Pour 3 qts boiling water (212˚F). Add potatoes, stir and cover. Let stand for 12 minutes, until combined. Ready to use in your recipe.

Warm 2 cups of heavy cream and 1 cup butter and add to potato base.

Whip to desired consistency. Season to taste.
