iNGreDieNtS:1 package large dried rice wrap-•pers (also called "rice paper") (Obtainable from Spargs Super-spar or the food store at the new Chinatown)1 cup cooked chicken or turkey, •sliced or cut into bite-size pieces, andtossedin2-3Tbsp.fishsauce (OR 2 Tbsp. soy sauce) - If Vegetarian, substitute baked tofu 1 cup fresh coriander leaves•1 cup fresh sweet basil, roughly •chopped if leaves are large1/2 large cucumber, sliced into •matchstick-like pieces1 carrot, grated•1 cup fresh bean sprouts•

Except for the rice rolls, place each of the above ingredients in a separate bowl and set aside.Fill a large bowl half full of hot water (but not scalding, as you will havetodipyourfingersinit).Placebowl and wrappers on a clean working surface, such as a cutting board.Take out one of the rice wrappers and place it in the bowl of hot water. You may have to gently press the wrapper down into the water. The rice paper will soften in approximately 30 seconds.

Working always horizontally, place slices of the chicken (or tofu/wheat gluten) toward the end of the wrapper. Now add some of the cucumber on top.Now add a little carrot, fresh corian-der, basil, and bean sprouts.Begin to roll by folding the bottom portion of rice paper over the ingredients.Continue by lifting the right side of the wrapper and folding it over the ingredients.To complete the roll, fold top side down, OR roll the spring roll forward until all the end of the rice paper. Try to keep your folding/roll-ing as tight as possible. The ingre-dients should appear at one end to create an "open" type of fresh roll. To secure the roll, simply dip your fingersinalittlewaterandwettheendflap,thenpresstoseal.Placeuprightinabowl(likeabou-quet), or on a platter. Serve with hoisin sauce and/or Thai Sweet Chili Sauce (available at most large supermarkets in the Asian section, or in Asian/Chinese food stores). These fresh rolls pair well with a cold lager, or a glass of chilled whitewineorPinotNoir.

From two wheels to four, from takkies to riding boots, from beach balls to bowling balls and pins there is something for everyone right here on our doorstep. For those who have brought their mountain bikes there are many trails to uncover, 4x4 fanatics can have an outdoor adventure just a few kilometres away. Communing with nature has many rewards and there are two surburban nature trails which could provide you with some special sightings of local flora and fauna.

MountAin Bike trAils: Try out 3 Silos for the hardened mountain biker. There is a 20km,15km and 10km loop with some tricky descents and serious climbs. Lavender Blue is easier and shorter with a relaxing loop through a forest - an awesome single track. Both have honesty boxes in which to post your entry fee, which are cheap at R10 and R20. 2 Swans, Hempels Farm and Horseshoe Valley and Diesel Hill are also self-ride and well worth it – more info and maps on the routes at www.ecmtb.co.za

De krAAl outDoor ADventures: From 4x4, quad bike and motorbike trails to family braai’s along

the river, De Kraal is the perfect way to enjoy a day on a farm, breathing fresh air. You could make it a family weekend and stay over or just go for the day. On the N2 to Mthatha, 9km after the first Brakfontein turn-off. Open 9am-6pm everyday. Call Lizette on 082 449 8615 for more info.

DAssie trAil: a fantastic 2km walk along a boardwalk through the Nahoon Estuary Nature Reserve over mud flats, mangrove and forest. Keep your eyes open for some special bird spots. Best to go in a group. Free entrance, weekdays only 8.30am-4pm. Blue Bend Road, off Beaconhurst Drive, Beacon Bay.

this summertHe GonuBie nAture reserve trAil: runs through coastal vlei’s and keen birders will find a hide along the route. A second hide overlooking a dam has been badly vandalised and birders are asked to avoid going into this one. Best to go in a group. 16th Avenue in Gonubie (behind the Spar in Gonubie Main Road). Free entrance, weekdays only, 8am-3.30pm.

PArk run: On Saturday mornings at 8am join the gang through Nahoon Point Nature Reserve for a 5km run/walk. It can be tricky at times with soft sand and large step-ups but you don’t have to be Comrades fit to complete it. Also at Kidd’s Beach and Sunrise-on-Sea for those of every ability and any age. Free entry, however if you want to be timed enter on the Park Run website: www.parkrun.co.za

WilDcoAst HorseBAck ADventures At kei MoutH. For the novice to experienced rider, one to 10 day rides discovering areas of the Wild Coast. Three beach ride options: R200 for the inexperienced rider gets you an hour-and-a half, R350 is two-and-

So December holidays are upon us and with that comes enter-taining family and friends. Of course at this time of year East London is known to deliver a rain shower or two so we thought we would give you some alternatives to the beach.

Luckily there are plenty of art galleries and museums sure to appeal to a variety of interests all within the greater East London area. We also have our very own craft brewery in the Emerald Vale Brewing Company based in Chintsa.

East London’s museum is most famous for its coelacanth exhibit – this prehistoric fish was thought to be extinct until it was caught off an East London beach. Just a short drive to King Wil-liam’s Town is the Amatola Museum which features Huberta, the wandering hippo, who caught the world’s attention on her two-and-a-half year trek from St Lucia in KwaZulu-Natal via Durban and East London to eventually end up in the Keiskamma River.

WSU B-TECH EXHIBITION: Opening 3- 12 December 2013

Walter Sisulu University BTech Fine Art students will be presenting their Portfolio Exhibitions later this year at the Ann Bryant Gallery in East London. The exhibi-tion opening will take place at 6.30pm on Tuesday 3rd December, and will be open to the public until Wednesday 11th December. The six exhibitors are all from the Eastern Cape. Their works reflect on local issues that also have wider national implications. They are: Philasande Me-jane, Mziwoxolo Makalima, Thembinkosi Qeqe, Namhla Ndlame, Bonga Sifumbe, and Siviwe Mfino.

I am an established fine artist, essentially a painter, but have not limited myself, and practice in many other mediums. I have been fortunate to have had access to many other aspects of art, including printmaking, ceramics, sculpture, pho-tography and stained glass. My first loves are drawing and oil painting. I feel that drawing is not stagnant and is extremely versatile in its choice and use of materials and drawing tools, which allows for all kinds of experimentation.

Born in the Eastern Cape of South Africa I feel that the Eastern Cape landscapes have certain wildness. I don’t deliberately look for subjects, but rather journal my travels, mainly though Transkei and the Great Kei River regions, and now recently the North Eastern Cape and the Southern Drakensberg mountains, it is this un-tamed wilderness that I find challenging to tame. Each scene is either drawn on sight or photographed and worked on later in the day, and sometimes many years later in my studio. Although much of my work is landscape orientated, I am by no means solely a landscape artist, as can be seen by a visit to the gallery, also each work is unique and never repeated.
