Perloo SauceIngredients:
4 ounces Applewood
Smoked Bacon1/2 cup yellow onions, diced1/2 cup celery, diced
1 teaspoon garlic, chopped1 teaspoon fresh lemon juice1 quart roma tomatoes,
diced1/2 quart heavy whipping cream
2 cups chicken stock2 dashes Tabasco1 cup fresh okra, sliced 1/2 inch
Directions:Heat a medium-size sauce pot until hot. Add baconand sauté until crisp. Add onions, celery, and garlicand sauté on mediumheat for 2 minutes. Addfresh lemon juice, romatomatoes, cream, chickenstock, Tabasco and okra.Bring to a boil then reduceheat and simmer overlow heat for 10 minutes.

Smoked Bacon Garlic GritsIngredients:
1/2 cup olive oil4 ounces Applewood Smoked Bacon
1/2 cup white onion, chopped1/4 cup garlic, chopped
1 & 3/4 quarts chicken stock2 cups stone ground grits1 tablespoon kosher salt1 teaspoon black pepper
Directions:Heat oil in a stock pot, add bacon andbrown, add onions and cook until soft.Add garlic and cook until golden brown.Add chicken stock and bring to a boil.Slowly add grits and reduce heat. Add saltand pepper and stir occasionally until gritsare soft.
Final preparation and serving:Heat 2 oz. of olive oil in a sauté pan add48 (16/20 count) shrimp and cook untildone. Spoon Smoked Bacon Garlic Gritsinto the center of a large rimmed bowl,place 6 cooked shrimp with tails facing inaround the grits, pour Perloo Sauce overtop and garnish with shaved green onions.Serves 8.

When we think of wine, wetypically conjure notions of arobust Cabernet Sauvignon,a bold Chardonnay or acrisp Riesling. But let’s not
forget the role of wine in cooking.
What may immediately come to mind isclassic French cuisine, where wine serves as a key ingredient for tasty dishes such as BeefBourguignon or Coq au Vin. We don’t oftenthink about wine as a condiment. For centuries,however, wine has served that function. A greatexample is Sherry Pepper Sauce.
For more than 200 years, Sherry Pepper Saucehas been a well-kept Bermuda secret. In the hey-day of the British Navy, Bermuda’s Royal NavalDockyard was one of the busiest maritime basesin the world. Sailors coveted locally cultivatedpequin peppers, which they would add to theirbarrels of sherry to create a seasoning to maskthe taste of their less-than-savory ship rations.
Admittedly, Sherry Pepper Sauce had anunbecoming origin, but the Bermudians refinedthe recipe and began producing and selling it themselves. Sherry Pepper Sauce quicklybecame a favorite sauce among the locals andis an essential ingredient in Bermuda’s world-famous Fish Chowder. Nowadays, a bottle ofSherry Pepper Sauce can be found tablesidein just about any restaurant in Bermuda andin nearly all kitchen pantries.

miles off the coast of South Carolina, here atIsland Winery, we decided to adapt the recipea bit to make it the perfect accompaniment toour Lowcountry cuisine.
We started with our barrel-aged semi-drysherry. Then we infused the sherry with smokychipotle and habanero peppers for severalweeks to give it a little extra kick. Finally, webottled it with a couple of pequin peppers tokeep true to the original recipe. And, just togive it that special spice Lowcountry cookingis famous for, we added some of the sameCaribbean spices that were once traded inthe ports of Charleston and Savannahcenturies ago.
Sherry Pepper Sauce offers a unique, full bod-ied spice that won't overpower. Unlike vinegaror tomato based hot sauces, Sherry PepperSauce complements natural flavors, making itan ideal companion to classic Lowcountry cui-sine. It’s a brand new year and, barring any severeweather, the great fishing should continue! Weare so blessed here on Hilton Head Island withmany days reaching the 70’s and sometimeseven 80 degrees in winter.
Trout fishing has been especially strong this sea-son. Reaching the limit of 10 trout per personhas been easy most days. They’re hitting almostany artificial bait you throw at them, and livebait is always well-received. Reports of large“gator” trout are common, and large flounderseem to be plentiful as well.
Redfish are with us year round and, at this timeof year, can be caught inshore and offshore.While artificial bait will work in the creeks forthe redfish, cut mullet, live mud minnows andshrimp will all but guarantee some lively action.Fishing around docks and oyster beds on eitherside of low tide seems to be the best methodfor hooking these battlers.
Sheepshead fishing around docks and oldpilings is also excellent this time of year. Livefiddlers and clams are the favorite bait of choicefor these convict-striped fish. Master bait thieves,sheepshead can be ever so subtle. Not manyfish can top the sheepshead for table fare, whichhas earned it the nickname “river snapper.”
Sheepshead can be reeled in at nearshore reefs,but black sea bass pose a problem in wintersince they are officially out of season this time
of year. You can literally catchhundreds of black sea bass on afishing trip in January and February,
but you’ll have to release them all to complywith the law.
While many reds are being caught in thecreeks, the really big boys will be found offthe beach. This time of year, searching forgannets diving on bait schools will help youlocate the bull redfish. Once you identify wherethey are in the water, place squid, menhadenor cut mullet beneath them and hold on!Averaging 30+ pounds, these guys can becounted on for scorching runs.
Another winter fishing option is located up theSavannah River. In January, the striped bass runup the freshwater rivers and offer a rare treatfor those who seek them. Trolling big CiscoKids or similar lures along the banks with stouttackle can produce fish 20 pounds and up. Becareful of large freighters passing, as the deepdraft of these ships will pull the water six feetor more from the bank.
All in all, there’s still plenty of good fishing thistime of year, so don't put those rods away forthe winter!

The bald eagle’s scientific name, HaliaeetusLeucephalus, literally translates to mean “whiteheaded sea eagle.” Bald eagles symbolize longlife and strength and have a majestic look. As oneof the only indigenous birds to North America, itis no wonder they have been chosen as part ofthe official emblem of the United States.
The bald eagle is the largest raptor in SouthCarolina. Females can grow to be 37 inches tallwith a 90-inch wing span. Females are also notedto have larger beaks. Males are smaller, reachinga height of 34 inches and boasting an 85-inchwingspan. Although these raptors are fairly largebirds, they generally only weigh about 15 pounds.
Adult bald eagles are identified by their distinctwhite head and tail. Their bodies are a dark browncolor. Juvenile bald eagles are mottled brown andstart the development of the white head and tailfeathers at three years of age. The transformationinto the adult bald eagle may not be completeuntil they are five or six years old. The oldest baldeagle on record was a captive species in New Yorkthat lived to be 48 years old. Normally, eagles willlive to be 20 years old, but have been noted tolive up to 30 years old in the wild.
Eagles are renowned for their incredible eyesight.They are able to see fish under the surface of thewater from great heights. Their vision is four timesthat of a human’s perfect 20/20 vision. Anotherremarkable aspect of an eagle’s sight is its abilityto see both forward and sideways at the sametime due to two foveae in their eye. The foveae isa small depression in the retina where the centerof field of vision is focused and where visualacuteness is the highest.
The bald eagle’s wings are designed to soar onthermal wind patterns. The design of their wingsallows them to travel great distances with mini-mal effort. They can fly to a height of 10,000 feetand may travel up to 35 miles per hour. Eagleswill eat fish, coots, ducklings and other small

mammals. They are both hunters and scavengers,commonly eating dead fish. They are known to stealfood from other raptors, such as osprey and have theability to lift four pounds with their talons as they fly.
Eagles nest in tall live pine trees. They usuallylook for a tree that has a higher canopy than thesurrounding trees. The nest site is chosen by theproximity to water, the vantage point as well as theheight of the tree. Eagles mate for life and will usethe same nest every year. They continually addbranches to the nest each year. Eagle nests canmeasure up to 10 feet across and may weigh upto a ton.
Females may lay up to three eggs once a year.Both the male and the female will incubate theeggs for about 35 days. In South Carolina, thenests are generally laid in December and January.In the late spring and early summer, both the juve-nile and adult eagles may migrate north. Eaglesthat have been banded in South Carolina are com-monly found summering in the Chesapeake Bayarea, but have been spotted as far north as Canada.
The ACE Basin and Hilton Head Island area arehome to the highest concentration of eagles in thestate of South Carolina, with 40% of the state’sbald eagle population living here. The majorityof North American bald eagles live in the PacificNorthwest, with 70,000 in Alaska and 20,000in British Columbia. They were taken off of theendangered species list in 2007, but are still pro-tected by the Eagle Protection Act and MigratoryBird Treaty Act.

Venture into Broad Creek duringthe early weeks of the New Year,and it’s likely the only companyyou’ll have are the birds anddolphins.
If the tide is right, a waterman ortwo will be busy harvesting oysters.The cool air and water temper-atures tend to discourage folksfrom enjoying a day of boatingor kayaking. Dressed properly, being on thewater in the winter is definitely a wonderfulexperience!
The plants and animals that inhabit the saltmarsh are uniquely adaptable to the ever-changing conditions, from the ebb and flowof the tide to drastic changes in temperature.The water temperature at the height of thesummer can be 85 degrees. Contrast thatwith the current water temperature of about54 degrees. A stiff winter wind can furtherreduce the temperature to near freezing. Thisaffects the habitat in numerous ways, drivingfauna out of the shallower creeks and intodeeper and warmer waters and supportingspecies that migrate from more northernclimes into our creeks and salt marshes.
Shrimp are particularly sensitive to watertemperature. During the fall, when the watertemperatures fall to about 60 degrees, mostshrimp emigrate from the tidal creeks to theocean. It is here that adults spawn.
For oyster harvesters, this is the time of yearthey’ve been waiting for. Harvesting occurs inany month with ‘r’ in its name, but the best timeto harvest is when the water is the coolest. Anddolphin, all but the hardiest residents, haveleft for warmer waters.
If you’re out on the water this winter, look for loons,mergansers and buffleheads.Arriving here in the fall,these and other migrantswill take advantage of thefood and protection of thesalt marsh before returning,in spring, to their nestinggrounds farther north.
Perhaps the most noticeable effects of thecooler winter water is its clarity. Or, perhapsmore accurately, it’s relative clarity. Given thenutrient-rich qualities of the salt marsh, we willnever experience the crystal clear waters foundmuch further south. The shorter days with lesssunlight and chilly waters inhibit the proliferationof phytoplankton. Phytoplankton is a micro-scopic plant material which requires sunlightand heat to flourish. It is the primary foodsource for all things in the salt marsh.
With significantly less phytoplankton suspendedin the water now, you can see the creek bottomin shallow water. To look into the water and seethe oysters filtering, small fish swimming in andamongst the beds and to spot the underwaterapproach of a dolphin is very cool.

Golf Tips For The New YearBy Doug Weaver, Palmetto Dunes Oceanfront Resort
As we kick off 2013 on Hilton Head Island,this is an ideal time of year to make NewYear’s resolutions.
Hopefully one of your resolutions is to becomea better golfer. Whether you’re just learning toplay or you’ve been teeing off for decades, it’simportant to realize that golf is a sport that cantake a lifetime to perfect. There are always newways to refine your swing, perfect your putt andimprove your score.
Here are a few of my top tips for 2013, to helpyou make the most of your game:
Remember, golf isn’t about building yourupper arm strength or developing yourmuscle mass. It’s about allowing your bodyto stay relaxed and to allow the club to do itsjob. Respect the weight of the club, keep yourbody loose and keep your elbows close to yourbody. I recommend you stretch daily startingwith your hips, hamstrings, and wrists.
Don’t let the little muscles in your hands,wrist and forearms provide the power forthe swing. When you use those small muscles,your club and your swing get out of rhythm andsync. The body’s larger, slow-twitch musclefibers are more dependable under pressure.They provide the consistency you need to hitmore shots with greater accuracy on the greenand the fairway. When you swing slow the ballgoes fast. When you feel out of control you arein control.
Think positive. So much of golf is mental andpsychological. Feed relaxed, affirmative thoughtsto your subconscious mind in order to maximizeyour swing. If you let those encouraging sub-liminal messages guide you and apply solidfundamentals to your game, you’ll be able tosucceed on the green. Try our Mental GolfWorkshop Class
To improve your loft on to the green, focuson clipping the tee rather than lifting the
ball up in the air. Don’t struggle with indeci-siveness. Instead, remember that golf is a gameof opposites. When you swing down, the ballautomatically goes up. Don’t lift the ball withyour wrist, as many golfers tend to do. Instead,trust the loft and let the club do the work. You’lllearn to impart backspin and be much morepleased with the results.
Adjust your grip depending upon the shot.For smaller shots, grip the club down low, putyour weight on your left foot and use a modestbackswing. For bigger shots, be sure to grip theclub up high, widen your stance, use a longback swing and transfer your weight back andforward for more power.
Your short game is where you have thegreatest opportunity to reduce your overallscore. I invite you to take my Shortgame 1Class at the Palmetto Dunes Golf Academy,which will help you refine your skills. Practicereally does make perfect!
Have a strategy for windy conditions. Mostplayers swing harder in an attempt to counterthe wind. However, trying to hit the stuffingout of the ball to compensate for a breeze isa counterproductive strategy. Here’s why: Theharder the swing, the more spin on the ball,which is only exaggerated by the wind. Betterto swing according to the old axiom, “Nice andeasy when it’s breezy,” than to try to hit the ballthrough the wind.
Even though January and February can getchilly, the golf courses on Hilton Head Islandare still green and welcoming. While courses upnorth are covered with snow, we’re still able totee off on some of the world’s most acclaimedchampionship courses all winter long.
