Let’s face it, the holidays are practi-cally here — Thanksgiving is thisThursday — so why even think
about dieting?! Why torture yourself sillythis time of year when you can graciouslyaccept all the rich and decadent cuisinebefore you? Well, that’s how I see it.Holiday dining is so special to me formany reasons: For starters, it bringsloved ones and friends close together tocherish the season, and secondly thebounties of delicious treats that gracethe table taste so much heartier —maybe it’s all thanks to an extra helpingof that one secret ingredient called love.So, before the frenzy of holiday cook-
ing gets into full swing, I took this weekbefore Thanksgiving to enjoy a simple,yet sensational dish — macaroni andcheese. No need to get fancy here. Yet, asI began my search for some of the bestmac and cheese around town, I soonnoticed that many Ono, You Know estab-lishments have taken this old-fashionedcomfort food for the soul to a muchgrander scale, adding a bit of pepper andspice, and everything nice — not to men-
tion loads of cheese!
Romano’sMacaroni GrillThe name says it
all, so it’s no sur-prise that Romano’sMacaroni Grill ishome to one of thebest comfort foodsever — Macaroniand Cheese.Adored by bothkeiki and adultsalike, this ooey,
gooey, goodness is an all-American favorite here at this top-chart-ed establishment, known for its Tuscan-inspired Italian cuisine.Executive chef Michael Longworth,

bite, and it was nothing short of deli-cious, or should I say, onolicious?“Macaroni and Cheese isn’t only just

Hooters, an internationallyacclaimed restaurant chain, isdefinitely something to give a
hoot about. This casual beach-themeestablishment, operated by Atlanta-based HOA Restaurant Group, LLC,has more than 455 restaurants world-wide, including locations in 44 statesin the U.S.Known for its exquisite Hooters
girls, delectable all-American cuisineand ice-cold beer, Hooters makessure each dining experience is anunforgettable one. The eatery notonly reaches sports fans, who enjoywatching games here, but Hootersalso reaches out to the entire com-munity it serves.
Dining Out recently paid a visit tothis famed establishment located inAloha Tower Marketplace and chat-ted up Hooters general manager AbelDiaz, assistant general manager AlexDahlman and director of marketingTia Spence, who obviously love whatthey do. In between the fits of laugh-ter and oohing and ahhing at all themarvelous dishes, we were able totruly take in all that Hooters has tooffer. Fun is what it’s all about atHooters, and the party won’t stopanytime soon!
DO: Hooters has made a name foritself worldwide. Please share somebackground on this establishedeatery.
Diaz: Hooters opened its doors in1983 in Clearwater, Fla., and the com-
pany has been growing tremendouslyever since. Today, we have Hooterslocations all over the world, fromChina to Australia and SouthAmerica. Hooters established aunique concept based on ourHooters girls, who are portrayed tobe like the “all-American cheer-leader.” Our Hooters Hawaii locationopened 18 years ago in Aloha TowerMarketplace, and thankfully we’vebeen able to stay put.
DO: Of course, Hooters is the ulti-mate place to be for everything“food, drink and football.” Andthere’s been so much talk about itsworld-famous chicken wings. Whatmakes these wings so tasty?
Dahlman: Our head chef is JustinMorgan, and you can get your chick-en wings ($10.99, 10 pieces; $19.99,20 pieces, $37.99 50 pieces) breaded,or without the breading. Either wayis popular now. Boneless also is justas popular as the bone-in wings. Wehave lots of different sauces, and youcan get your wings at a variety ofspice levels. They’re just good, old-fashioned chicken wings — deep-fried. They’re delicious. We gothrough more than 20,000 chickenwings a week!
Diaz: Our sauces are the specialingredient that make our chickenwings stand out above the rest.People can choose from 11 differentsauces, including Mild, Medium, Hot,3 Mile Island — It’s Nuclear, 911 Hot
— Call the Paramedics, Cajun — AMardi Gras celebration, Samurai —Teriyaki-Style, Spicy Garlic —Vampires Beware!, Parmesan Garlic,Lemon Pepper and BBQ.
Diaz: I’d definitely recommend ourDaytona Beach Wings, a sweet andspicy treat that’s finished on the grill.The Parmesan Garlic sauce is very pop-ular, too. Blue Cheese & Celery ($1.99)go great with our chicken wings.
DO: Delicious! Hooters serves upsome fantastic burgers as well that meatlovers can’t wait to devour, correct?
Diaz: Yes! Our Western BBQ Burger($10.99) is one of the most-requestedburgers, featuring a mouth-wateringbeef patty, complete with bacon,Cheddar cheese, onion tanglers anda zesty barbecue sauce. All of ourburgers come with your choice ofpotato salad, baked beans, mac salador cole slaw.
Spence: The Bleu CheeseBurger ($10.99) andTraining Burgers ($10.99, 4mini burgers) have beendrawing in customers, andyou also can build your ownburgers here, which a lot ofpeople opt to do.
Diaz: And no matter whatyou order as your entree,you have to order a side ofFried Pickles ($7.99). Theselightly breaded, sliced pick-les are very addictive. Nottoo many restaurants have
this, and we haven’t had any oneperson say that they didn't like ourfried pickles!
DO: So, besides burgers andchicken wings, what else flies off themenu here?
Spence: We’re also known for ouroysters (market price). People alwayscall to see if we have fresh oysters.
Dahlman: Yes, we have our oys-ters flown in several times a weekfrom Washington. You can orderthem traditionally on the half-shell,or you can also get them roastedwhich also is very good — so if youaren’t a fan of raw oysters you canget them cooked.
DO: What type of clientele do youcater to?
Spence: We cater to a wide varietyof customers, from military to localsand tourists. Everyone comes in for

the specials. On Wednesdays andSundays, we have all-you-can-eatwings for $15.99 (eat-in only special).We also have live entertainment onWednesdays. We feature MilitaryMondays and Burger Mondays aswell, when you can get a cheeseburg-er and french fries for $8.99. We alsohave daily specials too, with HappyHour Monday through Friday from 3to 6 p.m., in which patrons can get adiscount on selected appetizers anddrinks. And, of course, we alwayshave specials on Saturdays andSundays with all the football games.
Diaz: Yes, football season is verygood to us. Right now we’re showingall the football games on Saturdaysand Sundays, and in order to giveback to our patrons, we discount thewings and beer on Sundays. You canhave domestic glasses and BigDaddy's for a low price!
DO: Hooters offers a full bar to helpquench your thirst, correct?
Spence: Correct, we have a full barnow. When Hooters first opened, weonly served beer. Now we have beer,liquor, wine — pretty much anythingyou want, we have it. From domesticsto imports, we have it all. Here andthere we’ll add new bottles to our col-lection to give customers somethingnew, but our beers go with everything!
DO: While Hooters’ good food andice-cold beer can’t be beat, everyonecan't resist the Hooters girls. What
makes a Hooters girl?Spence: We have the hottest girls
on the island who work here! Anyonecan be a server — it’s easy to bringfood and drinks to a table, but we goabove and beyond. Customer serviceis everything to us at Hooters —that’s what we want to be known formore than anything. We have 41Hooters girls right now. We have asmall group of girls who have beenhere a long time. They know theropes, so they really help me in train-ing the newer girls who join our team.The majority of our staff is new, how-ever, some of them are college stu-dents, girls who work here for thesummer. We have girls coming andgoing, but we do have a solid crew
that’s been here forev-er that keeps trainingand making sure thesegirls are exactly whatHooters would likethem to be, which isthe exciting all-American girl. In termsof drawing in our cus-tomers, the girls aredefinitely our No. 1draw, they just reallymake the wholeHooters experience.
Diaz: Training isvery important to us.We spend a lot of timetraining our girls sothat they’re ready toserve our customers.
Hooters training could lastfor a month. We’re doing great busi-ness here, and that’s primarily due toour girls.
Spence: Personality is everythingto us! Everybody thinks it’s all aboutthe looks, but first and foremost it’sall about personality, and that’s whatsells us the most because when youhave the personality you make every-thing better. These girls are entertain-ers — they’re fun to be around, theylove sports, they love to play games,they love to sing. The girls haveplayed musical chairs and have par-ticipated in scavenger hunts with ourcustomers — basically a lot of thegames are made up as we go to makeit a fun experience for our customers.
DO: Sounds like Hooters is theplace to be to escape the stresses oflife, and customers can remembertheir Hooters experience thanks to awide variety of merchandise avail-able at the eatery. What can cus-tomers expect?
Spence: Yes, we sell a lot of mer-chandise and come up with greatshirt ideas. People like the traditionalshirts, but we also throw in some funthings, like footballs during footballseason, for example. We have every-thing from shirts to beach towels, youname it! In fact, customers like to buyshirts and have the girls sign themand take it home to remember theexperience they had here. We alsohave shirts for kids.
DO: What does the future holdfor Hooters?
Diaz: We're hoping to open morelocations in the future, possibly inWaipio, and we’re also looking toopen a place in Waikiki. Tourists lovethe concept. In terms of the food,we’re working to add the loco mocoto our menu.
Dahlman: We are a restaurant firstand foremost. We want to serve deli-cious, hot food and ice-cold beer, andhave sports playing on TV, but youcan go anywhere for those kind ofthings. You can have sports on athome, you can get food at any otherrestaurant, but there’s no other placethat has Hooters girls. We have abright future ahead of us.

is the flavor of the month at Napoleon’sBakery. Thus, the bakery is featuringdesserts and pastries that infuse the fall fla-vor.Among these delicacies are Pumpkin
Chiffon Pie ($9.75), Pumpkin Crunch Pie($9.75), Pumpkin Delite Cake ($13.95; nosugar added), Pumpkin Pie made with EqualSweetener ($9.95), a Pumpkin Cake Donut($1.10) and traditional Pumpkin Pie ($8.25).While the traditional Pumpkin Pie is offereddaily, the bakery’s other pumpkin pastriesare popular among customers, according toJan Tsukazaki, general manager of FoodSolutions International, which includesNapoleon’s Bakery.“The Pumpkin Crunch Pie has a crunch
topping that includes walnuts, butter, sugarand flour; it’s nice and rich,” she says. “OurPumpkin Chiffon Pie is a chilled pie and it’svery light, but it has that same pumpkin andspice flavor that you get from normal pump-kin pie.”The newest addition to the pumpkin-flavored
desserts this year is the Pumpkin Cake Donut.“It’s a cake doughnut that’s on the light
side,” Tsukazaki says. “It has those spices —cinnamon, cloves and ginger — that givepumpkin pie that good flavor. We roll it aroundin powdered sugar so it looks like a whitedoughnut, but it’s really pumpkin inside.”Tsukazaki explains that desserts with less
or no sugar also are available, such as thePumpkin Pie with Equal Sweetener and thePumpkin Delite Cake.
“The Pumpkin Pie made with EqualSweetener is a baked pie, but it has awhipped cream topping and we don’t useany sugar in the crust,” she explains. “Forpeople who have restrictions on sugarintake, that’s a good choice. We also have aPumpkin Delite Cake that’s a sugar-free orno-added-sugar cake … it’s moist and deli-cious, so it’s another alternative for thosewho can’t have any sugar.” While traditional Pumpkin Pie reigns as
the bakery’s most popular pumpkin-fla-vored dessert, Tsukazaki says that thesales of no-added-sugar or sugar-free pieshave increased.“Although that’s — plain, regular pumpkin

Prices for thepastries are slightly higher at theNapoleon’s Bakery locations at AlaMoana, Pearlridge and Kahului.

sticks with its original recipes and con-tinues to provide customers with signa-ture, homemade-type delicacies. Themain Napoleon’s Bakery on Oahu,located in Waipio, bakes all the pastriesfresh daily then sends them out to thebakery locations islandwide. “We make that traditional pumpkin
pie like your mom would have made athome,” Tsukazaki says. “We haven’tchanged our recipe since the day weopened in 1983. “We’re like that small, family bak-
ery, except we have a lot of loca-tions. It’s a lot of recipes fromscratch and a lot of handwork — notall done by machines.”

Anything that claims to be the havenfor something sets a high standardfor itself. And luckily for customers
of Shiro’s Saimin Haven, the restaurantlives up to its lofty proclamation.The family-run joint has a casual, wel-
coming atmosphere, and the servers arefriendly as they dish out heaping portionsof saimin. The restaurant, which has threelocations in Ewa Beach, Waimalu andWaipahu, has been the go-to place forsaimin since the 1960s. Shiro’s boasts anextensive menu, including 60 differentsaimin options, all of which were createdby restaurant founder Shiro Matsuo.Matsuo describes his dishes as old-
style comfort food. And while many of
these saimin dishes have now becomefavorite meals in the Islands, that wasn’talways the case. When he first startedout, “saimin was then just a snack,”Matsuo explains. “I thought, ‘why notmake it a meal in itself?’ It had never beendone before.”So, Matsuo set out to create dish after

When Shiro’s Saimin Haven founderShiro Matsuo got his assignment asa latrine orderly while serving in the
Army in the 1940s, he wasn’t sure what wasnext for him. All he knew was that despite his less than ideal job, hewas going to be the best darn latrine orderly that they had ever seen.“Whatever you do, give it your best shot,” Matsuo says as he recallshis early military days. And sure enough, his hard work paid off � hewas soon recognized by the sergeant of the mess hall and was askedto join the mess unit. “The boss encouraged me to learn from himabout cooking,” explains Matsuo. He was then promoted to thecook’s helper and later a head cook.Once his service ended, Matsuo set out to work in the restaurant
industry, cooking in various restaurants in Hawaii and California, andteaching culinary arts at Kapiolani Community College.But Matsuo had long been dreaming of owning his own restaurant.
When a space became available, he jumped at the chance, despitethe fact that he had little financial capital to get the business off theground. “It was the biggest decision I ever made in my life,” he says.“But against all of these challenges, I followed my heart.”He opened the first Shiro’s Saimin Haven in the 1960s, and now
at 92, Matsuo is still full of energy and a passion for cooking.The walls of the Waimalu location are lined with Matsuo’s poetry �
a series called Dear Hearts. Many of the Dear Hearts poems are pos-itive reflections about life and following one’s dreams. Even in casualconversation, Matsuo is a poet. “You have got to have a dream,” hesays, sitting in a booth at the back of his restaurant. “No matter howimpossible it may seem.”

you order is going to be good. TheMarket City Shopping Center eateryoffers 13 items on its appetizer menuthat share one common ingredient; fla-vor. Seriously, this stuff is good.The Fried Dumplings ($5.50) are filled
with shrimp, pork, mushrooms, bambooshoots and fungus, and served with aHouse Mayo Sauce that looks heavy butis lightly flavored and does nothing tohide the flavor of the ingredients. Whilethe filling is tasty, the star of the dish isthe very crispy wonton wrapper. Thewrap offers a perfect textural changefrom the filling and serves as a ladle forthe sauce.If your idea of the perfect pupu is
something that matches your favoritebrew, the Thai Style Pork Cheek ($6.95)is a logical choice.
After the pork is marinated, fried andfinished in the oven, it is seasoned withhoney and served with a spicy dippingsauce. By itself the pork is sweet, savoryand just a bit smoky, but with the sauce— which isn’t as spicy as the menu sug-gests — the dish takes on an entirely dif-ferent taste as the fresh garlic, lemongrass and chili sauce add yet anotherelement to the flavor profile. It's a defi-nite winner.If you’re looking for some kick, and I
mean “there-ain’t-enough-water-to-cool-it-down” type of kick, order the BakedGarlic Chili Wings ($5.50) and tell themto add the sliced chilies. It’ll make yousweat, cry and wish you had ordered asecond helping. Whether spicy or mild,the three-step cooking process ensuresthe chicken is moist and not the leastbit greasy. Two more choices that get high marks
are the Fried Calamari ($4.95) and theSteamed Clams in a White Wine Sauce($7.95). Owner Cindy Chong-Wong saysa plate of calamari goes out with nearlyevery order, and it’s easy to see why.The panko-crusted squid is lightly friedand very tender with a cocktail saucethat has all the taste you’re looking for,without hiding any of the calamari’s fla-vor. As for the Steamed Clams, well, justorder it with some crunchy garlic breadand enjoy. The clams are fresh and thewine sauce is perfect for dipping. Noneed to say more.

One thing that’s ubiquitous to diningout is, of course, the menu — a guideto what the restaurant offers, provid-
ing sometimes in-depth descriptions of eachdish. But although many menus provide anappetizing preview of what’s to come, othersare almost curt in their presentation. Forexample, if you’re vegetarian, there’s onephrase that can quickly spoil your appetite:NO SUBSTITUTIONS. It’s a definite put-off,almost as if the eatery only wishes to caterto a certain part of the population instead ofstriving to please as many customers as pos-sible. In this economy, that just doesn’t makemuch sense (or cents)!While discussing the menu at JJ Bistro and
French Pastry with owner JJ Luangkhot, wefound that substitutions don’t bother himone bit. In fact, he says that all customershave to do is ask and he will adjust the dish,transforming a seafood or meat entree into avegetarian delight. “All of our pasta can be vegetarian,” he
says, which includes menu items such asKhao Soi Luangprabang (Veggie: $7.95), acombination of fettucini and crispy noo-dles, carrots, potato and sour cabbage. It’sserved with quail egg, but they will be
happy to omit it. It’s not on the menu, butLuangkhot recommends his vegetableWellington, a vegetarian version of his pop-ular Baked Lamb Wellington. For $9.95, thiselegant dish includes eggplant, zucchiniand spinach wrapped in puff pastry andbaked to flaky perfection. Don’t forget to satisfy your sweet tooth!

“Main customers include peoplegathering for business meetings,” hesays. “Our salsa night (on Fridaynights from 10 p.m. to 2 a.m.) is a jam;there’s Latin food. We’ve had salsanight for about 20 years. Since it’s real-ly hard to park downtown, customerspark in the Bishop Square parkingstructure; there’s validated parkingafter 4 p.m.”
Café Che Pasta is known for produc-ing all-natural, contemporaryMediterranean cuisine, specializing inartisanal foods, including pizzas, pas-tas and raviolis. The restaurant doesnot offer a traditional Italian menu, incontrast to many Italian restaurants inHawaii that serve regional Italian cui-sine. Instead, Café Che Pasta has
adopted a more internationalapproach to Mediterranean food, spe-cializing in Italian fare.
“The uniqueness of this restaurantis that we’re the only restaurant thathand-makes artisanal pasta,” saysCohen. “We have a vintage pasta mak-ing machine; artisanal pasta is hand-made. It’s not fine dining (here), butit’s handmade food.”
Café Che Pasta provides its cus-tomers with a variety of signaturedishes, including Bruschetta ($9.50),Confit Di Anatra ($15.50), Penne AlLimone ($11.50) — a combination ofpenne pasta, leeks and spinachsautéed in a lemon confit-fresh nut-meg cream sauce with Italian parsleyand dried Italian cheeses — CanneloniBolognese ($13.50) — handmadepasta crepes with Bolognese meatsand vegetables, fresh Parmigiano andMozzarella cheeses baked in a Tuscantomato sauce, and Rigatoni AllaSalsiccia ($13.50), the eatery’s originalsausage tossed with rigatoni pasta in aTuscan tomato sauce. Other favoritesinclude a large selection of salads,
such as the Insalata Alla Nicoise($12.95) — olive oil poached ahi, newred potatoes, string beans, Romatomato, anchovies, hardboiled egg,Nicoise olives, green leaf lettuce andmesclun greens with a Provencalevinaigrette — the Insalata Caprese($10.50) — a salad with freshMozzarella, basil, crostini, balsamicvinaigrette and Parmigiano andRomano cheeses — and Insalata Mista($13.95), served with chicken, shrimpand papaya.
“We hand-make all these sauces;everything is homemade,” explainsCohen. “We do serve a lot ofseafood because we only use fresh,local seafood.”
Café Che Pasta also serves dailyspecials, which Cohen comes up withevery day. A popular choice amongdaily specials is the Zuppa E Panino($11.50), or soup and sandwich combi-nation, and the Pesce Del Giorno($17.95, fish of the day).
“I would say at least a third, if nothalf, of our customers order the dailyspecials,” says Cohen. “Five new daily
specials are presented each day; it’s allnew every day.”
In addition to Cohen, the eateryboasts the culinary services of anauthentic Italian pizza master.
“Chef Roberto is from Milan,”Cohen says. “On Friday nights, peoplestand in line and he makes the pizzasright in the window (with a pizzaoven). He’s the only pizza master inHawaii from Italy; he’s been here for10 years.”
In addition to the restaurant’s authen-tic Mediterranean cuisine, Café ChePasta’s artwork also makes it unique.Customers will notice a variety of largepaintings throughout the entire restau-rant, which are changed monthly.
“I started this restaurant as an artgallery/restaurant, so we put a greatdeal of significance on the art that weput on the walls,” Cohen says. “We sella lot of art … it’s not like the art is aperipheral aspect of the restaurant;the art is an essential aspect of therestaurant.”
