fromtheU.S. Bureauof the Census,was mailedto eachhouseholdthat
fell intotheNMNE.SII probabilitysample. The interviewer

As in NhANhSI, dietarydatawere collectedusing24-hourrecall,3-monthfood
frequencyand dietarysupplementforms. Formatsof thesedietaryquestionnaires
are founain theNHPNESII plan and operationpublicationincludedwith this
aocumentation. The dietarydata are availableon four tapes: (1) theMODEL
GRAM TAPE,[2j the NiIEliT COMPOSITIONTAPE, (3) the 24-HOURREC4LL--SPECIFIC
FOOD ITR4TAPE and (4) the TOTALNUTRID1’i’INTAKE/FOODFREQUENCY/ANDOTHER
RELATEDDIETARYDATA TAPE.
Tapes (1J anu L2j are the FIANESII dietarydatabank, catalogNos. 5702/5703
and are availablefromNTIS [ordernumberPB81232878)at a cost of $185.00.
They are used in the computereditingand processingof the NWMNESII 24-hour
recallforms. The publicuser of thesetapes is responsiblefor the development
of all softwarefor any similarutilizationof thesetapes. UnliketheNHANESI
ModelGram/NutrientCompositionTapes,catalognos. 4702/4703,the dietarydata
bank inlW-MNESII consistsof only the foodsreportedon the 24-hourrecall
formscollectedduringthe survey. An expandeddatabase was availableto the
dietaryinterviewersfor codingpurposesduringthe collectionof the data.
TAPE (1): MODEL GRAM
Tape.(lj is the firstpart of a two-partnutrientdatabank. The first
i19 recordson thistape are the acceptableFOODMODELSor combinations
of foodmodelsused to aid the respondentin recallingamountsof foods
reportedon the 24-hourrecallform. The secondpart of thistape

consistsof 2605foodsin numericorderwith designatedfood group
number,foodcodenumber,preferredmodelcode,appropriategram
conversionfactor,and alphamericdescription.When listedby food
group,theMODEL GRAM tapeprovidedthe basisfor the codingmanual
used by dietaryinterviewers.In some instances, more thanone food
was assignedthe samefoodcode,but onlywhen the nutrientcomposition
for eachof the foodswas extremelysimilar.
TAPE (2): NUTRIENTCOMPOSITION

the nutrientvaluesreflectthemost appropriateinformation(1980)
availablefrom themanufacturer.If the food companydid not provide

Tape (3)containsinformationonspecificfood itemsconsumedly (a)
ingestionperiod,[i.e.,breakfast,lunch,dinner,and between-meal
foods);(b) the timeof day to the closesthalf hour that the foodwas
consumed;(c) the sourceof intake(i.e.,home, school,restaurant);
and caloriesand 17 nutrientsfor eachfood itemcontributingto the
day’stotalintake. Informationis collectedfor the periodof time
midnightto midnightprecedingthe interviewand generallyreflects
intakesreportedon MondaysthroughFridays,excludingmost holidays.
This is a resultof the generalschedulingof examinationson Tuesdays
throughSaturdays.
TAPE (4): TOTALNUTRIBITINTAKE/FOODFREQUEiCY/ANDOTHERRELATEDDIETARYDATA
The TWTALNU’IKUNTINTAKEsectionof tape 4 consistsof a summationof
the food-specificnutrientinformationcontainedon TAPE (3) for
caloriesand 17 nutrientsfor eachrespondent.
The FOOD FREQUENCYsectionof tape4 consistsof reportedfrequencies
of consumptionof foodsfrom 18 food groups,of which 5 have sub-
divisionsfor a totalof 26 separatecategories.Data are intendedto
reflectusualeatinghabitsof the respondentover the 3 month interval

prior to the dietary interview and do not include irregular eating
habits associated with illness or dieting. Data reflect information on ,
foods consumed daily or weekly, Monday through Sunday, and holidays.
This food frequency questiomaire served as a crude quality control
instrument for the 24 hour recall in addition to providing profiles
eating habits.
OTHERRELATEDDIETARYDATAon tape 4 includes itiormation related to
food consumption habits recorded on the 24-hour recall and dietary
supplement forms, such as vitamin-mineral usage and special diets.

A multistage estimation procedure was used to calculate the various
NIMNFSII subsample sample weights that are necessary to use in any
analysis of the data. The procedure has three basic components:
(1) inflation by reciprocals of the probabilities of selection,
(2) adjustment for nonresponse, and (3) poststratification ratio
adjustment by age-sex-race. A brief description of each component is as
follows:
Inflation by reciprocals of the sampling probabilities. Since the
survey utilized a three-stage sqle design, there were three
probabilities of selection: (1) the probability of selecting the
PSU, (2) the probability of selecting a segment (housing unit), and
(3) the probabilityof selecting a sample person.
Adjustment for nonresponse. Estimates from the NHANFS11 data were
adjusted to account for sample persons who were not examined. The
estimates were inflated by a multiplication factor calculated
within five selected income groups, three age groups, four regions,
and standard metropolitan statistical area (EMSA) or non-WSA. The
numerator of these factors was the sum of the weights for sample
persons resulting from the reciprocal of the probabilityof
selection, and the denominator was the sum of the weights for
examined persons also resulting from the reciprocals of the
sampling probabilities.

Poststratification by age-sex-race. The estimates were ratio
adjusted within each of 76 age-sex-race cells to an independent
estimate, provided by the U.S. Bureau of the Census, of the
population of each cell as of March 1, 1978, (approximate mid-point
of the survey). The ratio adjustment was a multiplication factor of
which the numerator was the U.S. population and the denominator was
the sum of the weights adjusted for nonresponse for examined
persons. This ratio estimation process makes the sample more
closely representative of the civilian, noninstitutionalized
population of theU.S.
Potential bias of nonresponse. Usually a sizeable number of sample
persons who initially are willing to complete the household
information and some of the medical history questionnaire
subsequently will not participate in the examination. This creates
the potential for bias if these persons differ from other sample
persons with respect to the variables being studied. Intense
efforts were undertaken during NHANBSII to develop and implement
standard procedures and inducements that would reduce the number of
nonrespondents and thereby reduce the potential for bias.
