advanced flowering and our earliest harvest to date. High rainfall in early March was cause for concern but was followed by a month of perfect weather extending through harvest which was completed in time to avoid prolonged rainfall from mid-‐April on

Processing De-‐stemmed to open top fermenters (1–4 tonne). Cap plunged twice daily during primary ferment
Fermentation Ambient pre-‐fermentation soak of 6-‐8 days. Indigenous fermentations were slower to begin and hence pre-‐ferment soak was longer than usual. Ferment temps peaked at 28-‐32˚C. Total time on skins 19-‐26 days
Maturation 12 months maturation in 228 litre French oak (21% new) Malolactic Full MLF completed in spring/early summer un-‐inoculated Bottled Blended in mid-‐March and allowed to remain a further eight months in tank
prior to bottling in December 2015, un-‐fined and course filtered only Analysis 14.5% Alc, 3.76 pH, 5.4 g/L TA, <1 g/L R/S (Dry) Style The older UCD5 and AM10/5 clones are the basis of the darker berry characters, concentration and fine-‐grained structure underlying this wine. Dijon clones (in this vintage B777), offer brighter, red fruit and floral notes which enhance elegance and energy. The style seeks to express a complex range of fruit and process-‐derived aromas, flavours and textures.
