Utilising the Multi-Eco system intandem with live steam allowssubstantial savings in energy andwater to be achieved.

With our induction products, heatloss and energy consumption isminimised through direct transfer tothe cooking vessel.

Induction is considerably moreefficient than conventional gas orelectrical equipment. Cooking timesare also significantly reduced.

Over 90% of the energy usedgoes directly into heating the pancontents and not into heating thekitchen environment.

Very little heat is emitted into thekitchen area from a chrome griddle.This not only increases energyefficiency, it also reduces theamount of residual heat that is lostinto the kitchen work environment.

Our range of Hydrocarbon (R290)cabinets and counters make iteasier to reduce your impact onthe environment whilst makingconsiderable savings in unitrunning costs.

Hydrocarbon cabinets operateusing a naturally occurringrefrigerant. This gives increasedenergy efficiency and provides avery low Global WarmingPotential. Heat output is alsoreduced resulting in a greatlyimproved and more comfortableworking environment.

This unique system links anumber of independently controlledcabinets, counters, bottle coolersand coldrooms with a closed loopring main carrying a chilled solution,circulated by an externally locatedpump using a single refrigerationcharge.

Totally foodsafe and non-hazardous, Glycol retains itsliquid properties throughout theprocess. This results in a numberof user benefits that includesincreased performance, energyefficiency and cost savings.

The development addresses environmental and sustainablefeatures in terms of design and construction.FCSI consultants, CDIS-KARM, undertook detailed testsand analysis in order to specify equipment that would meetthe necessary criteria. It was essential to use state of theart, energy efficient units throughout the catering facilitieswith all requirements assessed on a ‘cradle to grave’principle. This covers value for money, carbon emissions andthe well being of operators. In order to deliver theseexacting requirements, prime cooking and refrigerationproducts were specified from Williams, Falcon and Eloma.

Williams designed a bespoke Glycol secondaryrefrigeration system that is capable of running multiple units,chilled areas and cold rooms, all from one system.This reduced the amount of primary refrigeration gas usedby up to 72% and cut energy consumption by up to 25%.

Eloma combi ovens were specified for the main work areasin order to maximise operational capability. These reduceenergy consumption when compared with conventionalcooking methods.

The integral Multi-Eco system with high performance heatexchanger also generates a further 16% energy saving.The automatic cleaning cycle makes operational use simple.Each oven carries a control programme on board which islinked to a HACCP computer in the head chef’s office torecord data related to the cooking and cleaning processes.

The equipment supplied by Falcon Foodservice Equipmentand Williams Refrigeration, alongside the other kitchenelements combine with good operational practice to allowthe new facility to be 30-40% more efficient than itspredecessor.

HMS Collingwood is the largest naval training facility in Western Europe and the leading Maritime Warfare Schoolestablishment of the Royal Navy. In line with the Government ‘Pay as You Dine’ initiative, facilities at the site haveundergone recent major development. The new Howe Building opened in May 2008 to provide dining, retail andleisure areas for the base.

Building Management Systems ensure that ourmanufacturing facilities operate to optimum efficiency.

Motion sensors fitted to lighting means that they areonly used when required.

Water use has been lowered substantially in theoperation of our premises.

Used office paper is shredded for use in our sparespacking departments.

Scrap cardboard, plastic, metal and wood is collectedfor recycling or reprocessing.

Used test cooking oil is converted to bio-fuel.

Many of our products are now 98% recyclable.

In all of our operations and services, we aim toReduce, Reuse and Recycle.

Some Simple Kitchen Tips

Advise staff of correct equipment heat up times andNEVER use hobs as space heating!

Use pans of a size which best suit the hob and keeplids on to increases efficiency.

Ensure simmer controls are used where possible.

Locate refrigeration in a cool part of the kitchen andensure that ventilation panels are not obstructed so itdoesn’t have to work as hard.

Do not overload a fridge or freezer and ensure thatshelves are correctly spaced so that product will notblock airflow.

Remember to shut fridge, freezer and coldroom doorsor fit a curtain to those accessed frequently.

Clean and service equipment regularly. This willensure maximum performance and reduce risk offailures that may lead to unnecessary downtime.
