Message from the General Manager

Welcome to the festive edition ResortHighlights and our last for 2009. I hope that youhave enjoyed the many exciting activities andevents that we have presented at the Resortover the past year. As the saying goes, ‘tis theseason to be jolly’ – so relax a little, take thatwell deserved holiday or simply catch-up withfamily and some good friends. And what betterplace to do all this than RACV Royal PinesResort with the many festive events and newfacilities on offer over the coming months.

With 2009 being an uncertain year I wish toreflect on some of the positive events andactivities that the Resort has achieved over the year.

Our fundraising community program,Community One, completed raising the $25,000required for the training of our sponsored guidedog Tyson, and we have now turned our effortsto raising funds for our newest charity, theKidney Support Network that providesinvaluable voluntary support to around 500renal patients and carers on the Gold Coast.In addition, the Royal Pines Walk for BreastCancer Group was awarded the accolade forentering the largest single group with over 50participants and for next year, we expect todouble that number. As a special note, our Golf&Sports ‘Movember’ boys also raised over $200for prostate cancer last month – a great effort.

On the dining front, RPR’s Restaurantreceived the Gold Coast’s Best Fine DiningPeople Choice Award and I hope that you havesampled the great value $49.50 three coursedinner promotion. Arakawa’s early-birdteppanyaki dinner has been a terrific hit andour Kalinda Seafood Buffet continues to be alocal’s favourite for special and socialoccasions and family gatherings.

And as for family fun, our newest restaurant,Trattoria Amici, is scheduled to open in lateDecember and will offer a casual and relaxedatmosphere for all dining occasions. Theadjoining children’s playground will house a newgiant 10m x 8m jumping pillow that will givethe children (and parents alike) endless hoursof playtime. Returning over this school holidayperiod, will be our kid’s club program, ‘TheRoyal Rascals’ providing fantastic activities forthe children and will operate seven days weeklyuntil the end of January. Be sure to also look outfor the kid’s cooking classes in this edition.

Some of our signature highlight events will beback at the Resort next year including the LocalCommunity Family Fun Day in January, thehosting of the 10th Anniversary of the BruceLynton Charity Ball and the 21st AustralianLadies Masters Golf Tournament in March.

Complementing the many wonderful Resortevents we have planned in the New Year, RACVremains committed to providing all AutoclubMembers and our guests with the best possiblefacilities. In 2010, we will be opening 5 newaccommodation suites on Level 22, an exciting21st floor executive lounge and a new lookRPR’s Restaurant and bar area following anextensive renovation.

Harry Brough Celebrates his 90th Birthday

In June this year the Resort was privileged tohost Harry Brough’s 90th birthday celebrations.This special occasion was held in KalindaRestaurant with Harry surrounded by familyand friends.

Harry is a long standing member of RACVand we would like to thank Harry for his loyalmembership and wish him all the very bestfor his 90th birthday.

Celebrating Melbourne Cup in Style

The Resort hosted two events to celebratethe festivities of Melbourne Cup with bothvenues being sell out events.

RPR’s Restaurant guests were treated to aspecialty 3 course menu created by ChefMatt Dixon while guests in Kalinda Restaurantindulged on a lavish seafood buffet.

Fantastic fashion parades, sweeps andraffles were running hot in both venues withall funds raised going towards the KidneySupport Network.

Fashions were at an all time high in bothvenues with ladies looking glamorous andthe gentleman exceeding all expectations.

We hope everyone had a fantastic day and we look forward to welcoming you all backnext year.

ANZ Ladies Masters4 to 7 March 2010

The ANZ Ladies Masters will return toRoyal Pines Resort in March 2010. Thenew date was confirmed in October as aresult of a late scheduling change on theUS LPGA Tour, and is necessary to avoid aclash with the opening of their season inSouth East Asia early next year.

The Resort is looking forward towelcoming crowd pleasures such asdefending champion Katherine Hull,Karrie Webb and Laura Davies back to thefairways and greens.

Community One

Community One is the Resort fundraisingcommittee and is supported by Royal PinesResort staff and residents.

The Resort has chosen its new project and iscurrently in the process of raising $5,000 tohelp the Gold Coast Branch of the KidneySupport Network. The Kidney SupportNetwork help Gold Coasters who aresuffering from Kidney disease withinformation, transport to treatments, familysupport, accommodation, medical equipmentand education programs. We are confidentthat our $5,000 will help contribute greatly.

Over the years Community One has achievedsome great results working with a variety oforganisations. (see right)

2007/2008In conjunction with Children’s InternationalRoyal Pines Resort was able to raise funds tobuild a brand new childrens playground in apoverty stricken area of Mexico. Over $10,000was raised to build the playground.

Also during this year the Resort was able tosupport a staff member’s niece, Sienna Goongwho suffers from Tuberous Sclerosis. TheResort was able to purchase Sienna a KimbaSpring Stroller, Kimba Spring Car Lift, Bath &Show Chair and Standing Frame totalling over$9,000. This equipment will assist to make lifea little easier for Sienna and her family.

2008/2009Royal Pines Resort was proud to sponsor‘Tyson’ our Guide Dogs QLD puppy. TheResort raised $25,000 to put Tyson throughan intense 3 year training program. Tyson isnow 18 months old and progressing throughhis training. Hopefully in the next year he willbecome the eyes for a vision impairedQueenslander.

Introducing Paul Williams

Paul Williams, Senior Sous Chef runs a busy production kitchen with up to 12 chefsworking at one time catering for conferencesand events from 8-1800 guests.

Paul oversees the kitchen operations forconferences and events including cateringlogistics, staff management and menus.During Paul’s 12 years with the Resort hehas worked in all our Kitchens but hispassion lies with events.

Paul is preparing for the 2010 ANZ LadiesMaster event in March which involvescatering for multiple indoor and outdoorfunctions catering up to 4000 guest per day.Paul and his team will be catering for thegolf course outlets and corporate boxesincluding the catering for formal eventswith a host of VIP's in attendance.

RACV Apprentice of the Year Awards

RACV Resorts Apprentice of the Year Awardswere held at the RACV City Club in Melbourneon 27 September 2009. 12 Chefs fromvarious RACV Resorts were rewarded fortheir dedication and hard work with SteveBarrington and Nick Pagura representingRACV Royal Pines Resort.

Both Steve and Nick have now completedtheir apprenticeships at RACV Royal PinesResort and are employed full time. DuringSteve’s 4 years and Nick’s 3 years with theResort they have gained valuable experiencehaving worked in the 6 kitchens within the Resort.

Congratulations to Steve and Nick.

White Christmas PuddingIngredients100 mls hot water70 grams white chocolate couverture70 grams unsalted butter120 grams caster sugar1 egg1 level teaspoon baking powder100 grams plain flour2 cups of mixed frozen berries12x 100ml moulds

Method• Preheat oven to 160 degrees• Stir white chocolate into the hot water

until the chocolate melts• Add butter and sugar to chocolate & mix• Add egg and sieve in combined baking

powder and flour• Spray moulds with light cooking oil

Fill 12 moulds to half way with chocolatemixture. Top with 1 teaspoon of frozenberries and fill to ¾ measure with chocolatemixture. Bake at 160 degrees for 25 minutes Tip puddings onto cooling rack straight fromthe oven and serve upside down topped withfrozen berries, glazed strawberries andcustard sauce.
