Liquid Measuring Cup
• Looks like a small glass pitcher
Measurement by cup type
• Liquid • Dry
When measuring liquid
Place the cup on a Level or Flat surface and read the measurement at EYE level
Brown Sugar and Shortening Should be packed into the measuring Cup

Flour should NEVER be packed, but should be SPOONED into the
measuring Cup
Sifted Flour
Many recipes allow you to removed TWO tablespoons of Flour instead of sifting.
To sift flour Sift first, then meaure.
Powdered Sugar
• To get lumps out of Powdered Sugar SIFT IT
Measuring Shortening by Liquid Displacement
Softening Brown Sugar
Place Bread or Apple slice in the bag, or microwave for a short time.
One Stick or Butter Equals
= ½ Cup
4 Sticks of Butter Equals
= 1 pound
16 Tablespoons is One Cup

Use Measuring Spoons When
• When Measuring 1/8 Cup or less
Use Most Efficient piece of Equipment
• Use ¼ Cup instead of 4 Tablespoons.• To measure 1/8 Cup use 2 Tablespoons.
Measure ¾ Cup
¼ Cup + ½ Cup = 3/4 Cup
Never Measure Ingredients Over the Mixing Bowl
Crack Eggs into A Bowl
You won’t get shells in Mixing Bowl
If Egg is bad, you can throw it away without wasting ingredients.
When Cutting Recipe in Half or Doubling
• Same
• Cooking Temperature
• Change or Different
• Amount of Ingredients• Length of Cooking Time• Size of pan
When Using Glass Baking Pans
Reduce the Oven Temperature 25 Degrees.
