Our recently launched Explore by GemLife travel initiative has been a resounding success with homeowners booking out the motorhomes for some exciting adventures. Turn to pages 8-11 to read about some of the latest trips enjoyed by homeowners at Highfields and Bribie Island.

In the Sunshine Coast hinterland at our GemLife Palmwoods site, it has been exciting to see the residential construction team pouring the slabs for the resort’s first homes - bringing move-in day closer for our first residents in the New Year. In addition, work on the entry statement continues, and work began on the resort’s managers residence. Next month, the civil engineering team will commence work on the timber boardwalk which will be a stand-out feature. It is great to see our first hinterland resort come together, and I look forward to sharing updates in future issues of The Gem.

On the Gold Coast, our civil engineering team will begin bulk earthworks next month, kicking off the first stage of construction at our flagship resort. The state-of-the-art GemLife Gold Coast Sales Experience Centre is nearly finished, ready for a special launch event with our contract holders and VIPs at the end of the month.

Our GemLife Highfields Country Living Open Day, held last month, was an enormous success with visitors coming from as far away as the Sunshine Coast to tour our picturesque rural resort and our beautiful display homes, and to check out our oversized blocks (see page 37).

In northern New South Wales, civil works continue to progress well at GemLife Tweed Waters, and I am excited to share that early

works on the stunning waterfront country club have begun. A sand bund has been created at the top of the canal to de-water the site and allow for the building’s footings to be constructed. The country club, which features our first-ever rooftop pool, will be a stunner and I look forward to sharing updates as the project progresses.

On the Mid North Coast of New South Wales, the final tweaks are being made to the design of the GemLife Rainbow Beach Country Club. Plans will be signed off soon - stay tuned for details! In addition, construction of the new sales office is coming along well, and remains on track for completion next month.

I would also like to take this opportunity to congratulate the winners of our third annual Grandparents Awards last month. It was wonderful to receive so many heart-felt entries from grandkids about their grandies (turn to page 23 to see our winners).

This is one of the reasons why the GemLife Maroochy Quays resident and his wife Toni took up kayaking after first moving to the Sunshine Coast six years ago.

“We both love water and joined a kayaking group to explore the river and learn more about the activity such as the best places to go that were picturesque, provided easy access, and were safe. At the same time, we were enjoying some great outings,” said Wayne.

It did not take long before the couple were hooked, regularly enjoying outings on local waterways in their double kayak.

“It’s incredible what you can see and do simply by paddling a kayak up a river or waterway. We’ve seen some beautiful birdlife on the banks and wildlife on the shores, stopped for picnic lunches along the way and some people also fish from their kayak. You never know where your paddling might take you.”

Wayne, who grew up near Sydney’s famous Bondi Beach, said there is always somewhere new to go in a kayak.

“A river can look different every day due to changing tides, seasons, sunrises and sunsets.”

50s lifestyle resort in March, the couple have purchased a single kayak which is much lighter and easier to transport to key kayaking spots in the local area.

“One of the reasons we purchased a home here was because it was on Eudlo Creek which is ideal for kayaking. Once we get local access with a proper launching facility, we will be able to wheel our kayak straight down and use the creek regularly,” said Wayne, who also cited keeping fit as a top reason for taking up the water sport.

“Keeping fit is important, and as well as kayaking, between us we enjoy bushwalking, swimming

and marathon-running. Toni also did dragon boat racing when we lived in Sydney, and I am a professional golf instructor.”

As well as finding secluded places to relax in nature, kayaking is an aerobic exercise that can improve the cardiovascular system, tone the body, strengthen muscles, help with weight loss, reduce stress and so much more, according to Wayne.

“Once you leave the TV and armchair, there is a big world waiting outside for you to discover and a kayak can provide the ideal vehicle.”

On the ground floor, the country club will also be home to a grand hall with stage, dance floor and a commercial kitchen for functions and events, a bar and lounge, creative studio, library, hair salon, café, undercover balcony area with outdoor lounges and dining areas, plus more.

Up a level, a fitness centre with health club, including a fully equipped gym, yoga studio, indoor lap pool, spa and sauna can be found. Also on this floor will be a large lounge and games room with a golf simulator, plus a stand-out feature Sky Lounge, a circular room made of glass with 180-degree views towards the Gold Coast skyline. In the cooler months, residents will be able to get cosy around its central fireplace.

Reaching top gearMotorhome first-timers keen to do it again

NINE DAYS VISITING MANY OF QUEENSLAND’S WESTERN OUTBACK TOWNS IN THE EYE-CATCHING EXPLORE BY GEMLIFE MOTORHOME HAS JANE AND DAVID HAYTER, OF GEMLIFE BRIBIE ISLAND, CONVINCED – THEY WANT TO DO IT ALL AGAIN AS SOON AS POSSIBLE.

“We have never been on a trip in a motorhome or caravan before, so this was a real experience and one that we really enjoyed. We can’t wait to do it again,” said Jane, as the couple looked over a collection of photographs taken while away.

Inexperienced at the wheel of the new 25-foot Jayco Conquest DX motorhome, but not at enjoying many travel experiences, the couple

were a little anxious about what to expect but loved the fact they didn’t have to worry about pre-booking accommodation.

“We were confident we could handle the motorhome because David is a former truck driver and I drove a small bus when I worked in aged care many years ago. We did, however, decide to avoid free camping on this trip and stay

at caravan parks along the way until we were able to get a better insight about life on the road in a motorhome,” said Jane.

Jane and David travelled 3500km in nine days taking in Toowoomba, Roma, Mitchell, Charleville, Longreach, Eromanga, Quilpie, Thargomindah, and St George and at each stop, like clockwork, each had their own tasks to carry out.

“Once we got used to the motorhome, we developed a routine. David was the driver, and I was the organiser, and we both had our own list of tasks to be done at each stop. The vehicle and the facilities were easy to operate and if in doubt, we just referred to the video and user manual which were provided,” said Jane.

The couple said they travelled light, only taking a few changes of easy to wash and dry clothing for the two-week trip.

While they also took a few frozen meals, fruit, vegetables, baked beans, and bread to tide them over if they arrived late at a destination, Jane and David were sticklers for supporting local towns they visited by buying meals at outback pubs, cafes and bakeries along the way.

“It would be un-Australian not to stop at an outback pub, and we also enjoyed many other delights such as a delicious Ned Kelly pie at the Marino Cafe in Longreach,” said Jane.

Driving a motorhome that displayed a

spectacular all-over illustration of the Northern Territory’s Nitmiluk National Park including its canyons and rocky landscapes, sparked great conversations whenever the couple stopped.

“People would walk by and take a good look, and then come over and want to know all about the motorhome. The illustration is amazing and something you certainly can’t miss.”

Jane and David said their experience in the Explore by GemLife motorhome could not have been better. It provided everything they needed on a trip away, including an extremely comfortable bed.

“The bed has a great mattress and was so comfortable. David is over six feet tall, but we didn’t need to extend the bed at all. We would also open all the windows and vents and let the air flow through,” said Jane.

So, what was the verdict after their first trip in the Explore by GemLife motorhome, and what advice could they give to people doing it for the first time?

“It was awesome and so reasonably priced. We want to do it again but next time we want to go for longer. For first time motorhome users like us, all I can say is if you want to feel the freedom of roaming this great country of ours, this is the way to do it!” said Jane.

The GemLife Highfields couple are used to towing a caravan to some of Australia’s top, and sometimes very remote, travel destinations but this was the first time they had set out in a motorhome.

“We really didn’t know what to expect but I can tell you we would do it again in a heartbeat. It was absolutely fantastic,” said Patrick, following their 15-day, 2500km adventure to outback Queensland, including Cunnamulla, Eulo, Noccundra and back via Eromanga, Quilpie, Muckadilla and Roma.

“We were able to do everything we wanted and were also really pleased with the fuel economy which was extremely good for such a big vehicle. We kept a steady pace and sat on about 80 kilometres per hour throughout the entire trip.”

Creature comforts such as the motorhome’s double bed and inside toilet were appreciated more than words could say, according to Patrick and Jennifer who were also delighted with just how quick and easy it was to park the vehicle and

prepare for an overnight or extended stay.

“When we pulled up, it didn’t take long to get into the swing of things we needed to do to set up. We just had to push a button for the slide-out bed, which was really comfortable, put the back stabilisers down and hook up to power and water if they were available. Alternatively, the motorhome carried a full tank of water.”

Patrick said that having all the facilities onboard was great because they did not have to go far for anything and appreciated not having to wander out of the van at night for basic necessities.

“It got a bit cool one night while we were away, so we switched on the heater, and it soon took the chill away. We really didn’t want for anything at all,” he said.

The motorhome proved to be a great talking point wherever the couple travelled due to its eye-catching, colourful illustration of the Great Ocean Road.

“It looked pretty flashy and generated a lot of chatter at each of our stopovers, which we didn’t

mind because we loved to tell people all about it,” said Patrick, a former semi-trailer driver.

The couple said they tried to limit their daily motoring to less than 200km a day.

“We only did 120km on the first day to ensure we had enough time when we reached our destination to do everything that the introductory video and onboard user manual told us to do. But after a few days it all became almost automatic.

“There was only one time,” Patrick admitted, “when we forgot to lower the TV antenna before setting off but remembered pretty quickly, stopped and rectified it immediately.”

The experienced travellers have some advice for

anyone setting out for the first time including the need to watch out for kangaroos, emus and other wildlife.

Patrick said the motorhome was extremely well-equipped, but as a seasoned traveller, he also took along a broom and a wheel-leveler.

Asked what was the best thing about the trip in the new Explore by GemLife motorhome, Patrick said: “Everything! Having never gone away in a motorhome before, I was a little anxious on the first day, but it wasn’t long before we felt secure and had full trust in the vehicle. All we had to do after that was take advantage of all the great facilities onboard and revel in the peace and quiet of being away from civilisation. We are already planning our next trip!”

Design tips to elevate your alfresco area

For most Aussies, summertime entertaining is best enjoyed outdoors. To help spruce up your alfresco area in readiness for barbecues and get-togethers, GemLife Manager of Interior Design Jennifer Kyle gives her top five tips to refresh your outdoor entertainment space.

“From vertical gardens and fun lighting to adding a pop of colour with soft furnishings, there’s so many simple ways to transform an outdoor space for the silly season and wow your guests,” said Jennifer.

“Any of these five tips will make a difference in creating a more inviting outdoor area in which to relax, eat, drink and be merry.”

Top five alfresco styling tips

1. Green it up

Nothing creates a sense of tranquillity quite like the greenery from plants. For low-maintenance upkeep, opt for palm variants or succulents to beautify your alfresco area. Use different sized pots to create height variations within the space to achieve an overall sense of lushness. For smaller alfresco areas, why not try a ‘vertical garden’? There are plenty of easy to install vertical garden and railing pots available on the market, and hanging planters are also back in vogue. Adding strategically placed greenery to your alfresco area is one of the quickest ways to create a welcoming outdoor oasis for you and your guests.

2. Lighting

If you’re planning to use your alfresco after the sun goes down, lighting is both a practical and easy way to create ambience. From floor lamps and hurricane lanterns to garden bollards and candles, lighting adds atmosphere to your outdoor space, letting you set the mood for your get-together whether you’re hosting an intimate or festive gathering. According to Jennifer, fairy lights, string lights and festoon lights are an especially effective way to add instant ambience. “There are so many options available – vintage style, festive themed, solar powered – and plenty are budget-friendly too. A little bit of illumination can go a long way,” she said.

3. Soft furnishings

Updating your soft furnishings and decor is another easy seasonal styling trick that can transform your alfresco space in a flash. To make your outdoor space feel summertime ready, Jennifer recommends lightening up your soft furnishings’ palette or adding a pop of colour with new cushion covers, tablecloths, throw rugs or a weather-resistant outdoor floor rug. There is also a myriad of affordable decor items that can add to a summer vibe.

4. Wall art and sculpture

Another way to change up the look of your alfresco area is via outdoor art - a statement piece of wall art or a weather-resistant sculpture. Jennifer said artwork added personality to an outdoor area, helping to create a seamless transition from indoors to out while creating the sense of another room. “With artwork there are loads of ways to add colour and interest to outdoor areas. From metal artworks or trellises to interesting planters, clocks or murals – there are all kinds of options to inject personal style to an alfresco.”

5. Put your feet up

When you’re not entertaining friends and family, comfy seating is a must when you’re relaxing outside. Jennifer recommends investing in an inviting ‘just-right’ chair to sink into when enjoying a morning coffee or reading a book, in addition to an ottoman to put up your feet. “Nothing beats a cosy chair to curl up in for quiet moments on warm days. Adding an ottoman lets you stretch out and settle in. For a space-saving option, look for a chair and ottoman set where the ottoman slides under the chair when not in use.”

JOY AND EMANUEL CONTI MAY BE FRESH FACES AT GEMLIFE MAROOCHY QUAYS, BUT THEY ARE NO STRANGERS TO LIVING THEIR BEST LIVES.

Centre stage For the love of dance

Not too long ago, this talented couple were sailing across international waters and teaching dance on cruise ships, taking them to all parts of the globe. “We had the best of both worlds – dancing and travelling.”

Their love story is something out of a romance novel. “We met in 1967 and we hit it off immediately. Emanuel was my boss at that time. Back then, we couldn’t date so we hid our relationship from everyone in the office,” Joy disclosed.

Now in their 70s, it’s hard to believe that this dynamic duo only embarked on their dancing journey when they turned 50. Having been a financial controller for most of his life, Emanuel was ready to give up accounting to rock and roll.

While dancing was flourishing as a hobby for the pair, their talents were accidentally discovered while they were guests on a cruise. One thing led to another and soon enough they became professional social dancers for future cruises over the next 15 years. “We have had the opportunity to teach so many people who have come to us over the years on the cruises. It doesn’t matter what age they are. Once they’re dancing, they’re happy as can be.”

They do however have one rule for their classes – they don’t take singles. “You have to come with a partner. Dancing helps bring couples together and so many people have said to us that we have saved their marriages.”

when our Bribie Island resort contacted them to teach dance to its residents. While that didn’t work out due to the pandemic, Joy and Emanuel visited GemLife Maroochy Quays on its open day and instantly knew this was where they wanted to be, and they are excited to have finally moved into the resort. “The house is just beautiful, and the people are lovely. We’re looking forward to this next chapter in our lives.”

With the opening of the new clubhouse, the pair are hoping to put on their dancing shoes and encourage their fellow residents to strut their stuff. “Age doesn’t matter when it comes to dancing. If you can walk, you can dance.”

The magic of music New singing group hits a happy chord

The talented pianist and former school singing teacher has brought her love of music to the over-50s resort and is now inspiring others to join her as part of a new singing group she has started called Life Moves @ Gemlife.

“I had been dreaming about this ever since we decided to come here,” said Roey.

We just want to enjoy music

and have fun.

“I saw the grand piano and a music room in the country club and was inspired. I did a letter box drop that invited anyone interested in forming a singing group to meet in the music room and was delighted with the great response.”

Roey has been involved with music for as long as she can remember and her passion for creative crafts saw her learn the piano and teach singing and music to young students at primary school.

“I learned music when I was young, and my mother had a singing group in our small town in the Wimmera district of Victoria where I grew up, so it has been a part of my life from a very young age,” said Roey.

After moving into GemLife Highfields over-50s lifestyle resort a few months ago, Roey, who still teaches the piano, began playing the country club’s grand piano at the resort’s fortnightly residents’ dinners. Forming the new singing group

just for fun and to bring people together followed soon after with husband Ian the first to join.

“We had five men and five women turn up to the first session. We are not trying to be a professional singing group or choir but rather, just getting together for the pure enjoyment of singing,” she said.

Roey puts together the music and words which her resident singers can sing with the accompaniment of the piano or CDs as well as a few handy instruments such as castanets, bells, rhythm sticks and maracas from their teacher’s personal arsenal of musical instruments. What to sing is never a problem either.

“It is amazing the number of songs people know all the words to,” said Roey, adding that old favourites like The Happy Wanderer and Que Sera Sera were among the residents’ chart toppers.

“While playing at the resort’s dinner the other night, people just spontaneously started singing along. Music is in all of us and can bring so much joy.”

Roey does not see herself as a great accompanist, vocalist or conductor.

“My role is to gather people so we can sing and have fun together. If the group has the confidence to sing together at a function, we might even make a public appearance at one of our fortnightly dinners, but that’s not the main aim. We just want to enjoy music and enjoy ourselves,” she said.

“The group meets for an hour singalong at 3.30pm each Tuesday and everyone is welcome. So many people here say they used to play the piano or sing. Joining our group will give them the inspiration and permission to do it again … and in a fun way.”

Your ultimate guide to packing for a road trip vaycay

For many, packing can be a stressful experience. With so much to remember, we worry about forgetting something essential – while at the same time, we don’t want to over-pack and lug around extra belongings everywhere we go. At GemLife, we know that striking the right balance is a fine art, which is why we have put together this helpful guide on how to organise your packing and maximise space.

1. Choose the right luggage No matter how efficiently you pack your suitcase or bag, if you have the wrong one – you will have a tough time maximising space. For starters, the hard outer shell of a suitcase is ideal for protecting what you have inside from bad weather and those bumps in the road. However, if you value mobility in your travel, a high-quality duffle bag will work just as effectively.

2. Use packing cubes We swear you will never want to go anywhere without these once you try them. Packing these cubes into a suitcase will be easier than into a bag. However, you can make it work by compressing as much as you can into the cubes, then zipping the bag up to conceal everything.

3. Roll your clothes Remember all the times you had to leave some of your clothes at home because they didn’t fit inside your luggage? We would like to introduce you to: the ranger roll technique. To properly roll your clothes, lay the item of clothing out flat. Then, fold the bottom two inches inside out so it creates a type of pocket along one side of the clothing. From the opposite end, roll the item tightly until you get to the pocket you have created. Lastly, fold one side of the pocket over the roll, securing it tightly. Check out this handy tutorial from Instructables and try it for yourself!

4. Opt for travel-sized items Bringing full-sized toiletry bottles that are partly empty will result in wasting a lot of space. And this does not just refer to toiletries – make sure to pack travel-specific items that are designed to maximise space, such as a small hairbrush, travel towels, mini shampoo, and conditioner, etc. Or rather than bringing mini versions, opt for refillable bottles you can reuse for each trip.

5. Choose multi-purpose items Who doesn’t love a classic ‘kill two birds with one stone’ scenario? Nothing says efficiency like bringing items that serve multiple purposes, allowing you to cut back on the items you need to bring. Exercise leggings, a light rain jacket, and even a sarong are just a few things you can rotate and reuse with your other items.

6. Be selective about the clothing fabrics you pack As well as multi-purpose items, choose clothing that you will be able to wear more than once without needing to wash. Merino wool is a fabric that has antibacterial properties – and is very compactable – making it a useful choice.

Rob Bower helped spearhead a move to introduce badminton to the resort’s list of activities after realising the pickleball court would be ideal to host both sports.

He approached the Home Owners Committee who gave it their wholehearted support as well as providing some racquets and shuttlecocks to give the badminton players a kick start.

“We started the badminton group about three months ago and regularly meet every Monday and Thursday from 5.30pm to 6.30pm,” said Rob, who had not played the sport since he was a teenager at school.

He said badminton was generally regarded as an indoor sport, but the group were enjoying playing on the outdoor court.

“The wind can be a bit of a challenge at times when hitting a shuttlecock, but we play a lot of doubles matches which handle the conditions much better. Besides, the windy season is just about over now so it won’t be such a concern,” he said.

While badminton can be fast and furious when

played at the Olympic Games level, Rob says the locals are all over 60 and play more for fun and to keep active.

“Anything that is physical is a good thing for our health and well-being plus it’s a great, fun social outing.”

Rob would love to see more residents joining the badminton group and urges anyone who might be interested to pop down to the pickleball court on Monday and Thursday nights to take a look at how it is played firsthand.

“We play both singles and doubles, and everyone is welcome to join us,” said Rob.

EACH MONDAY, THE CROQUET LAWN AT GEMLIFE MAROOCHY QUAYS TRANSFORMS INTO A PUTTING GREEN FOR RESIDENTS WHO ARE KEEN TO LEARN OR IMPROVE THEIR ABILITY AT PLAYING GOLF.

It’s a skill not lost on anyone, according to resident golf instructor Wayne Taylor, who conducts the weekly putting lessons.

“Anyone can learn how to putt and play golf, regardless of their age or previous ability,” he said.

Wayne has been a professional golfer for over 40 years and has been on tour and played in the Seniors tour before spending the past 20 years as a golf coach in Sydney.

“I spent most of my golfing career around Sydney before eventually moving to the Sunshine Coast,” said Wayne, who is well known to many of his neighbours.

“I set this up every Monday afternoon for the residents who want to try golf for the first time or alternatively want to improve their golf game. We have a series of skill tests as well as some strategic games to play that are all aimed at making them better golfers,” he said.

Teaching participants how to aim the ball into the hole or, in golfers terms, to sink a putt, is usually the first priority.

“I start people off so close to the tee, they can’t miss,” quipped Wayne. “It doesn’t require moving the club far nor do they have to move fast, so it really is a part of golf that everyone can do quite well.”

Once this part of teeing off is accomplished, the golfing enthusiasts move onto the next lesson which involves controlling the distance of each putt.

“This is set up similar to the first lesson, but the only variable is the distance between the balls

and the hole,’ said Wayne, who admits controlling the distance of a putt can be tricky.

He said every golfer is different. Some can control shots requiring only a little power behind the putt while others do much better when more power is required.

“It’s all about learning and improving,” said Wayne.

Another popular part of the resident’s golfing experience on the croquet lawn is a game involving a golf ball and tennis ball atop a CD, called `golf bowls’.

“The first aim is to get the golf ball close to the tennis ball. Then take a putt and try to knock the tennis ball off the CD.”

While Wayne is instructing and watching his students tackle the challenges, he is also coming up with ways each can improve their technique.

These may involve changing their posture, changing the ball position or learning to control the distance when hitting a ball.

“I’ve had quite a few people come back after the lessons and say they’ve played the best they ever have or that they’ve won their weekly comp by being able to putt better,” said Wayne, who is delighted to be able to provide such a worthwhile activity for residents.

He said many people are attracted to communities such as GemLife because of the amazing range of great activities on offer for the over-50s and he is only too happy to contribute in such a positive way.

The Tweed River and its tributaries have been attracting adventurous water-lovers for a long time. Paddling down the lakes, creeks and rivers reveals some spectacular scenery.

Terranora Creek

Kayakers are drawn to Terranora Creek, which is close to GemLife Tweed Waters. The mangrove and seagrass lined channels and islands of Boyds Bay provide rich fish habitat and some of the best paddling in the Tweed estuary.

High tide is the best time to explore these waters with launch spots at Kennedy Drive and Dry Dock Road.

Explore by GemLife sparks spirit of adventure THE SPIRIT OF ADVENTURE WAS SPARKED AT GEMLIFE WOODEND LAST MONTH, DESPITE INTRASTATE TRAVEL RESTRICTIONS, WITH HOMEOWNERS TAKING THEIR FIRST CLOSE-UP LOOK OF THE RESORT’S NEW EXPLORE BY GEMLIFE MOTORHOME.

On show outside the GemLife Woodend Country Club, the motorhome features a specially commissioned illustration of Victoria’s iconic Great Ocean Road, the dramatically spectacular coastal road that runs along the windswept Southern Ocean.

Resort Manager Leanne Boxshall said residents were excited about the new travel initiative and were eager to book the motorhome and start exploring.

She said that with international travel being off the cards due to COVID-19, residents’ interest in caravanning and camping was stronger than ever before.

“Because of COVID, many people had reshuffled their ‘bucket list,’ taking to the road to explore

this beautiful State and country of ours. It’s incredibly exciting to be able to offer this innovative initiative to our homeowners,” she said.

“With the renewed interest in caravanning Australia-wide, wait lists for new RV vehicles have stretched out for up to a year. Residents are thrilled to have exclusive use of their very own motorhome, without the worry of ownership, registration or maintenance costs - they cannot wait to book it for their next travel adventure.”

The two-berth 25-foot Jayco Conquest DX motorhome - named Needlewood after the hardy native shrub or small tree - will be available for hire to residents who don’t currently own a motorhome.

Spring salad New Radish and Sugar Snap Pea Greek Salad

CRAVING A BOWL OF SOME FRESH SPRINGTIME DELICIOUSNESS? NOTHING BEATS A SIMPLE SPRING-INSPIRED SALAD FOR A FRESH MEAL FAST.

GemLife Chef Matt Conquest shares his tasty and ever-so-easy New Radish and Sugar Snap Pea Greek Salad recipe. Eat it as is or add any grilled meat to up your protein intake. You can also substitute the radish and peas with watermelon for a refreshing variation.

INGREDIENTS Serves 2

For the salad 1 cup sugar snap peas, cut in half 2 medium radishes, top and tailed, and sliced thinly ½ cup mint leaves, roughly torn (to get those fresh flavours going) ½ cup pitted kalamata olives, halved (or your favourite olives) ½ cup marinated Greek style feta, crumbled

For the dressing 30ml good olive oil 1 tbsp red wine vinegar Pinch of sea salt and a good pinch of cracked black pepper

METHOD 1. In a bowl, toss together radish slices, sugar

snap peas, olives and mint. 2. Mix the dressing ingredients in a bowl, pour

over the salad and mix. 3. Crumble the feta over the top. 4. Serve salad fresh as a stand-alone dish or

serve with grilled chicken, lamb or fish as a side dish.
