How to Substitute Ingredients to Make Recipes

I f you have allergies or food sensitivities, you

know how disappointing it can feel to miss out

on certain foods because they contains some-

thing you can’t eat. In this chapter, I will share

some tips with you for adjusting recipes so that

you can enjoy them again.

Before we get to that, though, let me tell you

my story. My name is Katie, and a couple of years

ago I started feeling really sick after eating some of

my mama’s homemade pork sausage. Eventually,

I found out that a tick bite caused me to become

allergic to mammal meat (beef, pork, lamb, deer)

and dairy.

If I was the only person I knew with food aller-

gies, I’d feel pretty lonely. But I’ve made friends

over the years that have different limitations

because of food allergies. One of my good friends

has a bad nut allergy. It’s serious enough that his

school banned three different nuts from all snacks

and lunches so he would be safe. Another friend in

my neighborhood who loves to cook is allergic to

gluten and dairy. She doesn’t let that stop her from

cooking, though. She substitutes dairy-free and

gluten-free ingredients and still has a great time in

the kitchen!

So now you know you’re not alone. Here are

some tips for making adjustments to some of your

favorite recipes so that you can enjoy them again.

I want to talk about the most commonly avoided

foods, like dairy, eggs, nuts, soy, corn, and wheat.

With a few adjustments and a little extra planning,

you’ll find that there aren’t as many limitations as

you think!

Dairy SubstitutesThere are a lot of good, dairy-free choices for

cheese, yogurt, butter, and milk sold at health food

stores and even some grocery stores, but there are

also some simple substitutions you can make at

home. Here are your best bets for butter and milk:

Easy Recipe Substitutes for Milk

Full-fat coconut milk makes a great substitute for

milk or cream. You can use it in exact measure-

ments, so if the recipe calls for 1 cup of milk, use 1

cup of coconut milk.

Nut milk, like almond and hazelnut milk, can

also work as a substitute. These milks don’t have

as much fat as coconut milk, though, so they are

not as creamy. If you want the recipe to be creamy

and you can’t use coconut milk, try blending nut

milk with some oil. Let’s say, for example, a rec-

ipe asks for one cup of cream, but all you have is

almond milk and you want the recipe to be creamy.

You could try using a little less almond milk, say ¾

cup, and ¼ cup of avocado oil or olive oil to it. The

oil will make it creamier and less watery.

Something to keep in mind, though, is that an

oil with a strong flavor can change the flavor of

the recipe. Some olive oils have a spicy, peppery

flavor that would probably not taste good in cook-

ies. In that case, choose a more neutral-flavored

oil, like avocado oil, or to leave the oil out and just

use one cup of nut milk.

Easy Recipe Substitutes for ButterThere are dairy-free options for butter at the gro-

cery store that have pretty good flavor and healthy

ingredients, but in a pinch, here are some options:

coconut oil, ghee, and palm kernel oil are all rich

in saturated fat, which the kind of fat that makes

butter solid.

Coconut oil doesn’t taste anything like butter,

but you can use it exactly as you would butter in

just about any baking recipe.

Ghee is actually made from butter, but it’s fil-

tered to remove the proteins that most people

react to, so some people who can’t eat butter can

have ghee. If you can have ghee, there are some

wonderful benefits to using it. Ghee contains vita-

mins A, D, E and K2, which are needed to grow up

healthy and strong.

Palm kernel oil (not palm fruit oil) works well as

a butter replacement, but some of it has negative

environmental issues—some companies harvest

palm oil in a way that takes homes away from for-

est animals, like orangutans. If the other options

don’t work for you, look for companies that sell

sustainably harvested palm oil that doesn’t harm

forests or the creatures that live in them.

Egg SubstitutesMany recipes for bread, muffins, cookies and other

yummy creations call for eggs, which is a bummer

if you can’t have them. Luckily, there are egg sub-

stitutes that keep things moist and delicious. There

are two very important things you need to know:

Egg substitutes usually work best when there are

1–3 eggs in the recipe. If there are more than that

it’s probably best to skip the recipe. And, decid-

ing which egg substitute works best in a specific

recipe may take some experimenting. If you’re not

sure which one to try first, it might be a good idea

to ask an adult for their opinion.

Egg Substitute Options (each equals one egg)Nut butter or seed butter—Use ¼ cup for

each egg. Almond butter, sunflower seed butter,

macadamia nut butter, cashew butter, walnut

butter, pecan butter, tahini, peanut butter, and

hazelnut butter are all good options. Don’t use

crunchy nut butter because it will affect the

texture of your recipe.
