Step 2: Square off both ends of the muscle. Begin cutting across the grain, starting at the

thicker end of the muscle.

Step 3: Cut the entire muscle into medallions of equal thickness, from 1”-1 ½” thick.

Step 4: Merchandise the medallions as Petite Tender Medallions that are excellent

for grilling or broiling.
