Food Technology: CORE SKILLS Cooking Plan: Year 9. This year food technology will be taught on a rotation with the other DT subjects and all classes will follow the same plan.

Please find below the basic recipes we will be using - you will need to add the dates once you have your individual timetable.

We encourage you to adapt these recipes to suit your particular needs, tastes and to be creative, fun and individual.

Lesson: Practical activity: Basic recipe for a small serving – we don’t have facilities to prepare family size dinners:

1 Eggs. No ingredients required.

2 Poached fish in tomato sauce.

1 fish fillet (frozen or fresh), ½ tub cherry tomatoes, 1 clove garlic, chicken stock. Optional ideas: basil, chilli, spring onion, spinach, couscous, rice etc. Remember a container to take it home in.

3 Choux pastry- profiteroles.

60g plain flour, 50g hard margarine, 2 eggs. Optional ideas: whipping cream, custard, chocolate sauce, cream cheese, mushrooms, chives etc. Remember a container to take them home in.

4 Roast chicken and vegetables.

1 piece of chicken (thigh/ leg/ breast are all fine), 1 potato, vegetables. Optional ideas: pepper, onion, courgette, tomato, olives, aubergine, mushroom, beetroot, pesto, balsamic vinegar etc. Remember a container to take it home in.

5 Sausage stew. 4 sausages, onion, small can chickpeas, tinned tomatoes, stock, garlic. Optional ideas: herbs, balsamic, spices, raisins etc. Remember a container to take this home in.

6 Panna cotta and shortbread.

1 sheet gelatine, 60ml milk, 150ml double cream, 25g caster sugar, vanilla. 60g butter, 30g caster sugar, 90g plain flour. Optional ideas: fresh fruit, chocolate chips, jam, compote etc. You will need to bring individual dishes/ ramekins/ teacups to set these in and a container to take them home in.

7 Meatball casserole. 250g mince, onion, garlic, tinned tomatoes, breadcrumbs, mozzarella cheese. Optional ideas: peppers, mushrooms, pepperoni etc. A foil tray/ ovenproof dish will be required to cook and transport this.

8 Shortcrust fruit tart. 160g plain flour, 40g white fat/ 40g margarine or 80g margarine, 2 eggs, 50g caster sugar, 15g plain flour, 175ml milk, fruit, jam. Remember a container to take them home in.

9 Steamed fish and rice.

1 fillet fish (frozen or fresh), lemon juice, onion, garlic. Optional ideas: herbs, mushrooms, courgette, pepper, tomato, asparagus, rice, potato, couscous etc.

10 Risotto and cheese croutons.

Onion, 2 slices ham, 30g peas, 75g risotto rice, stock, 100g cheese, 2 slices bread. Optional ideas: mushrooms, prawns, tomato, leek etc. remember a container to take it home in.

11 Ravioli. 100g ‘00’ flour or bread flour, 1 egg. Filling suggestions: cream cheese, sundried tomatoes, mushrooms, sausage, cheese, bacon etc. Optional ideas: olive oil, parmesan, tomato sauce etc.

12 Lime and courgette sponge

100g self raising flour, 100g caster sugar, 100g margarine, 2 eggs, 2 limes, 1 small courgette, 50g butter, 120g icing sugar. Optional ideas: dried fruit, candied peel, lime curd. Remember a container to take it home in.

13 Lasagne cups. 250g mince, garlic, onion, tinned tomatoes, lasagne sheets, 25g plain flour, 25g butter, ½ pint milk, 25g cheese. Optional ideas: courgette, carrot, sweetcorn, mushroom etc. Remember a container to take them home in.

14 Nuggets and garlic bread.

1 chicken breast, breadcrumbs, egg, flour, 400g bread flour, 7g dried yeast, garlic, 100g butter. Optional ideas: cereal, bbq sauce/ ketchup, herbs, chilli, cheese etc. remember a container to take these home in.

If you are eligible for Pupil Premium funding we can provide ingredients for practical food lessons. You will have a request form posted home at the start of each food unit so

you can choose in advance which PP options you would like to cook. When you have requested a PP option on this form these ingredients will then be automatically provided

for your practical lessons – if the form is not returned you will not be provided with ingredients. If you would prefer to bring your own ingredients you are very welcome to do

so, but we ask that you let us know in order to minimise waste.

Chicken breast, leek, 300ml skimmed milk, 210g butterbeans, 25g cheese, 1tbsp flour, mashed sweet potato. Optional ideas: tarragon, other vegetables. A foil tray/ovenproof dish will be required to cook and transport this.

4 Cooking for: coeliac: courgette with pesto.

Small tin butterbeans, garlic, cherry tomatoes, courgette. Optional ideas: basil, lemon juice, chilli flakes, avocado, asparagus, mini sweetcorn, butternut squash, olives, capers. Remember a container to take this home in.

5 Cooking for: vegan: cauliflower dahl. Onion, 2 tbsp curry paste, 100g red lentils, stock cube, ½ cauliflower, 1 potato, 200ml coconut milk. Optional ideas: rice, poppadum, flatbreads, chutney, beans, Quorn vegan ‘chicken’. Remember a container to take this home in.

6 Cooking for: elderly: ham and vegetable pie.

160g flour, 40g white fat + 40g margarine or 80g margarine,4 slices ham, small tin/ frozen vegetables, 3 tbsp double cream. Optional ideas: mustard, egg, salad, wedges, chicken. Remember a container to take this home in.

7 Cooking for: pregnancy: sweet potato and spinach pasta.

75g pasta, onion, garlic, stock cube, 1 sweet potato, 2 handfuls spinach, 50ml cream. Optional ideas: dried herbs, cheese, breadcrumbs, chicken. Remember a container to take this home in.

8 Cooking for: athlete: turkey burgers. 250g turkey mince, small tin/ frozen vegetables, pitta bread. Optional ideas: salad, wedges, salsa, rice, egg, breadcrumbs, sundried tomatoes. Remember a container to take this home in.

9 Cooking for: someone in a hurry: sausage gnocchi.

250g pork mince, 1 stock cube, passata, 250g gnocchi. Optional ideas: dried herbs, chorizo, cheese, tenderstem broccoli, asparagus, olives. Remember a container to take this home in.

10 Cooking for: CHD: poached pears. 1 Orange juice, 1 lemon juice, 2 pears. Optional ideas: ground ginger, honey, granola, dried fruit. Remember a container to take this home in.

11 Cooking for: toddler: pork meatballs Onion, breadcrumbs, carrot, pepper, 250g pork mince, 1 egg. Optional ideas: celery, sweetcorn, peas, tomato sauce, pasta, dough balls, basil, cheese. Remember a container to take this home in.

12 Cooking for: lactose free: fajitas. ½ pepper, onion, chicken breast, pitta bread. Optional ideas: avocado, seasoning – chilli, lime. Salad, tomato sauce, salsa, nachos. Remember a container to take this home in.

13 Cooking for vegetarian: baked eggs. Onion, 2 handfuls spinach, tin tomatoes, 2 eggs. Optional ideas: chilli, beans, feta. A foil tray/ovenproof dish will be required to cook and transport this.

14 Cooking for: a family: scone based pizza.

110g self raising flour, 25g margarine, 4tbsp milk, ½ mozzarella, ketchup. Optional ideas: pepperoni, peppers, cheeses, mushroom, pineapple, olives etc. Remember a container to take this home in.
