    Menudo Ingredients:

    y 1/2 kilo pork (cut into small chunks)y 1/4 kilo pork liver (cut into small cubes)y 5 pieces chorizo Bilbao (also cut in small pieces)y 4 potatoes (peeled, cut in small cubes, fried)y 1 green and 1 red bell pepper (diced)

    y 1 cup chickpeasy 1/4 cup raisinsy 1/2 teaspoon paprikay 1 cup pork or chicken stocky 2 teaspoons of patis (fish sauce)y 3 tablespoons oily 1 tablespoon atsuete oil (optional)y 3 tomatoes (diced)y 1 small head of garlic (minced)y 1 medium size onion (diced)

    Menudo Cooking Instructions:

    y In a pan or wok, heat cooking oil and atsuete oil.y Saute garlic, onion. Then add the pork, liver, chorizo de Bilabo, tomatoes, bell

    pepper, paprika, patis and the stock.y Cover and bring to a boil. Simmer for 20 minutes or until the pork is tender.y Add the chickpeas, potatoes and raisins. Boil of another 2 minutes.y Salt and pepper to taste.y Serve hot with white rice.

    Chicken Afritada Ingredients:

    y1 kilo chicken, cut into pieces

    y 5 pieces potatoes, peeled and halvedy 1 red onion, dicedy 1 head garlic, mincedy 1 green bell pepper, sliced into stripsy 1 red bell pepper, sliced into stripsy 2 cups pork or chicken stock (broth)y 1 cup tomato saucey 2 tablespoons of patis (fish sauce)y 3 tablespoons of cooking oil

    Chicken Afritada Cooking Instructions:

    y In a cooking pot or wok, heat oil.y Saut garlic and onions.y Add chicken and slightly brown.y Pour the tomato sauce and stock. Bring to a boil and allow to simmer for 20

    minutes or until the chicken is almost cooked.y Add potatoes and continue to cook for 10 minutes or until the potatoes are cooked.y Add the green and red bell peppers, simmer for an additional minute or two.y Salt and pepper to tastey Serve this chicken recipe hot with steamed rice.

    Bicol Express Ingredients:

    y 1/4 kilo pork, thinly slicedy 1 cup Baguio beansy 3 cups long chili or jalapeno peppersy 1 onion, mincedy 1 head of garlic, mincedy 1 cup coconut milky 1 cup coconut creamy 2 tablespoons of cooking oily Salt to taste

    Bicol Express Cooking Instructions:

    y In a bowl of water with salt, soak chili peppers for 30 minutes then rinse and strain.y In a cooking pan, heat cooking oil and brown sliced pork for a few minutes.y In another pan, saut minced garlic and onion.y Add to the saut the browned pork.y Then add the coconut milk, bring to a boil and simmer for 10 minutes.y Add the chili peppers, Baguio beans and cook until dish gets a little dry.y Add the coconut cream and simmer until the sauce thickens.y Salt to taste.

    Chicken Teriyaki Ingredients:

    y 1 kilo chicken, cut into piecesy 6 tablespoons of soy saucey 4 tbsp of vinegary 2 tbsp of salty 1 tbsp peppery 2 tbsp of sugary 2 tbsp of cooking oily 6

    tbsp of teriyaki saucey 1-2 tbsp of sesame seedsCooking Instructions:

    y In a bowl, mix the chicken with the soy sauce, vinegar, salt, pepper and sugary Marinate for at least 30 minutesy In a wok or pan, boil the mixture and let simmer until chicken is tender and the

    sauce thickensy Add cooking oil and teriyaki saucey Let simmer for another 5 minutesy Garnish with sesame seedsy Serve hot with steamed rice
