COOKING TEAM RULES & REGULATIONS COOKING The Jambalaya Cookoff will take place at Cajun Harley Davidson in Scott, LA. Each team will be given a designated area to setup, cook and serve. Teams will provide their own tent, tables and chairs. Com-pany logos and names may be displayed in your designated team spot. We are proud you are a supporter and want to recognize you and your efforts in our community! In addition, feel free to decorate your booth in a fun and tasteful manner.

SET UP You may begin setup as early as 7am, Saturday, April 21, 2018. All vehicles must be removed from the staging area and parked by 8:00am.

COOKING TEAMS Teams are made up of one team captain and two assistants. The team captain for each team will be responsible for the conduct of his/her team, guests, and/or invitees. As well, the team captain will be responsible for his/her team's compliance with the rules and regulations. You may bring a small ice chest, cooler, etc. filled with your favorite drinks for your team members only. Vendors will be selling soft drinks, water and alcoholic beverages.

COOK IT HERE Teams are required to do all cooking on site. All teams will need to prepare the equivalent of 10 lbs of rice/pasta.

CLEAN AND SAFE Cooks are to prepare and cook in as sanitary a manner as possible. Cooking conditions are subject to inspection by judging committee. Precautions MUST be made to prevent fire threat. There will be no dumping or cleaning pots on the grounds. Absolutely NO cooking oil is to be poured on the grounds or drains. Trash barrels are provided to dispose of all trash. It is your responsibility to leave your cooking area clean and free of trash.

NO SELLING No participants of the Cookoff are allowed to sell their food due to health department regulations. The American Cancer Society will provide sample containers and utensils for visitors to sample your work and vote for it in the People’s Choice Award contest. Teams are required to hand out samples of their food ONLY to people wearing wristbands being sold at the event. NO HAND SAMPLING FROM POTS.

TEAMS MUST PROVIDE Tents, tables, chairs, cooking utensils, cookware, ingredients & seasonings

AMERICAN CANCER SOCIETY WILL PROVIDE Bowls, utensils & napkins for serving to the public, as well as a “People’s Choice Jar

JUDGING Judging is scheduled to begin at 11am. Winners will be announced between 1 and 2:00pm. Official winner announcement time will be communicated the day of the event and is dependent on number of participants. Winners must be present to win. There will be five judges.

COOKOFF AWARDS First, second and third place taste awards will be given to teams.

PEOPLES CHOICE AWARDS The people have the final say in this category! Guests at the event are invited to sample dishes at each cooking station with a $5 wristband. Attendees will each be given a Peoples Choice ticket and will be asked to place their ticket in the jar of the team they are voting for. All jars will be picked up and counted prior to announcement of award winners.
