About this eBook

This book was designed to provide home daycare providers and childcare center

owners with pre-planned menus that meet the Child Adult & Food Program

Nutritional Guidelines.

According to the Missouri Eat Smart Childhood obesity and Missouri’s Eat Smart

Guidelines for Child Care, “Overweight is now the most nutritional disease of

children. Preschool children who are overweight are almost 5 times more likely to be overweight as young adults.”

To assure that children in your care have access to highly nutritional meals, the

menus in this book can be rotated every12 weeks. The menus contains snacks with

more fruit & vegetables, more whole grains choices, low fat milk choices for

children ages 12months-12years of age. Having 12- weeks of menus, assures that

the children will be served a variety of food choices.

Menu planning can be very time consuming and many childcare business owners

or caregivers spend 40-50% of their time throughout the week on food service

duties. Those duties include: shopping for food, planning for menus, putting away

food and preparing food.

In summary, this book was created to reduce your menu planning time so that you

will have more time for other childcare business or family related duties. Also, the

menus in this book are ready for you to personalize, print, make changes if needed,

post and issue to parents.

The Author of this eBook

My name is Shiketa Morgan and I have been planning menus for children since

1998. I was a home daycare provider from 1998-2003 and as I write this e-book, I

am the Owner/Director of Learning Days Child Care Center in St. Louis Missouri

since April 1, 2003. Along with operating my childcare center, I blog and consult

childcare business owners at: www.childcarebusinessowner.com. You will also

find many of my child, health and business related articles online.

I really enjoy planning menus for children and assuring that they have access to

healthy meals. In fact, the Child Adult and Food program has taught me a great

deal about how to serve healthy food choices to young children.

As a childcare business owner, I know first- hand that it takes time to plan healthy

menus. It’s easier just to serve children a sandwich, chips and a cup of juice.

However, that is not wholesome healthy choice for lunch to be served every day.

Children need a diet that is rich in fruits, vegetables, whole grains with low-fat

milk choices along with water in between meals.

To assure that the menus in this e-book are loaded with a variety of food choices, I

have included a variety of fruit, vegetable, whole grains; along with a variety of

meat choices in the menus. You may notice that there will be very few or no pork

choices on the menus. Many families choose not to serve their children pork

because pork is very high in fat or for personal or religious beliefs.

I look forward to your feedback about this book and until we meet, have fun

Weekly Menu Week 1

Serve substitutes in the event of an food allergy See Recipe

Monday

Breakfast: Plain Bagel, Low fat-cream cheese, Strawberries, and 1% Milk

Lunch: Turkey Slices, Mashed Potatoes, Whole Grain Bread, Canned Peaches and 1% Milk

Snack: Gold Fish and 100% Apple Juice

Tuesday

Breakfast: Oatmeal, Raisins and 1% Milk

Lunch: Canned Stuffed Ravioli, Cheese, green beans, orange slices and 1% Milk

Snack: Peanut butter and Crackers

Wednesday

Breakfast: Raisin Bran, 100% Orange Juice and 1% Milk

Lunch:* Mostacolli/Cheese meat sauce, Mixed Salad/Tomatoes, Fruit cocktail and 1% Milk

Snack: Teddy Graham and 1% Milk

Thursday

Breakfast: Whole Grain Cereal Bar, apple slices and milk

Lunch: *Chicken Fettuccine, Sauce, Peas, Pears and 1% Milk

Snack: Pretzels and Cheese dip

Friday

Breakfast: French toast, Apple sauce, 1% Milk

Lunch: Roast Beef Deli Sandwich, Carrot Sticks, Cantaloupe, Whole Grain Bread and 1% Milk

Snack: Cheeze Its, and 100% Pineapple Juice

Recipe Cards for Week 1

Mostacolli

Step 1- Boil the Mostacolli noodles until done and drain

the water from the noodles.

Step 2- add the spaghetti meat sauce and mix the noodles

and sauce together.

Step 3- Pour shredded or sliced cheese over the pasta and warm until the

cheese is melted.

* See food program guidelines for adequate amount of cheese per child.

Chicken Fettuccine

Step one- Boil the Fettuccine noodles until done and drain the

water from the noodles.

Step 2- add the Alfredo sauce or cream of chicken sauce to the noodles and

mix sauce together into the noodles.

Step 3- Add canned chicken to the dish, mix and serve at recommended food

temperature.
