomes an international event by: This past March 17, the 56th Annual San Jose de David International Fair was inaugurated. It is one of the most important events in Panama. Over a million dollars were invested, and attendance records were broken with an estimated 266,000 visitors, making this year’s fair a complete success.

During our trip to this important event we had the opportunity to visit a variety of exhibits. There are many things to see and do at the fair such as buy local and international handcrafts, eat great food, agricultural performances, carnival rides, folkloric dancing and much more. It is a great place to learn more about the local Panamanian culture. Of the different booths offered by local and international companies, we visited Air Panama who was offering information on their services and different destinations around the country.

En los años 1961-1966 empezó la feria comercial agropecuaria y artesanal organizada por el Club de Leones y se celebró en los terrenos actuales de la feria.

En 1967 se celebra la I Feria Internacional del Istmo Centroamericano organizada por la Feria y el Club de Leones.

El pasado jueves 17 de marzo, se dió la inauguración de uno de los eventos más importantes de todo panamá, la versión 56 de la Feria Internacional de San José de David, con una inversión de un millón de dólares arrancó este evento, buscando un record de visitas, el cual fue logrado con un apróximado de 266,000 visitantes, siendo esta un éxito total en la provincia de Chiriquí.

En nuestra visita por este importante evento ferial tuvimos la oportunidad de observar las diferentes exhibiciones como artesanías nacionales e internacionales, comidas, exhibiciones agropecuarias, artísticas, juegos mecánicos, discotecas y presentaciones folklóricas dando a conocer nuestras tradiciones, a miles de visitantes extranjeros que disfrutaron al máximo este evento. Visitamos los diferentes stands de la feria, encontramos primero a: Air Panama ofreciendo a sus clientes el mejor servicio y los mejores destinos.

Desde hacía un tiempo había planeado las vacaciones perfectas en familia, mi anhelo era buscar un lugar a donde retirarnos a descansar alejándonos de todo el stress del trabajo y la vida en la ciudad. Buscando referencias sobre un lugar para chicos y grandes, recibí información sobre Cabins Stones, unas curiosas cabañas ubicadas en Boquete, Chiriquí. Lo primero que resalta al llegar, es la arquitectura de las cabañas con acabados de revestimiento en piedra natural, lo que brinda una calidez inigualable, esto nos llamó a entrar rápidamente; ya dentro, el ambiente es tan acogedor que nos sentimos sumergidos en la naturaleza pero con la comodidades que tenemos en casa como electrodomésticos y muebles contemporáneos.

Nuestras vacaciones, fueron realmente maravillosas, para mí el aire puro, la tranquilidad y el silencio, en un ambiente privado, brindaron exactamente lo que estaba buscando. Ni que decir de la hermosa vista desde la ventana de mi habitación en donde me deleité viendo la exuberante vegetación de Boquete.

Para los niños el lugar perfecto de aventuras, en fin todos quedamos contentos de haber pasado un tiempo inolvidable en Cabañas Stones, el lugar perfecto para disfrutar de la vida.

I had been planning a perfect family vacation for some time. My desire was to find a place to relax and retreat from the stresses of work and city life. While referencing places for children and adults, I received information about Stone Cabins, intriguing cabins located in Boquete, Chiriqui. Upon arrival, the first thing that stands out is the architecture of the cabins with natural rock covered finishes that add unparalleled warmth. Once inside, the surroundings were so inviting and welcoming that we were instantly submerged in nature but with the electric appliances and contemporary comforts of home.

Our vacation was truly marvelous. For me, the fresh air, tranquility and silence in a private setting offered exactly what I was looking for. Not to mention the beautiful view of Boquete’s exuberant vegetation from my bedroom window.
