This issue, we’re keyed up with the exploration of another living concept and have delved into the world of yachts for those who enjoy the tranquil sea-faring life. What we found is a variety of interiors, from classical to ultra modern, all built using high quality and durable materials, made to last.
We also discovered that yacht interior design is substantially diverse to that of land homes, particularly in the way of balance, choice of materials and the essential clever use of space.
This issue we feature three different types of yachts, all varied in design styles. We also showcase a penthouse apartment, which was created through nautical inspiration, with ideas taken from yachts that make it evident that these concepts can easily be translated into land homes.
True to good yachting design, the layout of the first yacht featured on page 023 is a spectacular balance of hardwearing materials and design that maximises space.
The second yacht, the renowned and majestic Lady G, is a classic 60-foot vessel that has been lovingly refurbished over the years, transforming it into an icon of its sea-faring past, which slots neatly into the future. (Page 030)
The Lush Cruiser on page 038 has ultra modern and versatile features - a style that can so easily inspire today’s homes with so many inevitably downsizing.

TRUE TO GOOD YACHTING INTERIOR DESIGN, THIS FAST CRUISING 100-FOOT MOTOR YACHT’S LAYOUT IS A SPECTACULAR BALANCE OF TEAK, A VARIETY OF OTHER HARDWEARING WOODS, WOOL, SOFT CARPETING AND QUALITY LEATHER.
The main deck hosts a very spacious saloon, or living area, with a dividing island
that holds a rising divider, equipped with a plasma TV that ascents by remote control.
This divides the space and also serves as an entertainment area - a very good idea
when trying to hide a television or to divide two areas some of the time and to open
the space up for other occasions.
On the same deck there is a day head (guest toilet), which consists of a toilet and
sink. A wet bar on this deck, inclusive of the pantry, which includes a fridge and a
counter allows the crew to entertain guests without having to go down to the galley
(kitchen).
The deck below holds two VIP guest cabins and three regular guest cabins, the
master ensuite cabin and the gymnasium on one side. The other side of the deck
holds the galley, the crew cabins and the laundry room, which is hidden among the
crew cabins.

The top deck includes the Jacuzzi, a sun deck and bar. At the stern of the boat,
the lower deck includes a lazarette (garage), which accommodates 2 jet skis, a
speedboat and diving equipment, as well as the engine room.
Like a lot of modern homes with limited space, most new motor yachts use
modernly designed equipment so that all items unobtrusively fit in, utilising every
inch of space available, while also maximising the design features. This includes
made to measure, built-in furniture - a style that is becoming more and more
mandatory in today’s homes due to lack of extra space.
The design includes clever tactics, such as the gym being sandwiched between the
guest cabins and galley, which the guests never enter. The gym has two separate
entrances, which means that when guests are staying on board, the space functions
as a gym. When there are no guests staying on board, the crew can use the gym as
a storage room or double bedroom.
What the eye cannot see is that various valuable items are stowed in various
storage compartments when the yacht is moving or when guests are not on board.
In this sense, interior design for yachts is not as straight forward as in land homes.
Items should be heavy, so that they won’t tipple or slide when the boat is moored
or motoring. Small knickknacks or collecting of items is not really an option. This
means that yacht design, out of necessity, tends to be an uncluttered, minimalist
look. A lot of it is about storage and maximising space. As time goes by, a land home
will get cluttered. With yachts, it’s simply not an option.

“When I first bought her she was the epitome of 60s Scandinavian style,
so I wanted to move away from that to make her more comfortable
and contemporary to fit my modern lifestyle,” explains the yacht’s one
careful owner. “She is almost one hundred percent original, except for
her electronics – the hull, deck and mast have been with her since the
beginning but have been upgraded and maintained over the years. With a
boat of this kind you either keep her maintained to a very high standard or
you sell her, there’s no middle ground.”
Both the interior and exterior of the yacht were completely overhauled to
suit the owner’s luxury lifestyle. Outdated equipment, such as a gas stove
and manual toilet were replaced by an electric hob and a push button
lavatory; air-conditioning and the latest sailing technology were added too.
The galley was modernised with mirrored cabinets and all the creature
comforts of home.

Inside she retains her classic charm, with pristine wooden features that
have been carefully maintained and expertly varnished. The result is a
contemporary feel with a traditional twist, perfectly suited to her owner.
“I love the fact that she brings a lot of history with her and I embrace
that. One of my favourite interior aspects is the exposed mahogany hull
and natural boat structure. This is unusual, as on most boats this
would be covered by fabric or panelling, but hers add so much character
to the saloon.”
Unlike with many classic yachts, the boat’s layout is expansive and
perfectly suited for entertaining.
“Whereas most yachts would have another cabin squeezed in, she has a
larger saloon so several people can enjoy the space at one time and not
feel caged in. She’s very comfortable, with two large, leather seating and
dining areas and a good-sized galley. I have spent a lot of time here over
the years and never found her size to be restrictive.”
Wood is the most defining feature of both the interior and exterior of the
boat. The exterior, including the Burma-teak deck, have been revamped
and an attractive beige canopy was installed to protect both the boat and
those sunbathing on her.

“Yachting is a passion of mine so I really enjoy the time I spend on her
and have invested a lot of energy into her upkeep. I used to have a motor
boat, but I have found sailing to be more relaxing and when she’s flying
through the sea at 15 to 20 knots, it’s wonderful. She’s the sort of boat that
you could live on comfortably, but she does require a crew when I take
her out for a long-haul trip, which can be one of the challenges.

The Lush CruiserTHIS 60 FOOT MOTOR YACHT HAS ULTRA MODERN VERSATILE FEATURES - A STYLE THAT CAN SO EASILY INSPIRE TODAY'S HOMES, AS SO MANY ARE INEVITABLY DOWNSIZING.
Generally, materials used on yachts are quite expensive, due to the
reality that they must be hard-wearing, as well as water proof. This is
why materials such as teak (due to its quality, it needs less varnish, which
also makes it look more modern), quality fitted carpeting (used as sound
proofing for the engines below) and genuine leather (cooler and easier to
clean) were used for the interior of this yacht. The overall result is a lush,
luxurious look and feel.
Clever space-illusion design maneuvers were used throughout. For
instance, the bar fridge in the living area is in the form of a drawer
avoiding the unattractive sight of a fridge in the room, as well as saving
space.

The triple feature main entrance door dividing the outside of
the boat from the saloon turns into a top flapped window,
making the interior and exterior blend into one, giving the
illusion of more space, air and easy conversation of the
space. The glass table at the back of the boat can be folded
and hung below the window when closed. The feature
allows for space saving, as well as the advantage of having a
stylish glass dining table instead of a simple plastic one.
The galley is neatly hidden away below, yet retains a
relationship to the rest of the saloon through a small step
case. The galley has all the amenities of a modern land
home, inclusive of a dishwasher, full sized fridge, washing
machine, tumble dryer, microwave and full sized oven.
With an elegantly relaxed neutral colour scheme, the main
bedroom holds a unique vanity table, which swivels to avoid
movable clutter, as well as saving space when needed.

to the contemporary style, but also aids the illusion of more space.
Although limited through necessity, yacht design is slightly more complicated and
restricted. However, this yacht is evidence that stylish and smart design can be achieved,
creating an overall luxuriously contemporary look and feel.

Invariably with a flair for design, Sarah Zammit was brought up on the water, always comparing land
homes to yacht homes, noticing the differences in the two and wondering why there were certain items
in one and not the other.
Sarah. “I always find myself seeking timeless lines. I’m fascinated with finding things that are classic,
things that won’t age. I’m sure this came from life aboard a yacht - it’s out of necessity that the materials
used on top yachts won’t age or fall apart.”
Needless to say, yachts have always inspired Sarah. Before taking on her masters in design in the US and
then later at The Florence Design Academy in Italy, the young designer lived in Sydney.
“I was always so amused by the clean, uncluttered fast life. I found that the design mentality in Australia
was way ahead of Europe and I loved the way they lived - with clean, open spaces, making the indoors
and out as one.”
So when it came to designing her own home, Sarah started from scratch on a blank plan. This was her
vision: clean, uncluttered and open - just like aboard a yacht.
Her design dream was achieved; the apartment is unpretentious with seamlessly continuous lines, clean
with everything having a permanent place and above all - classic with a contemporary flair.

Her translation of yacht inspiration in the penthouse is endless. She created the split-levels to give more of a house effect than an apartment one, to break up the
spaces and give a different balance between living and sleeping quarters. This gives the sleeping areas that “down below feeling”, clearly nostalgic of yachts, which
causes one to step down into a bedroom, creating a certain elegance.

The kitchen, which also overlooks the terrace,
holds extensive fitted glass, coming to a peak
with the frameless corner window, which allows
uninterrupted views from the inside and clear views
from the outside into the kitchen.
Sarah. “This glass corner was an absolute nightmare
to do because it’s not a common request. I insisted
on it because I wanted the least amount of walls
in order to gain as much of the outside as possible.
In the evening, the floor is lit from the exterior to
enhance the feature and it’s gorgeous. It was worth
the hassle.”
There are no top cupboards in the kitchen, “because
when you enter the apartment, besides the view, the
kitchen is the first thing you see and I wanted the eye
to go elsewhere by making the cupboard a glossy
white, camouflaging them with the walls.” Thus, a
not so obvious kitchen area was created.
Instead, the kitchen storage was organised in large
brown lucido and wall-fitted cupboards at the back
wall. The colour of the panels creates a two-toned
kitchen so that when viewed from the terrace, the
contrast creates interest and depth.
More signs of Sarah’s inspiration: the sink is made of
stainless steel, sunk and round, clearly reminiscent of
one you would find in a galley.
The external terrace colour scheme is a combination
of white and bluish grey, which stops the extensive
use of white and creates a contrast, making it more
striking. The interior colour scheme does the same
with bright white ceiling and walls against the dark
of the rough smoked oak flooring.

“I like the rough materials because it makes quality materials feel more contemporary. In the case of the flooring, the rough oak shows the graining and space between the planking - just like decking. The white against the dark wood creates a timeless and elegantly colonial feel.”
The colonial look was inspired by Sarah’s time in Thailand, where teak is used often, without ornate settings. “The Thai style is very straight forward with clean and simple lines. A lot of my design is orientated around maximising space and creating an uncluttered look. This takes smart design, which is not always so easy to relate to workers. As a result, a lot of mistakes were made. The real challenge was then to work around these errors.”
The rounded walls could also be interpreted as yacht-inspired, though above all, it’s more of a distinct design trait of Sarah’s. Behind the main curved wall leading to the sleeping area sits a fitted wardrobe - a clever way of extending a design feature combined with maximising space.
There are clear double glazed glass gaps just below ceiling level in one wall of almost each room, which gives a feeling of interconnection and lots of natural light.
The custom made teak doors on the terrace were created from a mixture of Thai and yachting inspiration. “It took so long for the carpenters to get this right. They couldn’t grasp my style of chunky and clean, classic and modern. It took time to achieve, but they got it right in the end and they turned out exactly as I had imagined them.”
Sarah Zammit’s penthouse is certainly a case of the space fitting the lifestyle and personality of its owner. “This is my philosophy when designing for clients - there is no point in trying to design something in a way that suits me. It has to be fitting for its owner. One shouldn’t be able to look at my work and immediately know that it’s mine - this would mean that it’s not customised for the person living in it. Further to this, the design chosen certainly has to work with what the property itself dictates.”

Whether you choose a duvet that’s natural or synthetic filled, make sure it provides the level of warmth you need.
A natural filled duvet is filled with either feathers or down, or a combination of the two. Duck and goose down are the most commonly used and give the duvet a light drape and soft, luxurious feel. Goose down is the most luxurious of all and as it is more voluminous than duck down, it adds more fullness to a duvet, being lighter. New to the scene are silk-filled duvets. Thin fibres of silk are layered on top of each other to create a breathable duvet with no ‘cold spots’. Natural filled duvets weigh less and last longer, but do require professional laundering.
Synthetic filled duvets really are a must if you are allergic to feathers. They are also a practical choice, as they can be cleaned easily in a washing machine. Top quality synthetic duvets are filled with spiral hollow polyester fibres that mimic the feel of natural fillings, adding loft and warmth without too much weight.
Duvets are graded according to a tog rating, which indicates the level of warmth they will provide: the higher the tog, the warmer the duvet. Standard tog ratings for duvets used in winter range from 10·5 to 13·5 tog, with much lighter summer duvets available that have a tog rating of around 4·5. Also available are combination duvets, which consist of two separate duvets, one of 4·5 and one of 9·0, that can be used separately in the summer and then joined together to form one cosy duvet for the winter months.
When choosing a set of sheets, the most important place to start is the thread count. The thread count tells you the number of threads that are in one square inch of fabric. To get the softest and most durable sheet, aim for the higher end of the thread count spectrum (200+).
Secondly important is the type of fabric. While poly-cotton blends do not require as much ironing as 100% natural fibered sheets, ironing can usually be avoided by placing the sheets directly on the bed as soon as they are taken from the dryer. Keeping this in mind, know that there are many different grades of cottons. Their qualities are measured upon the length of their staple. Staple refers to the length that a particular piece of cotton can be pulled into a single thread. The longer the staple, the more durable and luxurious the cotton.
The best type of cotton is Egyptian, which will provide an extremely soft and luxurious feel to the fabric.
Poly-cotton sheets will tend not to breathe or absorb moisture as well as natural cotton. You will tend to save money if purchasing poly-cotton sheets, as their materials are less expensive to produce.

The type of weave is also an important factor. Sateen (not satin) is stitched with four threads over and one thread under. Most of the threads are on the surface so it is extremely soft. The down-side to sateen is that since there are more threads exposed to the surface, it won’t be as durable as other types of fabrics.
There is also a pinpoint weave. A little more durable than a sateen weave, this weave consists of two threads over and one under. There are not as many threads placed on the surface, so the result is usually not as soft as a true sateen weave.
Finally, you should know the depth of your mattress before purchasing a set of sheets. The pocket size is a measure of the thickness of the mattress that the sheets were made for. You should always purchase a set that has a pocket within 3-5 inches of your mattress depth to avoid slippage of the corners when too small and excess material in the middle of the bed when too large.

Changing your room to suit the season needn’t be expensive or a major undertaking. Instead of varying the frameworks of your room – such as flooring or wall colours – focus on the accessories. You’ll be surprised by what a difference they can make.”
“To get the desired effect for winter you need to play to the senses and indulge a little. Whereas summer invites crisp, clean textures and colours, winter needs that cosy glow. Lamps can help you achieve this.
“People tend to put their lights on the ceiling and forget about them, but to create soft and inviting lighting craft pockets of light are needed instead of
pooling all the light into the centre of the room. Creating different corners of light will make those corners more inviting.
“A good way of achieving this is with floor or table lamps and it’s at this point that you can opt to alternate between a summer shade and a winter shade, incorporating more wintry colours to your scheme via the latter. If your room is quite plain, shades are also a great way of introducing patterns, whereas if your room is quite busy you can opt for plain, simpler shades in a matching hue. You can also keep your bases, which makes it nicely cost effective.
“You can also choose to match your shades to your cushions, the covers of which can be changed quickly and cheaply. Opt for softer, lower watt light bulbs that will cast a much moodier shadow on the room.
“When setting the tone for winter try opulent colours that make your room feel inviting: a rich taupe will blend well with cream and brown schemes, creating a comfortable contrast. Amethyst and lime is a combination that’s currently in vogue; this works well with silver schemes.
“If your room is minimalist and plain, try adding sultry blacks and golds for a sleek and contemporary look.”

We all know the benefits plants bring. Psychologically they promise to lift spirits, decrease stress and create a more natural environment, plus they look great and add colour. Thus it makes perfect sense to want to recreate as many of these pluses as possible in one of the most relaxing spots imaginable: a yacht.
“It’s very rare that boat owners want to create an actual, full-blown garden on their yachts, mostly because space is always at a premium,” explained Herman Scifo of Calamatta Landscapes Ltd. “But the need for plants and greenery does arise and we are currently working on creating green spaces on a number of super yachts.
“Creating a ‘green area’ on a boat is a good idea, as it helps to further enhance the space around you, but it does need to be planned properly as there are limitations. It’s important to remember that any plant on a boat will be especially exposed to the elements, such as rain, wind and sea water spray, and therefore they need to be strong and particularly durable.”
Caring for your plants aboard a boat takes extra care.
“Even though it’s hard to stop altogether, try to avoid contact between your plants and salt water, as it extensively damages the leaves and could stint, or even kill them. Other than that, they need to be looked after in the same way as you would a potted plant in your home or garden. Just ensure that they get enough fresh water, especially if they are often exposed to the sun.”
The sort of plants that thrive on yachts are the same sort that do well in our Mediterranean climate and planning greenery for a boat is similar to creating a lush spot on a terrace or veranda.

“An indoor garden can be just as appealing as an outdoor one. Indoor plants are easier because you can approach them in the same way that you look after indoor plants at home, but you do need to ensure that they don’t get too hot, as temperatures tend to soar inside boats. Opt for colourful leaves as a more manageable option than flowers. Orchids are a great choice for boats, as they are quite durable and can last for several weeks creating the perfect colour contrast and the desired effect.”

SUNDAY LUNCHRoasted Free-Range Chicken, Sweet Corn Stuffing, Chickpea Mash & Tarragon JusThis chicken is served in two preparations. We recommend that the stuffing that includes sweet corn, shallots and pancetta is prepared one day in advance, thinly rolled and served like a mat underneath the chicken breast. Meanwhile the chicken breast should be prepared at least three hours in advance as it takes 80 minutes to slow cook this before adding the final touches.

1.2kg free-range chicken breast on the bone
4 stalks parsley
2 wedges lemon
2 sprig thyme
Chicken Jus
1kg chicken wings (chopped small)
250g sliced shallots
500g chopped tomatoes

800g chicken stock
150g red wine
100g white wine vinegar
10g tarragon
Chickpea Puree
200g dried chick peas

1 tbsp chopped fresh parsley

BEST WINE ACCOMPANIMENT: 2007 MEDINA SYRAH, CARIGNAN, GRENACHE D.O.K. MALTA.
Looking at this dish it seemed natural to opt for a full flavoured white wine but then I realised it was to be accompanied by a chicken jus that is based on a beef stock with red wine and tomatoes, so I went with a red. Because of the other ingredients in this recipe such as sweet corn, asparagus, chickpeas and lemon, it would need to be a light bodied, fruity red with little or no tannins, so as not to ‘clash’ with their flavours. The 2007 Medina Syrah, Carignan Grenache is just the wine for the job.
Step 1 – The ChickenPre-heat the oven to the highest possible temperature. Remove the chicken legs but leave the breast on the carcase. Roast the breast for 3mins at high temperature, this will sear the chicken from the outside and remove the excess fat. Remove and cool. Add the remaining ingredients to the carcase and refrigerate for 1 hour. Set the oven at the minimum temperature possible (approximately 80 degrees) and cook the chicken for 80 minutes. Set aside and cool. Use a sharp knife to debone the chicken breast.
Step 2 – Chicken JusReduce the jus and stock to 700g. Roast the bones in oil until slightly golden. Add the shallots and butter and cook until a good colour is achieved (do not allow the butter to burn as this will result in a bitter taste). Strain the butter and return the bones to the pan, de glaze with the tomato and vinegar. Ensure that the bottom of the pan is clean. Add the jus and simmer to sauce consistency. Remove from the heat and infuse with the aromats for 5 minutes. Pass through a fine cloth.
Step 3 – Chickpea PureeSoak the chickpeas in cold water for at least 12 hours, changing the water several times. Drain them and place in a pan with the roughly cut onion and pounded garlic. Cover with 1 litre of cold water. Bring to the boil and skim. Reduce the heat and add 2 tbsp of olive oil. Simmer gently for 2 hours until cooked. Drain the remaining liquid. Blend the chickpeas, and then add the remaining ingredients and check the seasoning.
Step 4 – Sweet Corn Stuffing Cook the shallots in the olive oil, than add the corn and the pancetta. Add the crumbs and the parsley and finally add the stock. Adjust the seasoning and roll between two sheets of greaseproof to a thickness of 2mm. Cook in an oven at 180 degrees for 22mins. Freeze when ready. Cut while frozen to the required square size of the plate (ideally 11cm X 11cm). Heat before serving.
Step 5 – VegetablesBlanch the vegetables in salted boiling water bearing in mind that carrots take slightly longer time to cook. The whole process for the baby corn, mange tout and asparagus should take 45 seconds, while the carrots take about 1 minute. The cherry tomato should be grilled.
Step 6 – AssemblingHeat up a pan and add some oil. Sear the chicken breast and add a sprig of thyme, finish it in the oven. Place the stuffing in the middle of the plate. In the top right corner pipe some chick pea and again repeat in the middle. Cut the breast diagonally and lay overlapping on the chick pea puree. Garnish with the vegetables. Finally drizzle the sauce and serve.

The first dominant flavour to strike me was the degree of salt. Aside from the salted cod there is the Parmesan and even the salty seafood flavours of the sea urchin. To counteract that I opted for a crisp, clean, fruity and almost neutral white wine with no quirky aromas or flavours. The Medina Chardonnay is just that: a straightforward, clean, dry white wine with just enough weight and flavour to complement rather than overpower.
Step 1 – Parmesan CrispPreheat the grill to a high temperature. On a baking tray covered with a piece of greaseproof paper scatter a heaped tablespoon of grated parmesan to form an even layer. Grill until the top has evenly turned a golden brown colour. Cool down and transfer to a tray.
Step 2 – Herb OilIn a boiling salted pan, blanch the chervil for 30 seconds, add the parsley and blanch for a further 10 seconds. Cool in iced water. Dry the herbs and blend together with the oil; pass through a sieve. To further enhance this pass the oil through a fine cloth.
Step 3 – Sea Urchin FrothUsing a hand blender, blend the sea urchin together with the skimmed milk. Before serving, gently warm the mixture and blend again to form a frothy texture for the top.
Step 4 – Salted CodSoak a piece of salted cod for around 12 hours, changing the water every 2 hours. Simmer in milk for 1 hour. When cooked, drain the salted cod, cool down and flake into small pieces.
Step 5 – Tomato FondueBlanch and peel the tomatoes. Remove the seeds and place on a paper to dry. Heat the olive oil in a saucepan; add the shallots and garlic and sweat to a golden colour. Roughly cut the tomatoes and add the shallots. Simmer for 2 minutes or until the tomatoes soften. Adjust the seasoning with sugar and salt. Add the coriander, remove from the pan and set aside in a covered container. When the sauce cools to around 45ºc add the soften butter. Cover and refrigerate.
Step 6 – Risotto BaseHeat up some olive oil in a pan. Add the shallots and garlic and sweat until transparent. Add the rice, after adding of the stock. Repeat again, once the stock has been absorbed. The whole process should be repeated a further two times. Always stir the risotto with a wooden spoon. When ready, add the rest of the ingredients, mix well and check the seasoning. For a less creamy risotto omit the mascarpone.
Step 7 – AssemblingWith a large spoon place the risotto in the middle of the plate. Place the fish on top of it. Put the parmesan crisp on top, and add the froth. Drizzle some herb oil.

Sea Urchin Froth200ml skimmed milk
25g sea urchin
TT salt and pepper
Tomato Fondue This sauce can be prepared days in advance
600g ripe tomatoes
1 garlic clove (crushed)
1tbsp banana shallot (diced)
30ml olive oil
1tsp sugar
1tbsp butter
½ tbsp coriander (roughly cut)
sea salt and black pepper
Risotto Base
120g arborio risotto
1 medium shallot (small diced)
1 garlic clove (crushed)
300ml fish stock (prepared with 50ml reduced white wine)
50g prepared cod
35g sliced spring onions
1tbsp parsley (chopped)
10g arame (soaked for 25mins japanese seaweed)
15g grated parmesan
2tbsp tomato fondue
1tbsp mascarpone

BEST WINE ACCOMPANIMENT: 2006 CASELLA MOSCATO
Rich bitter chocolate, Kirsch and Morello cherries all go into this stunning dessert and to accompany it we need a wine that is rich and sweet. Casella Moscato, the great all-round dessert wine, is the obvious choice, especially when it has been nicely chilled. The combination of bitter but creamy chocolate, fruity red berry flavours and cold refreshing Moscato is guaranteed to give you the perfect end to any meal.
Black Forest With a DifferenceIngredients Serves 4
Kirsch Cream500ml milk40g fresh egg yolks 180g sugar24g gelatine leaves [soaked in water]
440g cream150ml kirsch liqueur
Sacher Cake400g almond paste
140g sugar
180 g egg yolks
170g whole eggs
Meringue
110g sugar
240g egg whites
Chocolate Mixture
100g dark chocolate
100g unsalted butter- melt together
110g flour
55g cocoa powder
Cherry Soup
500g morello cherries
120g unsalted butter
110g sugar
one rind of lemon
one rind of orange
180ml red wine
½ fresh vanilla bean
fresh pepper to taste
Bitter Chocolate Sorbet
270ml milk
260ml water
190g sugar
200g bitter chocolate
Step 1 – Kirsch CreamBring the milk and sugar to a boil in a pan. Meanwhile, whisk the egg yolks on full speed until they turn a pale yellow. Fold in the milk and sugar mixture followed by the gelatine. Allow to set and then slowly whisk in the cream until whisked by half the volume. Incorporate the egg mixture and finally the Kirsch.
Step 2 – Sacher CakeMix all the ingredients until they turn a pale yellow and set aside.
Step 3 – Meringue and Chocolate MixWhisk the sugar and egg whites to create the meringue. Sift the cocoa powder with the flour. Pour the melted chocolate and butter into the egg yolk mixture and mix thoroughly; carefully incorporate the meringue and then the dry ingredients. Spread onto a baking tray and then bake at 180C for 10-12 minutes. Step 4 – Cherry SoupMelt the butter and sugar, add the wine, orange and lemon rind and the vanilla bean. Reduce by one third, add the cherries and remove from the heat. Leave to set.
Step 5 – Bitter Chocolate SorbetPour the milk, sugar and water into a pan and bring to the a boil. Add the chocolate mix until it melts completely. Leave it to set and then churn in an ice-cream maker.
