1 Introduction This guide is only for the Muslims living in Adelaide, South Australia. The purpose of this guide is to help the Muslims with their daily life like finding the mosques, Islamic organization, Halal stuff, Islamic cloths, female Muslim doctors, accommodation, Islamic education institutes, and first contacts. All the information in this guide is checked by the Imams of the mosques. Halal businesses are visited by our personal visits to observe their Halal procedures. The information in this book is correct according to our knowledge, and we spent almost six month for collecting and analysing all the data, especially for the Halal guide but there is always a chance of mistake, if you find any mistake, or want to share any information please inform us on [email protected]. We will try to correct it in next printing. For most recent information please visit www.sa-Muslim.com. While developing this guide, it was noted that there is lot of different opinion in Muslims about Halal stuff. We discussed almost every opinion with the imams of the mosques, and we respect all of them, as long as it is based on TAQWA (fear of ALLAH) and it is from Quran and Sunnah. We followed the opinion from Quran and Sunnah and rulings of the Muftis delivered to us by the Imams of the Mosques. We tried not to document any vague information in this guide after the consultation with Imams. May ALLAH accept this effort, may ALLAH forgive us for any mistake.

2 Australia There is a complete freedom of religion in Australia. The majority of Australians are Christian; however, other major religions with a many followers in Australia include Judaism, Islam, Buddhism, Hinduism, and Taoism. Most of the world religions are represented in Adelaide and have their own places of worship. These can be found in the Adelaide Yellow Pages phone directory, listed alphabetically under “C” - Churches Mosques and Temples or “O” - Organizations, Church and Religions. Australia has a rich indigenous Aboriginal cultural history dating back over 30,000 years. On 26 January 1788, British settlers established a convict settlement in what is now Sydney. Adelaide was settled in 1836 and was a free settler colony. Non-indigenous Australian culture was originally British influenced but is now one of the most ethnically diverse cultures in the world. Australia is now a very diverse and multicultural country. Currently, there are around 20 million Australians. Data from the Australian Bureau of Statistics asserts that the population is made up from over 100 different ethnic groups:

Approximately 25% have one or both parents born overseas. Approximately 17% speak a language other than English at home. There are 92 religious denominations. 282 major languages are spoken. There are 170 Aboriginal and Torres Strait Islander languages. 70% of Australians live in one of the eight capitol cities.

3 Australia and Islam Some of Australia’s earliest visitors, pre-dating European settlement, were Muslims from the east Indonesian archipelago. It is thought fishermen and traders from the island of Macassar had been visiting Australia’s north from as early as the 16th century. However, the first significant semi-permanent Muslim population came in the form of Afghan camel drivers in the 1800s. These camel drivers played a significant role in opening up Australia’s vast arid inland areas, carrying explorers, developers and even the telegraph to places barely accessible by horse or on foot.

Small numbers of Muslims were also recruited from Dutch and British colonies in Southeast Asia to work in the Australian pearling industry in the late 19th and early 20th centuries. Australia’s first mosque was built at Marree in northern South Australia in 1861. The first major mosque was built in Adelaide (Adelaide city mosque) in 1890. Another was built in Broken Hill (New South Wales) in 1891. The real basis for Australia’s modem day Muslim population came in the wake of World War Two. Between 1947 and 1971 the Muslim population increased from 2704 to 22311, as European Muslims, mainly Cypriot Turks sought a new life in Australia. Lebanese migrants, many of whom were Muslims, began arriving in larger numbers after the outbreak of civil war in Lebanon in 1975.

3.1 Islam in Australia The book Muslim Communities in Australia (2001), written by Abdullah Saeed and Shahram Akbarzadeh, provides a great overview of the history of Muslims in Australia. The Australian Census in 2006 revealed a remarkable rate of growth in Australia’s Muslim population. The Census listed 340,392 Australian Muslims, an increase of some 20.9 % per cent from in last five years

3.2 Islamic Community There are now Muslim communities in all Australian States and Territories. Significantly, more than one-third of Australian Muslims are born in Australia. These second- and third- generation Australian Muslims are playing an important role in bringing newly arrived Muslims from diverse cultural, sect, national and linguistic backgrounds into the family of Islam in Australia. Australia’s Muslim community, drawn from more than 60 different countries, is a well-established and integral part of Australia’s broader society. The community has a range of regional and national organizations as well as its own Islamic schools and mosques. Muslims have made contributions in a wide range of endeavours, including social, economic, cultural, religious and educational advancement. The community’s organizational base includes well over 100 groups representing the interests of Muslims at the local or regional level. Additionally, Islamic councils representing the broader Muslim community have been established in all Australian States and Territories. They come together in a peak national body, the Australian Federation of Islamic Councils. There are 50 Islamic schools in Australia. At the tertiary level, Muslim Student Associations cater for Muslim students at universities and colleges and provide a familiar setting for newly arrived international Muslim students. Today there are approximately 100 mosques in Australia, mainly in New South Wales and Victoria. There is a large Islamic community within Adelaide and several medical, dental, family advice and support services available through different organizations. • Most agents require that you complete an application form. They might ask to see proof that you are studying in university, or working in Adelaide. And normally ask for copy of your Student Identification card and a copy of your passport as well.

a. Many agents also ask for contact names and details of people who can provide rental or personal references for you. If you are an international student, new to Australia, you can obtain a supporting letter from the International Student Adviser on your campus to verify that you are a University student.

b. Landlords may ask for details about your income, bank account, rental history, employment and one or two references. However, you do not have to provide details about your race, marital status, sexual preference or religious/political beliefs.

c. When viewing a property, take a friend with you for your support and to get second opinion. Take a copy of the Rental Property Checklist to remind you of what to look for and ask about.

d. When viewing the property check whether there is gas, as well as electricity, heating, smoke detectors (a legal requirement), the size and type of hot water system, space for a washing machine, locks on windows and doors, a phone line, enough working power points and light fittings.

Before moving in Before you move in to your new property, do an entry inspection with your Landlord or

Real Estate Agent during the day rather than at night time. This will allow you to view the external features of the house and record it on the inspection sheet.

There is no definition for "partly furnished" or "fully furnished", so use the inspection sheet to record any furniture included in the lease agreement.

Take a camera with you during the inspection; this might come in handy should you have any disputes with the landlord regarding damages and bond refund.

Keep a copy of the completed inspection sheets with you.

9.1 Buying Halal Products Always buy after reading the ingredient list

• Some emulsifiers e.g. 471, 481 etc. are doubtful unless it is specified that the source is vegetable or Halal product.

• Gelatine is mostly animal derived, unless it is specified that the source is vegetable or Halal product.

• Be careful while buying cheese, all the “enzymes” are doubtful unless it is specified that the source is vegetable or Halal product.

• While shopping don't only look for emulsifiers in the ingredients but also consider other ingredients such as colouring agents etc. Following is a small list that can be memorised or kept in pocket for immediate reference. Haram additives with “E” prefixes E120, E140, E141, E252, E422, E430, E431, E470, E471, E472(a), E472(b), E472(c), E472(d), E472(e), E473, E474, E475, E477, E478, E481, E482, E483, E491, E492, E494. Haram additives without “E” prefixes 120, 141, 160(A), 161, 252, 300, 301, 422, 430, 431, 433, 435, 436, 441, 470, 471, 472(a, e), 473, 474, 475, 476, 477, 481, 482, 483, 491, 492, 494, 542, 570, 572, 631, 635, 920.

• The "French Fries" sold at cafe outlet, Burger shops and campuses are coated with beef/meat extracts, which of course are NOT from Halal source. We have personally confirmed this with the management team of cafe in a recent meeting.

• McDonald, KFC and other vegetable burgers and pizzas should not be considered Halal for the following reasons Firstly; some places clearly mention that their fish/veggie product may contain traces of meat. Secondly; they normally use the same utensils/oil to make veggie/fish product that they use for other products.

Thirdly; they use the same tools to handle all kinds of products (including vegetable and ham) • Nandos is certified Halal chain (only for chickens & vegetable salad & French Fries).

But you will always have to mention that you need Halal food. • SUBWAY (tuna and fish, vegetable sandwich) is NOT considered Halal for

the following reason.

When the attendant is asked to make a sandwich, he/she does change the gloves, but touches all the items including Ham, Non Halal Beef and Salad, with the same gloves. This makes all the salad and ham touched with the same gloves, not once or twice but almost every time. Now when you ask for a tuna or vegetable sandwich, the salad which is being used is already touched with "HAM touched gloves", so making it highly doubtful, and Holy Prophet (PBUH) forbade using a doubtful thing.

9.3 Halal Food In Adelaide We personally collected the information from almost all declared Halal shops and tried to find out the answer to these four basic questions.

1. Do they have Halal certificate or not? 2. Whether the shop is owned by a Muslim or not? 3. Do they have any Haram Product like pork or wine or not? 4. From where they get all the meat?

We leave it to Muslim consumer to decide from where he/she wants to buy. Our aim is just to facilitate a Muslim so he/she can go for their best decision.

In Adelaide meat is slaughtered in two ways: • Hand Slaughter • Machine Slaughter

All the meat, available to certified Halal Butcher shops (like mutton goat, lamb, beef, etc.) is mostly hand slaughtered as it either comes from the companies who export it to Muslim countries or from Muslim brothers slaughtering it in different slaughter houses for their own businesses. But in poultry both hand and machine slaughtering methods are used. There are two big companies providing the poultry products to the Halal shops. Adelaide Poultry, Gourmet Poultry Both of these are situated in the same area (CAVAN) and have Halal certificate from Australian Federation of Islamic Council INC. (ph: 02-93196733) We personally visited these companies and found that they know all the basic rulings of Islamic Law.

9.3.1 Procedure: At Gourmet, chickens are placed on conveyer belts and an electric shock of very low strength (strong enough just to make the chicken unconscious) is used. While in the Adelaide Poultry, gas fumes are used for the same purpose. At the end of the belt a Muslim brother unloads them from the belt and hold them for the blades (one at a time) to cut half the neck while saying Muslim Prayer for sacrificing. If the Muslim person feels that the chicken is dead before cutting the neck, it is discarded in the waste. The management further explained that if a dead chicken is slaughter accidentally by human error (which is very rare), the blood in the body would not drain out completely and when this chicken is transferred to the hot water chamber for removing the feathers, its meat would turn red (due to the blood in the body). Such sorts of chicken are again removed from the chamber. Thus white colour of the meat proves that there is no blood in the body. The above procedures have been observed and approved by the Islamic scholars from Malaysia and Saudi Arabia who visited here. Some people don’t consider the above method as Halal. They accept every step as Halal except the electric or gas stunning procedures. They have an opinion that it is cruelty towards animals and blood would not drain out completely if the chickens were unconscious. 9.3.1.1 “Holco Fine Meats” is not listed as Halal We have not listed Holco Fine Meat Suppliers and the shops which are supplied by them due to the following reason. Holco Fine Meats were approached by us to explain about the concern by the Muslim community that they handle in pork as well, and how they manage Halal meat along with that. Their reply was that they have separate rooms for pork and separate for Halal meat processing. They were further asked if they used the same apparatus for handling both. In reply they said that some of the handling apparatus are common but they wash them before using with Halal meat.

The above reason makes the meat from this supplier doubtful and the Holy Prophet (P.B.U.H) forbade consuming doubtful foods.

9.10 Frequently asked questions about Halal food Below you will find several questions and answers to assist you when planning and serving meals, snacks or refreshments for the Muslim community. This resource is intended to provide you with more information about Halal Foods in addition to the Guide to Understanding Halal Foods.

Always buy after reading the ingredient list.

Question: What is Gelatin and is it Halal? Answer: Gelatin is a protein product obtained from pigs, cattle, and fish. The main sources of Gelatin include pigskins, cattle bones and cattle hide. Of these, the most common source is pigskins. Gelatin is used in the preparation of some baked goods, ice cream, yogurt, jellies and other food products. If the word Gelatin appears on a label, it is usually made from pigskins and cattle bones, so it is Haram. It is possible to produce Halal Gelatin by using the bones and hides of cattle slaughtered according to Islamic Law. In this case, the Gelatin would be certified Halal and labelled as Halal Gelatin. Gelatin made from any fish is Halal. Gelatin is Haram, unless specified as sourced from the vegetable or Halal product. Question: Are all the cheese Halal? Answer: Be careful while buying the cheese, all the “enzymes” are doubtful until unless specified the vegetable or Halal source. Question: what are the haram additives in an ingredient lists? Answer: Mono and diglycerides are types of fat that are used to prevent water and oil from separating. They are found in a wide variety of products including baked foods, peanut butter, margarine, and shortening. Mono and diglycerides come from animal or vegetable sources. When they come from vegetable sources, they are Halal. When they come from animal sources, they may be Haram. More information is needed to find out if they are Halal. If the mono and diglycerides come from an animal that is slaughtered

according to Islamic law (Zabihah), and the preparation that follows is Halal, then they are Halal. Halal consumers should avoid products containing mono and diglycerides unless they are labelled as 100% vegetable mono and diglycerides. Question: What is animal shortening? Answer: Shortening is a type of fat that is solid at room temperature, and is used for making many baked foods. Animal shortening, such as lard, must be avoided. Pure vegetable shortening is Halal. Question: Why are pure and artificial vanilla Haram? Answer: Vanilla is a plant product. However, it is taken from the vanilla bean using alcohol. Vanilla is available in powder or liquid form. If you look at a bottle of liquid pure or artificial vanilla extract, you will find alcohol listed as an ingredient, along with the percentage of alcohol it contains. Some people may feel it is okay to use baked products containing vanilla extract because the alcohol evaporates during the baking process. However, studies have shown that the alcohol does not completely evaporate during baking. Vanilla is also available in a powdered form. In this form, the beans are either crushed without the addition of alcohol, or they are crushed and dissolved in alcohol and then purified. During purification, the alcohol is removed. Powdered vanilla is Halal. For specific products, the label will only list vanilla or vanilla flavouring. In such cases, contact the manufacturer of the product to determine which form of vanilla was used. Question: Are all cheese Halal? Answer: Ingredients called enzymes are needed to make cheese. Three enzymes used to make cheese are pepsin, lipase and rennet. These enzymes can be from animal, vegetable or microbial sources. Animal sources include pigs and cattle. Pepsin is derived from pigs, and is Haram. Lipase derived from pigs or cattle are Haram. Lipase from cattle slaughtered according to Islamic requirements or lipase produced by micro-organisms is Halal. Rennet is derived from the stomach of calves. If the calf was slaughtered according to Islamic requirements, the rennet is Halal. Microbial enzymes are not derived from meat and are Halal. Cheese products manufactured with microbial/bacterial cultures are Halal. Most cheese products do not list the source of the enzyme. Call the food manufacturer to find out the source of the enzyme. In addition, it is possible that the source may change without notification. Question: Are the foods made with Rennet Halal? Answer: Rennet comes from the stomach of a young cow (calf). If the calf was slaughtered according to Islamic requirements, the rennet is Halal. Check for the Halal symbol or call the food manufacturer to determine if the cattle were slaughtered according to Islamic Dietary Law. Question: What is lecithin and is it a concern for Halal foods? Answer: Lecithins are emulsifiers (used to prevent oil and water from separating). They found in plants such as soybeans, as well as egg yolks and other animal sources. If a lecithin is derived from plants, egg yolks or Halal animals slaughtered according to Islamic Law, it is Halal. Most lecithin is made from soybeans. However, it is possible that some may come from animal sources. Unless the ingredient label specifically lists "soy lecithin" or "vegetable lecithin", call the food manufacturer to determine the source of the lecithin.

Question: Is whey Halal? Answer: Whey is the watery part of milk that is separated from the curd in cheese making. The enzyme most commonly used to make cheese is rennet, which comes from the stomach of calves. The rennet is Halal if the calf was slaughtered according to Islamic requirements. Whey prepared with microbial enzymes is Halal. Whey is used in processed foods such as crackers. Call the food manufacturer to determine the source of the whey. Question: Can Muslims eat kosher foods? Answer: Halal and Kosher foods are not similar. Here is an excerpt from Eat-Halal.com "Kosher is from the Hebrew word kasher, which means, "fit" and "proper". The term is usually used for food that Jews are permitted to eat under dietary laws that are derived from passages in the biblical books. Some elements of Jewish and Islamic dietary laws are common, while some are not". Therefore, NOT all Kosher foods are Halal for Muslims. Question: What is the usual meal pattern for a family who follows Halal (e.g. some people pray at 4 am and eat food at that time, but do not consider it as a part of their diet and may not mention it during a 24 hour dietary recall)? Answer: Muslims believe that eating is part of worship, good health and survival. Overeating and self -indulgence is not permitted. The dietary pattern varies from one culture to another, but three meals a day is the standard practice. Prayer times change with seasons and with time of the year. In winter for example, people can pray between 6 to 7 am, while in the summer months it can be as early as 4:30 am. To eat at this time of the morning is a matter of personal choice. Encourage Muslims to report all foods eaten within a 24 hour period for the purpose of a dietary recall. Question: What should we be aware of when buying food or planning food demos for Prenatal Nutrition Programs, Student Nutrition program or providing refreshments for workshops? Answer: When buying or serving Halal foods, it is very important to know which ingredients to avoid. Give special consideration to foods like cheese, cheese flavour chips, cakes, cookies, French fries, candies, soups (may contain meat), sauce (may contain meat), margarine, yogourt etc. Remember to check the label for questionable food ingredients. If you are not sure about a product, call the food manufacturer. Question: Are all Halal stores reliable? Answer: There are many Halal stores in the city. There are also other grocery stores that sell Halal products. For food products such as cheese, yoghurt, baked products, etc., it’s very important to be familiar with the ingredients to avoid. You can buy these products in any grocery store as long as you give special attention to the ingredient list. Meat products (meat and poultry), however, must be certified as Halal. This means that the product must originate from a Halal certified slaughterhouse and carry the Halal symbol. Zabihah is sometimes written on the product. Whether you buy these products from a Halal store or the regular grocery store, these symbols should visible on meat and meat products

11 Prophet Mohamed’s PBUH last sermon (This sermon was delivered in the 6th Century AD at Mount Arafat in Mecca) After praising and thanking God the Prophet Mohamed said, “O People, lend me an attentive ear, for I know not whether after this year I shall ever be amongst you again. Therefore, listen to what I am saying very carefully and take these words to those who could not be present here today. O People, just as you regard this month (of Hajj), this day, and this city as sacred, so regard the life and property of every Muslim as a sacred trust. Return the things entrusted to you to their rightful owners. Hurt no one so that no one may hurt you. Remember that you will indeed meet your Lord, and that He will indeed reckon your deeds. Allah has forbidden you to take usury[interest], therefore, all interest obligations shall henceforth be waived your capital is yours to keep. You will neither inflict nor suffer any inequity Allah has judged that there shall be no interest and So all the interest that is due to Abbas, the son of Abdel Muttalib, is waived. O People! The unbelievers change the calendar so they can make allowed some things which Allah has prohibited. With Allah, there are twelve months, four of them are holy. Three are in a row (the Hajj months) and one comes alone between Jumada and Shaban. Beware Shaitan, for the safety of your religion. He has lost all hope that he will be able to lead you astray in big things, so beware of following him in small things. O People, it is true that you have certain rights with regard to your women but they also have rights over you. Remember that you have taken them as your wives only under Allah’s trust and with His permission. If they abide by your right, then to them belongs the right to be fed and clothed in kindness for they are your partners and committed helpers. And it is your right that they do not make friends with anyone whom you do not approve, as well as never to be unchaste. O People, listen to me in earnest, worship God, say your five daily prayers, fast during the month of Ramadan, and give your wealth in charity perform Hajj if you can afford to. All mankind if from Adam and Huwwa, an Arab has no superiority over a non-Arab nor does a non-Arab have any superiority over an Arab; also a white has no superiority over a black, nor a black have any superiority over a white except by Allah-consciousness, piety and good actions. Learn that every Muslim is a brother to every Muslim and that the Muslims constitute one brotherhood. Nothing shall be legitimate to a Muslim that belongs to a fellow Muslim unless it was given freely and willingly. Do not therefore, do injustice to yourselves. Remember one day you will meet Allah and answer for your deeds. So beware: do not stray from the path of righteousness after I am gone. O People, no prophet or apostle will come after me, and no new faith will be born. Reason well, therefore, O People, and understand my words that I convey to you. I leave behind me two things, the Qu’ran and my Sunnah; if you follow these, you will never go astray. All those who listen to me shall pass on my words to others and those to others again; and may the last ones understand my words better than those who listen to me directly. Be my witness, O Allah, that I have conveyed Your message to Your people.
