Chicken and Curried Cauliflower Salad SandwichesIngredIents:Serves 4 to 61 medium head cauliflower, chopped into 2-inch pieces (about 6 cups)1 tablespoon plus 1 teaspoon canola oil1 teaspoon hot curry powder Kosher salt and freshly ground black pepper1 1-pound bone-in, skin-on chicken breast1 egg yolk11/2 teaspoons white wine vinegar1/8 teaspoon salt3 grinds black pepper1/4 teaspoon mustard1/2 cup canola oil2 scallions, white and green parts, sliced very thin1/2 teaspoon hot curry powder2 tablespoons grated onion1/3 cup salted roasted cashews, coarsely chopped1/3 cup golden raisins Toasted slices rye, pumpernickel or other brown bread Mayonnaise

To prepare the cauliflower and chicken, arrange 2 racks in the oven and preheat to 400 F. Toss the cauliflower with the 1 tablespoon of oil, curry pow-der and 1/4 teaspoon salt in a bowl, and arrange in a single layer on a rimmed baking sheet or in a glass baking dish. Put the chicken in a roasting pan or on a rimmed baking sheet, brush with the remaining 1 teaspoon of oil and season with salt and pepper. Transfer both to the oven, one on each rack. Roast the cauliflower for 20 minutes. Remove from the oven and let cool. Let the chicken roast for an additional 10 to 15 minutes (30 to 35 minutes total), until a meat

A new year marks a great time to turn over a new leaf. While many people resolve to be healthier in a new year, those who aren’t fond of making resolutions can still make an effort to adopt a healthier lifestyle.

Adopting a healthier diet is a great way to improve overall health. And while it’s often assumed that a healthy diet is one void of taste, the following recipe for “Chicken and Curried Cauliflower Salad Sandwiches” from Joy Manning and Tara Mataraza Desmond’s “Almost Meatless: Recipes That Are Better for Your Health and the Planet” (Ten Speed Press) turns such a notion on its head.

Chicken and Curried Cauliflower Salad Sandwiches

To make the mayonnaise, whisk the egg yolk with the vinegar, salt, pepper, and mustard in a bowl. When well combined, begin adding the oil very slowly, a few drops at a time, until about a quarter of the oil has formed a smooth emulsion with the yolk. Add the remaining oil in a slow, steady stream, whisking constantly. To this half-cup of basic mayo, add the scallions, curry powder and the grated onion. Taste for seasoning and adjust as needed, and refrigerate until ready to use.

To prepare and serve the salad, when the chicken is cool, remove and discard the skin, cut the meat from the bone, and dice it into 1/2-inch pieces. Give the cauliflower a rough chop so the pieces are no more than 1/2 inch. In a large bowl, combine the chicken, cauliflower, mayo, cashews, and raisins and toss until well mixed. Taste for seasoning, adding more salt, pepper or curry if you like. Scoop the salad onto toasted bread and enjoy.

Whoa, what a year. Nearly all the MLS reportable markets across Alaska experienced residential home sales at a rate above what we’ve seen in the past 5 years. As we look to 2016, there are many question marks in regards to the state budget, the price of oil, and the effects of these factors on our housing markets. As much as I wish I had a crystal ball to predict what will happen in the future, we’re going to take a look at the current market trends to establish a baseline.

The No Frills, Down and DirtyAlaska Real Estate Market Update

The following report is the dictated version of our most recent video blog which can be found at WesMadden.com/blog.

First off, in Anchorage the market is down to 485 active listings. The sales pending ratio is upwards of 38.4%, which means houses are still selling at a reasonable pace. It is still a strong seller’s market with only 1.9 months of inventory. The average number of days on the market is climbing slightly for homes that haven’t sold, but you can expect Anchorage to remain in a seller’s market throughout winter.

The same sort of thing is happening in the Matanuska-Susitna Borough. Active listings are down to 386. The number of days on market is over 100 days for homes that haven’t sold, so houses are hanging

out on the market a little longer but things are still selling at a reasonable rate, with a 37.9% pending rate. The good news is the list to sales price ratio is 98.9%. Values in this area look really good. The average sales price is over $255,000. We do have only 2.4 months of inventory, so it is a seller’s market here as well.

Fairbanks is down to 111 active listings. Out at North Pole, the number of active listings is even lower, with only 63 homes on the market! There are only 2 months of inventory available in both markets. Values are increasing nicely, and both areas have over a 30% pending rate, so homes are still selling at a reasonable clip.

The common theme across Alaska is clear: we need more inventory. Buyers are getting frustrated because they can’t find what

How to showyour appreciation to members of the militaryCivilians who join the military find their lives change forever upon entering the service. The armed forces shape a person, teaching discipline, humility, bravery, and many other life lessons. Joining the military often means making substantial personal sacrifices, as servicemen and women are typically called away from their families and the comforts of home.

1Thank a service member. If you see a person in uniform, thank them for their service to the country. Use the person’s title

if you can identify rank, or simply use the respectful terms of “sir or madam.” Though a simple gesture, a verbal token of gratitude can go a long way toward brightening a soldier’s day.

2 Volunteer with a veteran’s association. Volunteering is another way to show veterans and active service members how

much you appreciate the sacrifices they have made. Volunteer at a veteran’s hospital or help to organize an event that’s commemorating the efforts of local veterans and active service members.

3Propose an event to honor local service members. Petition a town council for a special parade to honor your community’s military

personnel, including veterans and active duty members.

4Raise funds. Fundraisers are another way to show military members how much you appreciate their service. Collect

money for a military-based scholarship, asking a local high school or university to establish the scholarship in the name of a local veteran or active duty service member

5 Provide a forum in which a serviceman or servicewoman can share his or her story. Soldiers can offer unique insight on issues

that affect civilians, and the community can benefit from servicemen and women who share their stories. When hosting a community event, ask a soldier to be a keynote speaker.

6Send gifts to active military. Make care packages or write cards and thank you notes to stationed troops. Organizations

7Help an active duty service member’s family. Spouses of active duty military personnel often must handle all of the

chores that come with managing a household on their own. To show how much you appreciate a service member’s efforts, offer to lend a hand around his or her house. This can make life easier on a service man or woman’s spouse, and your companionship may provide a world of good. You can even go the extra mile by organizing a military spouse appreciation night at a nearby church or recreation hall. Offer free babysitting and provide refreshments and entertainment.

8Publicly display your patriotism. Active duty service members and veterans joined the military to defend our way of life, and you

can show pride for your country and appreciation for their efforts by hanging a flag outside of your home.

9Pick up the tab. Surprise a person in uniform by paying for his or her meal at a restaurant. It’s a simple gesture, but it shows

how much you appreciate that service member’s sacrifice.

Gestures that show military personnel how much you appreciate them need not be lavish. Any and all expressions of gratitude can make a world of difference.

Various symbols and imagery breathe life into St. Patrick’s Day celebrations. In addition to Kelly green clothing, leprechauns and Irish flags, shamrocks are commonly seen decorating homes and people.The word “shamrock” comes from the

Irish seamrog, which is the diminutive form for the Irish word for clover, and translates roughly to “young clover.” Clover is a grass-like plant, and bees frequently use clover flowers as a prime source of pollen for honey production.Three- and four-leaf clovers are a stable

of Irish imagery and are commonly referenced upon the arrival of St. Patrick’s Day. Prior to Christianity and the work of St. Patrick, the Druids believed that they could thwart evil spirits and danger by carrying a shamrock. A three-leaf shamrock would

enable them to see the evil spirits and escape in time. A four-leaf clover was said to ward off bad luck and offer magical protection. The Druids helped establish the clover as a Celtic charm, and other folklore indicates clovers helped people see fairies and chase the little sprites.Around 400 AD, in many areas of

the world, including Ireland, pagan beliefs were being pushed out in favor of Christianity. The Irish were slowly converted to a new method of thinking, and this included a new way of looking at some once-popular Pagan symbolism. According to Christian teachings, Eve is said to have carried a four-leaf clover out of the Garden of Eden when Adam and she were cast out by God. Some believe that those who grasp four-leaf clovers hold a bit of paradise in their

hands. Some Christians also thought clovers were a symbol of the Holy Trinity, and some stories suggest that St. Patrick used a shamrock to teach principles of the Trinity to the masses. A three-leaf clover represents the Father, Son and Holy Spirit. Should a four-leaf clover be found, it is considered the Trinity plus God’s grace. The four-leaf clover looks like a cross, giving four leaf clovers special meaning to some people.Of course, the rarity of four-leaf

clovers makes some people who find them feel as if luck is on their side. Among naturally occurring clovers, the odds of finding a four-leaf clover instead of the more common three-leaf clover is 10,000 to 1. It may take some effort and quite a bit of luck to locate one with four leaves, and a five-leaf clover is considered by many to be unlucky.

3 ways to improveindoor air quality all year long

As winter wears on, it’s not uncommon for people living in cold weather climates to experience some cabin fever. Winter weather confines many people to their homes, making many antsy to get out once the first signs of spring begin to appear.

In addition to contributing to cabin fever, winter weather can have a negative impact on indoor air quality. While air pollution is something most often associated with densely populated cities, the air inside homes is not immune to pollution, especially during long winters when windows are often closed for months at a time. Though open windows in spring and summer can vastly improve indoor air quality, there are ways to ensure that air stays fresh and healthy regardless of which season it happens to be.

1Clean the floors. Dirty floors are one of the chief contributors to poor indoor air quality. Dust, dirt, pollen, and

pet dander can accumulate on floors, leading to poor air quality and poten-tially aggravating respiratory conditions such as asthma. When vacuuming, use a vacuum with a HEPA filter, which is a uniquely designed mechanical air filter that traps harmful particles such as pollen, pet dander and dust mites. When you finish vacuuming, mop floors to gather any dust or allergens that escaped the vacuum.

2Control indoor air moisture. Moist air is great for dust mites and mold, both of which are very bad for humans, so do everything

you can to maintain healthy levels of indoor air moisture. Dehumidifiers can reduce indoor air moisture and control allergens, but it’s important to take ad-ditional steps as well. When bathing, try to keep a bathroom window open on a slight crack to prevent mold growth. When preparing meals in the kitchen, make use of your exhaust fan. In addi-tion, don’t overwater houseplants, as they can become breeding grounds for mold.

3 Resist synthetic fragrances. A home that smells good tends to feel more pleasant, especially dur-ing winter months when windows

are closed. But synthetic fragrances, such as those found in detergents and air fresheners, may be providing that wel-coming scent at a heavy cost to a home’s inhabitants. Such fragrances may be emitting various chemicals, including volatile organic compounds, or VOCs, into the air, affecting indoor air quality and possibly even human health. When buying laundry products, look for those that are fragrance-free, also choosing home cleaning products that do not include any artificial fragrances. Indoor air quality tends to suffer in colder months, when windows are closed and doors are open only briefly. But homeowners can take a handful of simple yet effective steps to ensure the air in their homes is healthy all year long.

Irish Soda Bread with RaisinsIngredIents:Makes 1 loaf

Nonstick vegetable oil spray 2 cups all purpose flour 5 tablespoons sugar, divided 11/2 teaspoons baking powder 1 teaspoon salt 3/4 teaspoon baking soda 3 tablespoons butter, chilled, cut into cubes 1 cup buttermilk 2/3 cup raisins

Soda bread has become a staple of St. Patrick’s Day celebrations. But the tradition of Irish soda bread is a relatively recent one, especially when considering the extensive history of Irish culture.

In the 1800s, yeast breads were practically unheard of in rural Ireland. Yeast bread took a while to make and the results were not consistent to make it a worthwhile venture for many households. Instead, people began experimenting with baking soda as a leavening agent. Not only was it a quick way to produce the aeration necessary for bread, the results also were more consistent than using yeast.

The first soda breads featured only a few basic ingredients in addition to the baking soda, including

salt, buttermilk and flour. The bread was served often with fresh, churned butter. It is a recent change to the recipe to include other flavoring agents, like sugar, currants, caraway seeds, and raisins.

Although soda bread can be easily purchased at a bakery or supermarket, it’s more traditional to try to bake it at home. Here is a recipe for “Irish Soda Bread With Raisins,” courtesy of Epicurious.com.

tO BAKe tHe BreAd: Preheat the oven to 375 F. Spray an 8-inch-diameter cake pan with nonstick spray.

Whisk flour, 4 tablespoons sugar, baking powder, salt, and baking soda in a large bowl to blend. Add butter. Using your fingertips, rub in until coarse meal forms. Make a well in the center of the flour mix-ture. Add the buttermilk, gradually stirring dry ingredients into the milk to blend. Mix in the raisins.

Using floured hands, shape dough into a ball. Transfer to the prepared pan and flatten slightly (dough will not come to the edges of the pan). Sprinkle dough with remaining 1 tablespoon sugar.

Bake bread until brown and when the tester inserted into the center comes out clean, about 40 min-utes. Cool the bread in the pan for 10 minutes. Transfer to a rack. Serve warm or at room temperature.

Soda bread is often served as an accompaniment to corned beef dinners on St. Patrick’s Day.
