by JamEs E. duffy suggEstEd gradE lEvEls 9–12
Modern Automotive Technology, updated for 2014, is a comprehensive textbook organized around the ASE automobile test areas that supports career readiness for those wishing to pursue a job in the automotive industry. It details the construction, operation, diagnosis, service, and repair of late-model automobiles and light trucks. Using a building block approach, students first learn the fundamentals of automotive systems and then progress gradually to complex diagnostics and service procedures. Updated content throughout the textbook, including a new Fundamentals of Electricity and Electronics section and a new Superchargers and Turbochargers chapter, prepares students to service today’s vehicles. This book is also a perfect reference for experienced technicians preparing for industry certification.
• The text is correlated to all three sections of the 2012 NATEF Task List.• ASE-type questions are included to facilitate certification preparation.• Troubleshooting charts in service chapters support quick diagnosis.

CNC Machining is designed to teach students the processes, tools, programs, and machines found in industry. The end result is the efficient use of CNC milling machines, lathes, and electrical discharge machines. A learning-friendly presentation consists of clear text and math content along with easy-to-follow drawings and photos. Included are 3-axis CNC machining centers and 2-axis turning centers, creating a baseline knowledge that can be applied to other setups.
• By focusing on the commonly used G- and M- codes, students develop the skills needed to use all CNC machines, not just those from a specific manufacturer.
• Students can gain hands-on experience by editing and running the included programs.• Programs are written in long form to ensure that beginning students learn the proper
language before they encounter shortened versions on the job or elsewhere.

The Science of Flavor—Maillard ReactionWhat gives cooked meat that tantalizingappearance, irresistible aroma, and un-matched flavor? When meats are cooked at high temperatures, a chemical reaction occurs that produces these desirable results. The name for this science behind the flavor is the Maillard reaction.
The Maillard reaction is the result of basic elements of the food combining, which yields the distinctive brown color. For this reason, it is also called the browning reaction. In addition to lending color, the by-products of this reaction produce wonderful flavors that are the trademark of many roasted and grilled meats.
The Maillard reaction occurs in foods such as cooked meats, toasted breads, and beer. These foods contain the necessary elements for the reaction to take place—proteins and sugars. The chemistry behind the reaction is quite complex, but luckily it is not necessary to understand the chemistry to prepare delectable dishes.

ObjectivesAfter studying this chapter, you will be able to

• recognize challenges facing the foodservice industry.
• understand the role of the culinary profession in the hospitality industry.
Many people believe the key to happi-ness is finding a job they love. Often people who work in commercial kitchens find great happiness in their work. Professional chefs get fulfillment by combining their creativity with a love of good food to delight their customers. As you begin to explore this exciting and rewarding career, it is impor-tant to understand the industry that offers cooks and chefs the chance to practice their craft.
An Overview of the Industry
Foodservice is the business of making and serving prepared food and drink. It includes restaurants, hotels, clubs, catering, school and business feeding, healthcare facil-ities, convenience stores, airlines, railroads, and cruise lines. Foodservice is a service industry. In recent years, the economy has seen greater growth in service industries than in manufacturing jobs.
The size and scope of the foodservice industry is so large that it is hard to grasp. According to the National Restaurant Association, foodservice operations sell over $1.7 billion in meals, snacks, and beverages each day. Consider how many meals your family eats away from home in an average week. You may have dinner at your favorite restaurant. Maybe you and your friends go out for pizza. Count the lunches you eat in your school cafeteria. Do you stop for fast food or buy a snack from a vending
