Due partly to a worldwide hop shortage, but also to the popularity of the local food and beverage movement, 2007 saw the emergence of a new generation of Ontario hop farmers. And they are busy keeping up with the demands of locally minded craft brewers, who use up to 10 times the amount of hops than in standard brews from larger breweries.

send their “spent grain” to local yellowlees

Family Farm, the sheep are fed the grain,

the lamb meat goes to a local butcher,

Herrington’s, where they make beer infused

Lamb and Lager pies. Spent grain is used

to make Port Perry’s famous hanks pastries

The majority of this corn is sourced from Ontario, making distilled spirits producers the fourth largest purchasers of corn in the province.

Did you know? Ontario has a unique history in the crafting of high-quality internationally-recognized and award winning distilled spirits, creating good jobs and driving economic activity. The Ontario Craft Distillers Association (OCDA), launched in 2015 and representing more than 15 Craft Distilleries is dedicated to promoting the new artisanal products and processes that are being developed by its members. Craft distillers are creating small batches of spirits from local crops including, organic corn, wheat, rye, juniper and beet.
