Cap plunged twice daily during primary ferment Fermentation Ambient prefermentation soak of 68 days. Indigenous fermentations were slower to begin and hence preferment soak was longer than usual. Ferment temps peaked at 2832˚C. Total time on skins 1926 days Maturation 12 months maturation in 228 litre French oak (21% new) Malolactic Full MLF completed in spring/early summer uninoculated Bottled Blended in midMarch and allowed to remain a further eight months in tank prior to bottling in December 2015, unfined and course filtered only Analysis 14.5% Alc, 3.76 pH, 5.4 g/L TA, <1 g/L R/S (Dry) Style The older UCD5 and AM10/5 clones are the basis of the darker berry characters, concentration and finegrained structure underlying this wine. Dijon clones (in this vintage B777), offer brighter, red fruit and floral notes which enhance elegance and energy. The style seeks to express a complex range of fruit and processderived aromas, flavours and textures.
