Peppermint Kisses

Ingredients:

• 2 egg whites • ½ cup sugar• 1/8 tsp salt

• crushed candy canes     • 1/8 tsp cream of tartar

Instructions: 

Preheat oven to 225 degrees F. Beat egg whites until foamy and soft peaks form. Beat in sugar, 1 tablespoon at a time, until stiff & glossy. Spoon into Ziplock bag. Cut 1” hole in one corner. Squeeze 1 ½“ kisses onto foil-lined cookie sheets. Sprinkle with candy cane. Bake for 1 ½ - 2 hours until dry but not brown.

Cool before removing from foil. Store in air-tight container. (Yield = 3 dozen)

Authentic German StollenSubmitted by: Doris Gagel Gagel's Draperies

• 75g raisins• 75g sultanas• 25g mixed peel• 50g glace cherries,

chopped• 50g blanched almonds,

chopped• finely grated zest of 2

unwaxed lemons• 10 cardamon pods,

crushed and shells removed

• 1/4 tsp ground nutmeg

• 1 tbsp vanilla extract• 375g strong white bread

flour, plus extra for dusting

• 1 sachet dried yeast• 50g caster sugar• 1 medium egg, beaten• 65g unsalted butter,

melted• 150ml warm milk, plus

1-2 tbsp, if needed• 200g white marzipan• icing sugar, for dusting

In a bowl, mix together the raisins, sultanas, mixed peel, cherries, almonds, lemon zest, cardamon, nutmeg and vanilla extract. Cover and leave to stand while making the dough.

Put the flour, yeast and sugar in a mixing bowl. Add the egg, 50g of the melted butter and 150 ml milk. Using a round-bladed knife, mix the ingredients to form a dough. If the dough feels dry and crumbly, add a further 1-2tbsp milk.

Turn out onto a floured surface and knead for 10 minutes until smooth and elastic. (Alternatively, you can knead the dough using a free-standing mixer fitted with a dough hook for 5 minutes.) Place in a lightly oiled bowl. Cover with clingfilm and leave to rise in a warm place for 1-1 1/4 hours, until the dough has doubled in size.

Turn the dough out onto a lightly floured surface. Gradually knead in the fruit mixture until it is evenly distributed through the dough. (Don't worry if the dough becomes soft, sticky and slightly messy to handle at this stage.) Cover with a tea towel and leave to rest for 20 minutes.

Preheat the oven to 350 degrees, gas mark 5. Grease a large baking sheet. Shape the marzipan into a log, 30cm long, and set aside. Roll the dough into a oval about 3/4 inch thick, place the marzipan log into the middle, press together and flip over. Bake for 40 - 50 minutes, or until browned. When cool, dust with icing sugar. Wrap in foil to keep, freezes well.

Chocolate Chip Banana Bread

Ingredients

• ½ cup butter• 1 cup brown sugar• 2 large eggs• 2 bananas• 2 cup all purpose flour• 1 tsp salt

• 1 tsp baking powder• ½ tsp baking soda• 1 cup milk• 1 tsp vanilla extract• 6 oz chocolate chips

Instructions

1. Preheat oven to 300F. Grease loaf pan with butter and sprinkle flour in the pan.

2. Beat together butter, sugar until light. Add 1 egg at a time until both eggs are incorporated.

3. Add the banana and beat into the mixture.

4. Mix flour, salt, baking powder and the baking soda in a separate bowl.

5. Add the dry mix to the wet mix slowly until they are incorporated.

6. Add the chocolate chips to the mix.

7. Add the mix to the pan and fill 2/3 full. Bake until golden brown for about 45- 60 mins.

Meadow's Christmas Cookies - for Doggies

• 3 1/2 cups all-purpose flour

• 2 cups whole wheat flour

• 1 cup cornmeal• 1/2 cup skim milk powder

• 1 tbsp dry yeast• 3 1/2 cups lukewarm

chicken or meat broth • 1 egg beaten with about

2 tbsps water (for egg wash)

Preheat oven to 350F. Grease cookie sheets. Mix together all dry ingredients. Dissolve the yeast in the lukewarm chicken or meat broth. Let yeast broth mixture set for 10 minutes then stir in flour mixture until a soft dough is formed. If the dough is too sticky you can add more flour. Roll dough out 1/4" thick. Cut dog biscuit shapes from dough. Put scraps in bowl and re-roll until all dough is used. Brush biscuits with egg wash. Bake on greased cookie sheets for 45 minutes. Turn off oven and leave in overnight to finish hardening. Makes 60 medium sized dog biscuits.

Perfect Sugar Cookies• 2/3 cup shortening• 2/3 cup butter• 1 1/2 cups sugar• 2 eggs• 2 teaspoons vanilla

• 3 1/2 cups flour • 2 teaspoons baking

powder• 1 tsp salt

Preheat oven to 350F. Cream together shortening, butter and sugar. Stir in the eggs and vanilla. Combine the flour, salt and powder and blend into the creamed mixture. Shape into balls and place on ungreased cookie sheets. Bake for 10-12 minutes or until lightly golden brown. * You may also roll them in some sugar just before placing on the cookie sheets for some extra decoration!

Kids Favourite Cookies

• 2 cups sugar • 6 tbsp cocoa• ½ cup butter• ½ cup milk

• ½ tsp vanilla• 1 cup shredded coconut• 3 ½ cups instant oats

Combine sugar, cocoa, butter and milk in a sauce pan. Bring to boil, add vanilla.

Remove from heat and stir in cocoa and instant (or quick cooking) oats.

Drop by teaspoon on to wax paper. Let Chill. Enjoy!

Salt Dough Ornament RecipeSubmitted by: Victoria Bennett, Little Garden Montessori

• 1/2 cup of salt• 1/2 cup of water

• 1 cup of flour

How to make the salt dough

Add the 1/2 cup of salt and 1 cup of flour to a bowl stir in the water adding it slowly – you may not need all of the water. You want the dough to be dry – if it gets sticky add more flour. Knead the dough and then roll it out. Now your ready to create!

Once you have made the shapes you want then you need to dry them so you can paint. The salt dough is now ready to be dried in the oven which takes around 3 hours at a very low heat so they don’t burn. Leave the ornaments to cool and then paint.

Ingredients:

• 1 cup butter• 1/2 cup white sugar

• 2 cups sifted all-purpose flour

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, beat the butter and sugar with an electric mixer until light and fluffy. Stir in flour by hand until the dough is smooth. Extra flour can be added if the dough is not stiff enough to roll out.

On a floured surface, roll dough to 1/4 inch thickness and cut into desired shapes with cookie cutters. Place 1 inch apart onto ungreased cookie sheets.

Bake for 12 to 15 minutes in the preheated oven, until the edges are lightly browned. Cool on cookie sheets for a few minutes before transferring to wire cooling racks.

Irresistible Gluten-Free Oatmeal Cookies

Rainy Day Gluten-Free Cookies

Bake up a batch of these gluten-free oatmeal cookies. The kitchen will smell glorious. The cookies will be irresistible.  While you’re at it, dab on a little vanilla. You’ll be irresistible, too.

• 1/2c + 1/8c salted butter, room temp

• 3/4c coconut palm sugar• 1 small/medium egg• 1t vanilla • 1/2t baking soda

• 1/4t sea salt• 1/8t cinnamon• 3/4c Gluten Free Flour• 1-1/2c organic quick cook oats,

not instant

Preheat oven to 375, line cookie sheet with unbleached parchment paper. With mixer on medium-high, cream together butter and coconut palm sugar until fluffy then add egg and vanilla. In a separate bowl combine dry ingredients and mix well, then add into the wet ingredients, mixing on low just until everything is well mixed. Drop by small spoonfuls 2 inches apart onto parchment lined cookie sheet. Bake 10-12 min at 375. Cool on a wire rack. Serve with love.

• 1 1/4 cups canned* chickpeas, well-rinsed and patted dry with a paper towel

• 2 tsp vanilla extract• 1/2 cup + 2 tablespoons

(165 grams) natural peanut or almond butter

• 1/4 cup (80 grams) honey • 1 teaspoon baking

powder**

• 1 teaspoon pumpkin pie spice

• a pinch of salt if your nut butter doesn’t have salt in it

• 1/2 cup (90 grams) chocolate chips

Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined.

Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.

With wet hands, form into 1 1/2" balls. Place onto a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don’t do much rising. Bake for about 10 minutes.

Gluten-Free Scones with Cranberries• 1/3 cup dried cranberries• 1 1/2 cups Robin Hood

Gluten Free Nutri Flour Blend

• 1 tsp xanthan gum• 4 tsp gluten free baking

powder• 1/4 cup granulated sugar• 1/2 tsp salt

• 1/2 cup cold butter, cut into tiny cubes

• 2/3 cup buttermilk• 1 large egg• 1 tsp vanilla extract• 1 tsp finely grated lemon

zest• 1 tsp granulated sugar,

for sprinkling

Preheat the oven to 425˚F. Line a baking sheet with parchment paper. Set cranberries on a cutting board. Chop into small, but still discernable pieces and set in a small bowl.

Place flour blend, xanthan gum, baking powder, 1/4 cup sugar and salt in a mixing bowl, or bowl of your stand mixer, and whisk until evenly combined. With your fingers, 2 forks or a pastry cutter, work the butter into the mixture until thoroughly distributed. Mix in the chopped cranberries.

Place the buttermilk, egg, vanilla and lemon zest in another bowl and beat to combine.

Pour wet ingredients over the gluten free flour mixture and mix well until a dough forms. (Its consistency will be somewhat like cookie dough.)

Transfer dough to prepared baking pan. Press and shape into a ball. Now flatten and shape into a 7-inch wide disk. Cut dough in half, and then cut each half into 5 wedges. Set the wedges about 3” a part on the baking sheet. Sprinkle the top of each wedge with a little sugar.

Bake scones 12 to 13 minutes, until rich golden. Cool at least 10 minutes before serving.

Savory Cheesecrafter Cookies

Jenkins' Chocolate Paté

• 1/2 cup soft butter• 2 cups aged cheddar• 1/2 cup grated parmesan• 1 cup flour• 1/4 tsp cayenne pepper

• 1/2 tsp salt• 1 egg beaten

(brushing on top)• 1/2 cup finely

chopped walnuts

Mix first set of ingredients together to form dough. Roll to 1/8" thick. Cut desired shapes. Brush with beaten egg and sprinkle with chopped walnuts. Bake on ungreased cookie sheet at 375F for 8 minutes. Makes approximately 8 dozen at 2" shapes.

• 16 oz good quality bittersweet chocolate

• 1 cup whip cream• 4 tbsps butter

• 4 egg yolks• 1/2 cup icing sugar• Cocoa powder for dusting

Line 9x5 inch loaf pan with parchment paper. Place chocolate in top of double boiler, add cream and butter. Melt over medium heat, stirring until completely smooth. Remove from heat and cool for a minute. Whisk in egg yolks and sift in icing sugar. Pour into prepared pan and refrigerate overnight. Unmold, remove paper and dust with cocoa powder. Drizzle with fruit puree (optional) of choice. Use a hot wet knife to slice. Makes approximately 16 servings.
