It’s that time of year again for many of us. When we start to get ready for March break and wonder what we are going to do with the kids to keep them entertained. For some of us it means finding a camp for the kids while we are at work and for others who are blessed enough to be spending March break with the kids it means finding fun activities for the family. Flipping through this issue you will get some ideas for things to do. Local businesses have some great things going on for the break so be sure to get out and support our community.

You will notice that our GREAT TOWN GREAT FINDS section has increased in size. If you ever come across a great find in town be sure to send it along so we can include it in future issues of the magazine. the world by storm”, Walk Off the Earth is not only the name of this Burlington band, but a com-mand they seem to have followed to the letter. In case you haven’t heard (impossible), the five-member band from Burlington recently released their music video via You-tube, in which they play their cover of Gotye’s Somebody That I Used to Know using one guitar simultaneously. The video went viral and has since garnered more than 50 million views from across the globe, including accolades from the likes of Alyssa Milano, Justin Timberlake, Rus-sell Crowe, and Ryan Seacrest. Even Perez Hilton has lauded the band and a few weeks ago, they were invited to play live on Ellen. Sitting down with three of the band’s five members—Marshall, Gianni Luminati and Sarah Blackwood—it’s easy to see why Walk Off the Earth are so easy to like. Their soft-spoken, genuine humility co-exists comfort-ably with the confident vision and talent they bring to their music.

So how did all this happen? Marshall says that the band has been making music for six years. In that time, they’ve grown a healthy following of Youtube subscribers. Like other innovative artists of late, Walk Off the Earth used social media and Youtube to propel them into the spotlight. Member Gianni Luminati conceptualized the five people on one guitar cover of Gotye’s Somebody That I Used To Know. It took fourteen hours and over thirty takes to record the video in Gianni’s Burlington kitchen. Sarah Blackwood says they had all but given up when they recorded the version that turned out to be “the one”. They even recorded three or four more takes before going back and listening to the version that was eventually broadcasted.

The video upload is dated January 5, 2012 on Youtube. In less than a month after posting their video, Walk Off the Earth has performed on Ellen, and is now signed by Columbia Records. “Things are going so fast, we don’t realize what we’re doing. We do it, and then afterwards we look back and think...we just did Ellen!” Marshall’s enthusiasm is punctuated by the thoughtful pauses between his words as he goes over the events of the last few weeks. But most striking about our conversation is the profound respect the band members have for one another. Their cooperative spirit is embodied in the video that led Walk Off the Earth to international fame. The lyrics, the composition, the music in the recording studio and on stage are at all times collaborative. There is no room for heavy-headed egos. Everyone remains open-minded and everyone works towards the goal of achieving the best song possible. Their cohesion as a unit is evident. Tired of the same old boring birthday parties? Looking for a fun outing for a group of friends? Milton’s Epic Lazer Tag is determined to provide something different, exciting and definitely epic.

“We always had to go outside Milton for this kind of experience,” says owner Marco Antonio Jativa. “I finally just decided it was time to bring laser tag to Milton, and the response has been wonderful.”

Opening in July 2011, the business has a thriving birthday party clientele, hosting parties for children ages six and up. But even adults love the game, and often partake in Marco’s tournaments.

The space is large, clean and modern, with four party rooms, a disco ball, four-person air hockey tables — the first in Canada —, Wi-Fi, video games and a snack bar. In short, something for everyone, even parents who are waiting for their children to finish up. The laser tag area itself is set up as a maze with neon lights, music and even fog cover.

Epic Lazer Tag has nine employees — all trained in CPR,

and excellent with children — and Marco was determined to make the business a true local one, using all local merchants in the original construction.

With two children of his own, Marco understands the importance of making his business as kid-friendly as possible. In fact, it was his older son who first suggested opening a laser tag business in town, and Marco never looked back.

“Wherever we travel, if there is a restaurant that

features chicken pot pie, we’re all over it. Let’s taste

it, let’s see how it compares to ours. I still come home

to ours and say it is the best,” says Barb. Their family

recipes for chicken and beef pot pie are passed down

from Barb’s grandmother. The beef pot pie begins with

beef tenderloin braised in red wine as the foundation for

this fine recipe. These gourmet pies are complemented

by the most delicate, delectable flaky pastry imaginable.

Catering and their contributions to recipes are a valued

In staying with the current wishes and needs of cus-

tomers, Barb and Doug source out the freshest local

ingredients as well as local seasonal produce. Each pie

is made lovingly; chock full of fresh vegetables, locally-

sourced meats, and a harmonious blend of herbs and

flavours (herbs grown in their kitchen). The pies can

also be made with gluten-free crust. Diverse vegetar-

ian recipes are a focus this year, and Barb and Doug

have researched the best vegetarian recipes to bring to

their pot pie dishes. They even spent a whole weekend

at their cottage doing nothing but cooking vegetarian

If your tastes are more eclectic, there are pies for you too. The

contemporary curry pot pie is a marvel of creamy curry flavour in

an otherwise traditional chicken pot pie. Their renowned tourtiere

(a traditional Quebecois meat pie) is another recipe inherited, and it

is now a regular offering due to its popularity during the Christmas

holidays. Barb says tourtiere has become a big hit for corporate

luncheons throughout the year. Barb talks about tourtiere as one

of those recipes that changes from family to family. She and Doug

like it with ketchup, some people like it with chow chow—a sweet

tomato and onion chutney—and they share anecdotes about some

families pouring maple syrup over their meat pie. Where do the

anecdotes come from? Their customers turned friends, their staff

whom they regard as family and the many local farmers and

suppliers they’ve cultivated bonds with over their many years of

catering and event planning in Milton.

Doug says that two years ago when they brought their first pies to

the Milton’s Farmer’s Market, they sold over fifty within two hours.

Now people come looking for them at the farmer’s markets in Mil-

ton and Aberfoyle. Today their comfort food offerings have evolved

“Never give up, try again,” has been James D. Scott’s mantra since he was five years old. He has been training, playing, writing, learning and having fun with the goal of chasing and catching his dreams. In the meantime, he hopes he can develop his own legacy of inspiring, motivating and educating kids and adults to be the best they can be.

Now, at age 10, James’ new book, Finding the Champion in You, is a community project in collaboration with other kids, teens, parents, professionals, educators, authors, and business owners. For years now, the media has been consistently

educating us about the need to supplement our diets

with more vitamins, minerals, and especially

ANTIOXIDANTS. So it’s safe to assume that

nowadays many people are aware of what

antioxidants are, and are aware of what the benefits

are of having more of them in our diets.

Recently what is becoming more prevalent is talk of

the ORAC scores of antioxidants, foods with anti

oxidative properties and supplements. The ORAC

(Oxygen Radical Absorbance Capacity) unit, ORAC

value, or “ORAC score” is a method of measur-

ing the antioxidant capacity of different foods and

supplements. Scientists believe that foods higher on

the ORAC scale are more readily absorbed and will

more effectively neutralize free radicals. Does that

mean that taking a supplement with a higher ORAC

score or eating foods that have a higher ORAC score

requires eating or ingesting less of it and experience

the benefits much quicker?

From inception of this procedure, some information

points to it being first developed by US scientists at

the National Institute of Aging in the National

Institutes of Health in Maryland. Other reports

indicate that the USDA Human Nutrition Research

Centre first developed the method for measuring

ORAC scores of foods and supplements in 1992.

So, maybe it’s not important to know who actually

developed the method to measure the ORAC of

substances. What you should know is that this

procedure is increasingly being used in manufacturing

facilities’ labs and ORAC scores in nutritional supplements are

being used by manufacturers to gain consumers’ attention in

marketing their products. The question is can this

information be trusted? Should we let this information

carry more weight in our buying decisions? Does it

make more sense to choose to eat more blueberries over

strawberries because the former has a higher ORAC

value? Should we take supplement “X” over “Y”

because of its ORAC score?

Currently, there isn’t an industry standard by

which the ORAC measuring procedure must

comply with for determining the oxygen

radical absorbance capacity (ORAC)

scores of foods and supplements.

Factors that effect results are: 1) the

growing conditions of fruits and vegetables

can yield different ORAC values; 2) cooking

or freezing foods can affect an ORAC score; and

3) its absorption capacity, which is the ultimate goal

– can effectively nullify an ORAC score.

So it may be difficult to know exactly how nutritional supplements

are processed and know how foods were grown. ORAC scores

touted by manufacturers and suppliers in their marketing ads will

make them sound really good, and better than their competitors. But

does that make those products more effective, and better for us?

No single antioxidant protects all body systems. Each has its own

protective properties for specific body parts or functions.

Look for products that combine two or more of the vital nutrients

listed above. Not only will you reap more benefits by taking a

variety of antioxidants in one supplement, but it’s also

more convenient than taking several different products

separately.

The Canada Food Guide’s recommended daily

allowance of fruits and veggies is between 7 –

10 servings for adults. Some of the best sources

for antioxidants are from phytonutrients (plant

chemicals) found in plants foods and not just from

supplements. Dark leafy greens and brightly coloured

plant foods have higher ORAC scores.

With numerous impressive accolades

to his credit, Saskatchewan-born pro

golfer Graham DeLaet is a true Cana-

dian success story. He first picked up a

club at the tender age of three and hasn’t

looked back since. Raised in Weyburn

and Moose Jaw, DeLaet attended Boise

State University, racking up 10 collegiate

tournaments. He was on the Canadian

development golf team, organized by

the RCGA from 2005 to 2006, and fin-

ished second as an amateur in the 2005

Edmonton Open. He started playing reg-

ularly with his parents at the age of sev-

en, then at the Weyburn Golf Club by 13.

You could say he truly loves the game.

“I began my professional career on the

Canadian Tour, where early on it was a

struggle,” says DeLaet. “You get caught

up in playing to make the cut, as opposed

to winning.”

He turned things around, however, with a win in Montreal and his career

began to take off from there. In 2009 Graham played on six different tours,

earning money on each one: PGA Tour, Nationwide Tour, Gateway Tour,

Canadian Tour, Sunshine Tour, and European Tour, the highlight being

earning his PGA Tour card later that year at Q School.

Other career highlights include winning Rookie of the Year honours on the

Canadian Tour for 2007. DeLaet has won three events on the Canadian Tour:

the 2008 Desjardins Montreal Open, the 2009 ATB Financial Classic and

the 2009 Canadian Tour Players Cup. Plus, he was the Player of the Year for

2009 on the Canadian Tour.

In the fall of 2009, DeLaet began his qualifying run for the PGA Tour at the

second of three stages, and qualified through his 72-hole event, advancing to

the six-round PGA Tour Qualifying Tournament, where the top 25 finishers would obtain their 2010 PGA Tour cards. He finished 18th and was a PGA Tour rookie for the 2010 season. Sponsors, of course, always play in important role in the sporting career, and DeLaet is very grateful to Titleist, RBC, BMW, Sligo and Oakley, specifically. “Individually and collectively they play an integral role in my career,” he says. “They function as part of the Graham DeLaet team. I have been with Titleist my entire pro career and they have been critical to my success. In a game where equipment matters so much, I’m very thankful to have Titleist in my corner. Sligo, a great, young Canadian company, is a new partner, and they supply me with my on course apparel, an amazing product with a style and feel that suits me perfectly. RBC, BMW and Oakley all very special as well. So, proud to be a part of the RBC golf program. They do so much for golf in Canada and I’m very appreciative of their support. BMW also a great partner, and I’m proud to be associated with such a strong global brand.” DeLaet’s sports representation is also very important to him. “I hit it off with everyone at Landmark Sport Group right off the bat,” he says. “They showed real interest in working with me and I liked their enthusiasm. With Landmark, it’s not just a professional relationship, but I have also developed friendships with my agents.” And, of course, no golfer is complete with his caddie, and in DeLaet’s case, Basil van Rooyen. He came highly recommended with the credentials to back it up, beginning his career in 1984 caddying in Europe. In 1989 he moved to the United States and worked on several different Tours, including the South Africa, Asia and PGA Tours. Over the span of his career he has caddied for more than 70 players, including Gary Player, Ernie Els, Retief Goosen, Frank Nobilo, David Frost, John Daly and now, Graham DeLaet. He has 40 career wins under his belt and he hopes to add many more with Graham.

“We have a terrific on-course chemistry,” says DeLaet. “A good caddie is invaluable to the success of a pro golfer. There are so many great caddies out there, but the key is finding the caddie that understands the golfer and his game.” Through his already impressive career, DeLaet remains appreciative and supportive of his ties with his home country.

Alsatian Leek Tart (Quiche)

Ingredients:

1 Large Pie Shell 9”

1 bunch Leeks (washed and julienned)

1 large Spanish Onion (julienned)

1 table spoon Chopped Fresh Garlic

6 Whole Eggs

500ml Cream 35%

Salt

Pepper

Directions:

Preheat your oven to 350F for 15 minutes.

Blind bake the pie shell until light golden brown

colour with no ingredients in it. To blind bake

properly, take a piece of parchment paper and cut

it to a round circle the size of the pie crust. Lay

inside the shell and cover with a layer of dried

navy beans. This helps keep the perfect shape of

the shell while it is baking. Allow to cool.

While you are waiting for the pie crust to bake,

cut the fresh leeks into julienne (size of a wooden

match stick). Wash twice in running cold water

to get rid of all the sand, then strain out the water.

Cut your onions into julienne the same size as the

leeks. In a wok or frying pan sauté the leeks,

onions and garlic until lightly cooked with no

browning or colour. Place the sautéed leek mixture

in the pie shell. Pie shell should be almost full to

the top with the leek mixture. It will take about 3-4

leeks (1 large bunch) to do this, and you can use

the whole leek including the green part.

Crack the six eggs in a bowl and add the 35% Cream. Add a tea spoon of salt and 2 pinches of pepper.

Whisk until the mixture is smooth. Put your pie shell, full of the leek mixture on a baking sheet close to

your oven. Pour in the egg mixture so that it is almost to the top of the pie shell. Carefully place the quiche

in the oven, making sure not to spill out any egg mixture.

Bake the quiche, at 350F, for about 20-30 minutes. You will know that it is done when the egg mixture

starts to rise out of the pie shell by about 1” just like a balloon. Remove from the oven and allow to cool for

5 minutes, then cut and serve.

To kick it up a notch you may grade up some of your favourite cheese and sprinkle it on top after the quiche

has been in the oven for about 15-20 minutes.

I discovered this dish while on a tour of the Alsatian city of Strassbourgh in eastern France. I hope you

enjoy it as much as I did and like me discover that each region of France has it’s own quiche recipies.

Everywhere we turn, we notice an increased emphasis on keeping in good health through regular exercise, eating right and maintaining an overall healthy and active lifestyle. This is especially true due to a recent awareness regarding the increasing percentage of overweight and obese children today.

We can definitely see the importance of helping our children to develop healthy habits earlier on by giving them the right tools. This involves making the right food choices as well as implementing regular exercise into a daily routine. There are so many great ways to stay healthy besides organized sports activities. Here at Cirque du Play we try to make fitness as fun as possible. At our facility children are extremely active without even knowing that they are exercising. This allows them to associate exercise with fun rather than work.

One of the tools used and incorporated in part of a healthy exercise routine, and one that is often overlooked, especially in children, is strength training (also known as resistance training). There is an increasing amount of research being done on the importance and, more importantly, the benefits of using resist-ance training machines to safely build strength and muscles in children.

According to the National Academy of Sports Medicine, “it has been shown through research that resistance training cannot only help reduce the

growing problem of childhood obesity, but it can also help to decrease the chance of injury in children who become involved with sports. By teaching youth the importance and advantages of health and fitness at early ages, it is possible to have a positive impact on the obesity epidemic which is sweeping across the world. Resistance training in youth can also improve self esteem and social aspects of life which can contribute to better focus in education.”

The Canadian Pediatric society has also stated that resistance training is a tool they use with their patients to help improve the movement in their pediatric patients that suffer from cystic fibrosis, cerebral palsy as well as burn victims.

“Increase in children’s muscular strength has been attributed primarily to neurological adaptations due to the disproportionately higher increase in muscle strength in muscle size,” according to Canadian Pediatric.

We at Cirque du Play also firmly believe that if you start to develop good fitness habits in children early on and make exercise fun for them, it becomes something they enjoy and look forward to rather than a chore to do when they get older.

You’ve seen them before, either marching in a local parade or at the larger Toronto Santa Claus Parade, performing at a hometown event or their Boosters flipping burgers at Burlington’s annual RibFest. Their accolades are numerous and impressive, their members talented, dedicated and a credit to the community. The Burlington Teen Tour Band, touted as Canada’s Musical Ambassadors since 1947, continues to make an impression at esteemed events in various countries around the world. The marching band, comprised of youth between 13 and 21, has travelled the world, attending events ranging from D-Day Commemorations in Normandy to the Pasadena Rose Bowl, the Calgary Stampede, Japan, Myrtle Beach, Niagara-On-the-Lake, and they recently returned from a prestigious engagement in Hawaii, the only non-

American band of 41 invited to march and play at the 70th anniversary of the attack on Pearl Harbour.

“The Band is well-known and much-loved around the world,” says Wayne Brown, a member of the Board of Directors for the Band Boosters, acting as a corporate liaison who encourages local businesses to become involved in the funding of the band’s numerous and exciting trips around the world. There are more than 50 local businesses involved in anything from cash donations to providing items for silent auctions, but more businesses are always needed and welcome. “Band members have to learn to march properly, but instrument knowledge is not essential, and music lessons are provided if needed,” says Wayne, whose own daughter is a member of the Colour Guard.

There are 160 musicians in the band at the moment, but more players are needed, particularly in the lower bass and Colour Guard. The band makes a major trip every other year; in 2013 they will visit Dublin, Ireland. This summer they visit Tennessee for a week, beginning with a rousing midnight July 4th parade. “They always do well at competitions and events,” says Wayne, but trophies aren’t everything. “Education is highly stressed in the band. We educate them about the places they visit, but we also expect them to maintain good grades in school.” The band practices several times a week, both in its entirety and in individual practices. Rob Bennett is Managing Director and Bill Hughes is Director of Music. “They join the Band as citizens of Burlington,” says Wayne. “But they leave as citizens of the world.”

We have both,” says Tom. “We’ve more than doubled in size recently. It’s a very exciting time. Last year alone they raised $8,800 for the Milton District Hospital Foundation with their first annual Get a Move On 5km run/walk. Exploring the unique challengesfacing women investors

According to a survey about women’s purchasing power, women control household purchases five times more than their partners do and are involved in nearly 90 per cent of household purchasing decisions. They drive purchase timing, do more pre-purchase research, make more decisions about brands and then, more times than not, make the actual purchase.1

However, some women are reluctant to become more involved in making financial planning decisions. When it comes to investing, 20 per cent would prefer to let their partner take charge and 40 per cent would rather leave things to their advisor.1 Greater involvement in decision-making is critical because women face a number of challenges men don’t.

The wage gapMore women than men in the workforce hold a university degree, 2 and there’s no question women have greater access to high-paying professions than they did even a couple of decades ago. Nevertheless, women who work full-time and year round continue to earn about $0.83 for every dollar men earn.

The gap is narrowing, but it is nonetheless, still a significant gap.3 Earning less means less opportunity to save for retirement and at least partly explains why single women age 65 and older are managing on an average income of $29,500, compared to single men age 65 or older who enjoy an average income of $37,500.4

CaregivingWomen spend an average of almost five hours a day on “unpaid work,” including housework and caring for children – that’s over one hour more than men. The difference in childcare responsibilities is particularly dramatic. Women who have children under age four spend an average of over six hours caring for them, compared to over three hours for men.5

As both women and men enter the “sandwich generation,” when they must often take on caregiving duties for parents as well, it’s likely the burden will fall more heavily on women. The demands of raising children and assisting aging parents may mean that women must take more time off work than men – which further reduces their lifetime income and chance to buildretirement savings.

LongevityA woman born between 2000 and 2002 has a life expectancy at birth of 82 years. That’s a full five years more than a man born in the same years. The gap is slightly wider if you were born between 1960 and 1962, when life expectancy at birth was 74 for a woman and 68 for a man.6

Greater longevity means that women may need to sustain an income in post-retirement for several more years than men. Compounded by the wage gap and caregiving issues noted above, women’s pension plans are usually significantly less than their spouse’s, if they have one at all. Greater longevity also means that many widowed women may not have the benefit of their husband’s pension to help support them. Furthermore, if they have a low tolerance for investment risk, women may not invest in asset classes that provide sufficient growth to exceed inflation and enable them to maintain their life-style – for life.

Concerned about today, not tomorrow

According to the same survey, despite the challenges that may lurk down the road, many women are more concerned about the financial needs of today than laying the groundwork for a financially secure tomorrow. When asked what their biggest financial concern was at the moment, 22 per cent said paying down credit card debt and 15 per cent said paying for current necessities. Investing in their RRSP came in well down the list, at just three per cent.1

Interestingly, women tend to be much more confident when it comes to making banking decisions – the choices that affect their day-to-day, immediate lives – than they are at making investment or insurance decisions. The same survey found that 61 per cent of women say they feel educated enough to make their own banking decisions, compared to 21 per cent and 40 per cent who say the same about investment and insurance decisions, respectively.1

Probably because they are uncertain about which long-term decisions are right for them, 63 per cent are very or somewhat worried that they will not have enough money saved for their retirement1 – and, as we’ve already seen, women need to plan well in advance to compensate for the wage gap, their longevity and the caregiving responsibilities that takes them away from paid work.
