El Empordà está enmarcado por una geografía privilegiada que
comprende unas tierras generosas, lugar ideal para la huerta y los
pastizales, el mar y su pescado y marisco, la zona montañosa de las
Gavarres para las setas y la caza. Con el paso del tiempo, la historia,
la naturaleza, las gentes y las tradiciones han ido forjando una gas-
tronomía propia y diferente de la del resto de las tierras catalanas.
Nuestra cocina, que ya empezaba a echar raíces en el siglo XIV, se
expande durante el XV, también época de auge de la literatura y del
comercio catalanes. Después de sufrir un período de decadencia a
lo largo del siglo XVII, llega el XVIII. En ese siglo, el gran esplendor
de la cocina francesa no afecta a las características culinarias de
esta tierra, pese a introducirse los nuevos productos agrícolas ame-
ricanos y el cultivo del arroz. Estas aportaciones nuevas dan como
resultado un siglo XVIII, gastronómicamente hablando, caracteriza-
do por una gran variedad de platos diferentes que se extienden por
toda la costa de los Países Catalanes.
Con el paso del tiempo se ha ido configurando una cocina caracte-
rística de esta tierra con productos muy representativos y platos
que, en su mayoría, se han reinterpretado infinitas veces.
El Baix Empordà permite al visitante descubrir sus delicias y crear-
se sus propias rutas gastronómicas.
The Empordà lies within a privileged geographical setting, with
generous farming land, ideal terrain for market gardens and pastu-
res, the sea with its rich fruits of fish and seafood and the moun-
tainous area of Les Gavarres providing mushrooms and game. Over
the centuries, history, nature, people and traditions have gradually
created a true local gastronomy, different from the rest of
Catalonia.
Our cuisine began to take root here in the 14th century, expanding
throughout the 15th, which also marked a period of flourishing of
Catalan literature and trade. After a period of decadence in the
17th century, we come to the 18th. The regional cuisine was not
affected during this period by the splendour of that of nearby
France, though new American crops and rice were introduced at
this time. These new ingredients led, gastronomically speaking, to
the creation of a vast variety of different dishes along the length of
the Catalan coast in the 18th century.
Over the years, a cuisine characteristic of these lands has gradually
taken shape, then, using the most typical local products in a reper-
toire of dishes which have been re-interpreted time and again.
The Baix Empordà invites visitors to discover a world of tasty
delights, building up their own gastronomic routes around the
county.

La cocina siempre ha estado ligada a las festividades y fechas
señaladas; fiestas mayores, Navidad, Semana Santa: éstos son
todavía los encuentros familiares más importantes, en los cuales
la cocina no ha perdido protagonismo. La matanza del cerdo, es
una de las tradiciones que se ha ido perdiendo a causa de la apa-
rición de técnicas mucho más modernas. Junto con la vendimia,
eran fechas ineludibles cuando tocaba sentarse alrededor de una
mesa.
Las fiestas mayores han sido una excelente mues-
tra de los productos y platos de nuestra tie-
rra. Los pollos, las ocas y los patos siem-
pre han sido muy abundantes. El
escritor ampurdanés Josep Pla nos
habla de escudella (potaje catalán)
y de arroz a la cazuela, de plati-
llos de oca con nabos, de ternera
con setas y de los asados de ter-
nera y de cerdo; para postre,
manzanas de relleno, galletas,
carquiñolis y roscón.
La cocina del Empordà ha estado y
está presente en los acontecimientos
sociales que tienen lugar en nuestra comar-
ca, convirtiéndose así en un motivo más de
encuentro. Este componente social se ha creado a base
del suquet (guiso de pescado) de los pescadores junto a la playa,
de los arroces a la cazuela en los encuentros populares, o de las
largas noches de comida y tertulia en las barracas del litoral o del
interior del país. Sin olvidar las fondas de pueblo, donde las comi-
lonas se acababan con larguísimas sobremesas que todavía se
repiten hoy en día y que son siempre sorprendentes para la gente
llegada de otros lugares.
Cuisine has always been linked to feasts, festivities and holidays:
local saints’ days, Christmas, Easter, etc, are just some of the dates
marked by cheerful family reunions in which good food and drink
plays an important part. Slaughtering the pig, once a widespread
custom, is one of the traditions which has gradually disappeared
due to the appearance of more modern methods but which, along
with the harvest, were, in their day, celebrated around the table.
The festa major (a festivity marking patron saints’
days) provides an excellent chance to try the
different local products and dishes.

The cuisine of the Empordà has always been pre-
sent at social events in the county, making it another
reason to meet together. This social element was created around
such dishes as the suquets (fisherman’s stew) on the beach, rice
dishes at popular gatherings and long nights of food and talk in
the huts along the coast and in the inland regions. Not forgetting
the village restaurant, the fonda (inn), where feasts were rounded
off with long dinner-table conversations which still take place
even today, to the surprise of those coming here from other parts.
Las Fiestas Festivities
El mismo territorio de la comarca nos ofrece una gran variedad de
materias primas. Como un regalo de la naturaleza, el mar, la huer-
ta, el llano y la montaña han sido históricamente una importante
fuente de riqueza. Esta despensa del Empordà ha generado una
cocina tradicional propia de la comarca.
Difícilmente encontraremos muchas zonas que reúnan, en un
espacio tan reducido, una riqueza tan importante de productos,
procedentes al mismo tiempo de la agricultura, la ganadería y la
pesca, y que nos ofrecen una gran variedad de gustos, olores y tex-
turas. El resultado es una dieta diversa, de origen popular, com-
puesta básicamente por los productos de gran calidad que se tie-
nen más a mano, procedentes normalmente de economías humil-
des y caseras. Los cereales, el arroz, las hortalizas, los frutales, la
viña, el olivo; el ganado bovino, porcino, ovino y cabrío; la leche,
los quesos, los requesones; el pescado de roca, el pescado azul, las
gambas, el marisco, los carapos, las angulas y otros, proporcionan
toda la diversidad que una cocina pueda desear.
Los encuentros popularesLa gastronomía es un reflejo de la cultura de un pueblo y de sus
tradiciones. Las manifestaciones populares más habituales que tie-
nen lugar entre las gentes de los pueblos son las grandes comidas
colectivas a base de arroz, de butifarras y de sardinas. Éstas son
las más tradicionales y hoy siguen siendo las más conoci-
das, habitualmente elaboradas por cocineros aficionados,
aunque expertos en la preparación de estos banquetes
multitudinarios.
Muchos de estos encuentros tienen unas raíces muy
lejanas, posiblemente de carácter religioso, o pueden ser
una celebración pagana. En ambos casos el motivo es
exclusivamente festivo, ya que nuestra cultura nos lleva a
celebrar los encuentros populares, las conmemoraciones o los
diferentes actos que tienen lugar en nuestra sociedad.
Es indudable que estas actividades populares contribuyen a la divul-
gación del atractivo que supone la gastronomía del Baix Empordà.
The very geography of the county provides a wealth of raw mate-
rials, for the gifts of nature, the sea, the vegetable garden, the
mountains and the plains have always been an important source
of riches here. Indeed the "larder" of the Empordà is crucial in the
make-up of the local cuisine.
It would be difficult to find many zones which unite, in such a
small area, such a range of products from agriculture, livestock
farming and fishing, offering a huge variety of tastes, smells and
textures. The result is a varied diet, popular in origin, made up,
basically, of quality products found close at hand, normally the
product of humble household economies. Cereals, rice, vegetables,
fruit, the vine, the olive; cows, pigs, sheep, goats, milk, cheese,
curds; rock fish, blue fish, prawns, sea food, eels, and so on, provi-
de all the diversity one could wish.
Popular gatheringsThe cuisine is the reflection of a people’s culture and traditions. The
most frequently-organised local gatherings are arrossades, botifa-
rrades and sardinades, at which rice, sausage and sardines, respec-
tively, take pride of place on the menu. These are the most tradi-
tional and continue to be the best-known, the viands usually
prepared by amateur chefs who are, however, expert at
producing these popular feasts.
The roots of many of these reunions go back many years,
and may be religious or pagan in origin. However this
may be, the motivation behind them is always exclusively
festive, for the regular celebration of popular gatherings,
commemorations and other social events forms part of our cul-
ture. There can be no doubt, moreover, that these popular activities
help make the attractions and delights of the Baix Empordà cuisine
ever more widely known.

Las materias primas y las tradiciones han ido configurando un
recetario tradicional. Los profesionales de la hostelería se encar-
gan de ir añadiendo detalles imaginativos que hacen evolucionar
este hábito culinario, igual que evoluciona cualquier arte.
La gastronomía de la comarca permite al visitante degustar la
cocina más tradicional y, al tiempo, más innovadora, en la que
siempre se halla presente la calidad.
Las campañas gastronómicas
Los restaurantes de la comarca dan a conocer los productos y
platos más característicos de la cocina del Baix
Empordà a través de las campañas gastronómi-
cas. Hacia el año 1983 se empieza a difun-
dir nuestra cocina mediante jornadas y
diferentes muestras. En 1992 se
organiza la primera campaña gas-
tronómica municipal en la
comarca, con la posterior incor-
poración de diferentes campa-
ñas hasta llegar a las que, hoy
en día, ya están totalmente
consolidadas. Estas campañas
pretenden dar a conocer, en el
transcurso de unos días concretos
del año, la variedad de productos y
platos de la comarca en unos menús de
precio fijo. El Calendario de las Campañas
Gastronómicas es una publicación que se edita
anualmente y que facilita al visitante un esquema de
la temporalidad de las campañas.
The local raw materials and customs have gradually built up a
traditional repertoire of dishes. Restaurateurs have been pleased
to add touches of imagination to spur the evolution and deve-
lopment of our cuisine, just as any other art evolves.
The gastronomy of the county enables visitors to delight in what
are at once the most traditional and the most innovative of dis-
hes, all characterised by the highest quality.
Gastronomic campaigns
The restaurants of the county offer their customers the most
characteristic products and dishes of the Baix Empordà
cuisine as part of regular gastronomic cam-
paigns. The first fairs and exhibitions began
to be organised to promote the delights
of the local food and drink products
in 1983, and the first municipal
gastronomic campaign in the
county took place in 1992, and
different initiatives have since
been launched and gradually
become established in the local
calendar of events. The aim of
these campaigns is to promote
the variety of products and dishes
to be found in the county over a
short period every year, with set meals
at a fixed price. The Gastronomic Campaign
Calendar is published yearly to provide visitors
with information about when and where they can find
such initiatives.

Rice has been grown in the Pals wetlands for centuries, generating such
emblematic heritage as the mill, built in the 18th century and still in
working order. Pals rice is much appreciated thanks to the
characteristics given it by the climate of the Empordà county, colder
than other rice zones to the south.

Se ofrecen indistintamente platos a base de carne o pescado, e incluso algunos
que mezclan ambos ingredientes. El producto estrella es la cigala, que se puede
degustar, por ejemplo, en un suculento estofado de pollo de corral con cigalas.
Here we can find dishes based on meat or fish, and even some in which the two
ingredients are served together. The main product is Norway lobster, which
makes a tasty combination with, for example, free-range chicken.
INGREDIENTES:
Sepia 1 kgArroz 400 gCebolla 1 unidadTomate 3 unidades Pimiento verdeAjosAceiteAgua o fumet de pescadoTinta
PREPARACIÓN:
Picar la cebolla bien fina y sofreírla con aceite en una cazuela de hierro. Cuando lacebolla haya adquirido un tono oscuro, añadir el pimiento verde y los ajos, picados adados muy pequeños.Dejar cocer hasta que el conjunto adquiera un color marrón y consistencia demermelada. Entonces añadir el tomate pelado y picado, y esperar a que quede bienconcentrado.Añadir la sepia limpia y cortada a dados (las bolsas de tinta se guardarán parautilizarlas más tarde). Saltear, añadir la tinta y, seguidamente, el arroz. Remover afuego vivo.Finalmente, mojar con el fumet que previamente se habrá llevado a ebullición.
Muy importante:
El arroz no debe dejar de hervir. Cinco minutos después de añadirle el fumet, bajar elfuego y dejar cocer 7 minutos más a fuego suave (el tiempo de cocción depende delagua y del arroz).
INGREDIENTS:
Cuttlefish 1 kgRice 400 gOnion 1 Tomato 3 Green pepper Garlic Oil Water or fish fumet Ink
PREPARATION:
Put the finely chopped onion in an iron pan with oil. Fry until golden brown and thenadd the finely diced green pepper and garlic. When it starts to brown and has a marmalade-like consistency, add the peeled,chopped tomato and allow it to reduce and thicken. Add the cuttlefish, carefully cleaned and cut into cubes (the bags of ink should be keptto be used later), turn several times, then add the ink and later the rice, stir over ahigh flame. Finally, add the previously boiled fumet.
Very important:
The rice must not come off the boil. After 5 minutes lower the heat and cook for afurther 7 minutes over a low heat (cooking time will depend on the water and the rice).

INGREDIENTES:
Pollo de corral 1 unidadCigalas por persona 3 unidadesCebollas 2 unidadesTomates maduros pequeños 2 o 3 unidadesAjos 3 o 4 dientesAlmendras 1 puñadoAjos y pimientoAgua o caldo
PREPARACIÓN:
En una cazuela con aceite, freír el pollo cortado en trozos, los ajos y el pimiento.Cuando todo esté dorado, sacar y reservar para más tarde.En el mismo aceite, freír las cigalas y retirarlas. Sin cambiar el aceite, poner a sofreír lacebolla bien picada; cuando esté dorada, añadir el tomate. Remover sin parar hastaque el conjunto quede bien concentrado y haya adquirido consistencia de mermelada.Una vez conseguido un sofrito consistente, añadir los trozos de pollo y cubrir conagua. Rectificar de sal y tapar.Cuando el pollo esté tierno, añadir las cigalas y, a continuación, los ajos y almendraspreviamente machacados en el mortero.
Recomendación:
Se recomienda preparar este plato de un día para otro.

Free range chicken 1 Large prawns per person 3 Onions 2 Small mature tomatoes 2 or 3 Garlic 3 or 4 cloves Almonds 1 handful Garlic and peppers Water or stock
PREPARATION:
Brown the chicken, previously cut into pieces, in a pan with oil, with the garlic and thepepper; once browned, remove and keep for later. Fry the large prawns in the same oil, remove them and make the base for the sauceusing finely chopped onion. When brown, add the tomato and stir continually until ithas thickened and has a marmalade-like consistency. When it is the right consistency, add the pieces of chicken and then add water tocover, add salt to taste and cover the pan. When the chicken is cooked, add the prawns and the crushed garlic and almonds.
Recommendation:
This dish is best eaten the following day.
Suquet
INGREDIENTES:
Cabracho, bejel 180 g por personaAjos 4 unidadesTomates maduros pequeños 4 unidadesPatatas 1 1/2 por personaAlioli sin ligarAgua o fumet de pescado
PREPARACIÓN:
En una cazuela con aceite, freír los ajos pelados hasta que estén bien dorados.Añadir el tomate natural y, cuando haya perdido el agua y se haya reducido, agregarlas patatas y remover de manera que todos los ingredientes queden bien mezclados.Mojar con el fumet. Cuando a las patatas les falten unos 8 minutos de cocción, añadir el pescado arodajas. Una vez cocido el pescado, agregar a la cazuela una buena cantidad de aliolisin ligar (la cantidad dependerá del gusto personal; incluso se puede servir el alioliaparte).
Recomendación:
Se recomienda dejar reposar el suquet unos minutos antes de servirlo.

PREPARATION:
Pour some oil into a pan, add the previously peeled garlic and cook until brown. Add the tomato and when it is dry and has reduced, add the potatoes and stir withthe base of the sauce until they blend, add the fumet and cook the potatoes. When the potatoes only need another 8 minutes cooking time, add the fish in slices.As soon as the fish is cooked, add a good amount of garlic sauce to taste; the saucemay also be served separately.
Recommendation:
The suquet is best left to stand for a few minutes before eating.
