Day 01: Gastronomy Business and Design
We will star our program in Barcelona, the design city per
excellency, this day we will be exploring one of the most
successful designed products, concepts and restaurants
by the hand of experts in gastronomic concept creations,
industry products and architecture and design firms.
To succeed in the world of gastronomy you need to stand
out, and to stand out you need to share your talents with
authenticity and flair. On this day we learn about the im-
portance of creativity and inspired design as applied to
gastronomy, using successful case studies as examples.

learn the importance of aesthetics
and design.

Talk and preparation of different
dishes at Pura Brasa restaurant
and Josper Headquarter, as a
successful business based on a new
gastronomic concept (Passion for
Grilling) developed by the company.

of the city. This is an optional extra
and requires advance booking.
*1 Alkimia is a Michelin-starred restaurant
located in the city center of Barcelona,
on the main floor of a modernist building
(dating back to 1864) left unoccupied for 40
years. The project design has been carried
out taking into consideration two elements:
the pre-existing architectural context
(including its old patina and typology) and
the specific gastronomic offer of the chef
Jordi Vilà (which is 80% based on fish).

Oilmotion is a all-round gastronomic
studio that develops advisory services
and consultancy for the design, definition,
implementation, control, evaluation and
improvement of gastronomic offerings in the
catering, the Horeca channel and the food
industry.
Its objective is develop products and/or
services that are consolidated in the projects
of its clients. Contributing those values and/
or defined results, to guarantee that they
reach the final client in the best conditions
and according to the objectives set.

Barcelona is a city full of Markets. As we all know, fresh
products are the base for any kind of cuisine. La Boqueria
is one of the most renowed, not only as a turistic spot but
also for Chefs and Food Lovers from all over the world.
But that is not the only one. Each neighbourhood has
its own. Let's find out about the history behind the main
markets in the city, enjoy trying new flavors and smells.

Basque culinary center
Days 04 and 05 Gastronomy as a city brand.
San Sebastián is one of the cities in the world to hold the
highest number of Michelin stars per square metre (only
beaten by Kyoto in Japan, and well ahead of cities like
Paris and Lyon). Why and how?
Another indicator of the city’s fine dining is the fact that
it is home to the first faculty of gastronomy in the world,
the Basque Culinary Center.
The Basque Culinary Centre contains the Faculty
of Gastronomic Sciences located in Donostia, San
Sebastián, and is attached to Mondragon University
and the Centre for Research and Innovation in Food
and Gastronomy. Housed in a unique building that
has won several awards, and equipped with the best
facilities, this is a space where food enthusiasts and
catering professionals live side-by-side, hosting events,
conferences and seminars.

Basquetour, followed by a guided tour of
the most relevent sights of the city.

Basquetour is the public company of the Ministry
for Tourism, Trade and Consumer of the Basque
Government, created in 2006 to head the
promotion and implementation of the strategy
for competitiveness established for the Basque
Country, defined nowadays in the “Strategic Plan
for Basque Tourism, 2020", in conjunction with
the public and private organisations which make
up the tourism industry in the Basque Country
and according to the "Responsible Tourism
Strategy of the Basque Country".
