with her husband, Steve, who along with Matt, Ice Art’s other full time sculptor, crafts all of the ice sculptures, ice bars and drink luges by hand. “And since we don’t use computerized routers or molds, anyone can get pretty much anything they want and we can individualize each piece we create.”

Ice Art is the only company in Virginia that still hand carves each piece, which is why they frequently deliver to Richmond, D.C. and even Baltimore. They custom make their own ice blocks so the sculptures created from them will last longer than ordinary ice, even for an outdoor wedding in the middle of the summer. In addition, that means that each customer can include special touches to their sculpture, such as flowers, photos or other items to add nostalgia or whimsy to the finished piece. Supplemental lighting can also be used to make the sculpture even more stunning visually.

“Our ice sculptures will look good for about six hours and will last for eight hours or more indoors,” says Andrea. “It doesn’t melt down the way regular ice does because the process we use to make the blocks removes all the air bubbles. So it’s technically denser, harder and clearer ice that doesn’t melt the same way. It more ‘softens’ than melts. If you look at a sculpture at the end of a party, it will still look like what we carved, just softer. But if someone is having a party down in the Outer Banks outside in the summer, I wouldn’t recommend something like a swan or anything with a thin appendage. I would recommend something more solid, like a dolphin or something else with more weight to it.”

know what you have in mind. “Usually people will verbalize to me what they are looking for and a lot of people come to us not knowing what they want at all—they just want something ‘fun.’ I ask them what their theme is, what their budget is and then I can start pitching ideas to them from there. Sometimes people sketch things out or they share pictures they’ve found online or at someone else’s party. I keep an archive of tens of thousands of pictures, so I can get an idea what they are looking for and shoot them an email with three or four images to see what they think. There is usually one or more they like and we can adjust it to fit their specific needs.”

Sweet Taste Of SummerOld Fashioned Fudge Delights With

Seashore MemoriesBy Patrick Evans-Hylton

MIngredients

4 ounces unsweetened chocolate, chopped 3 cups sugar

1⁄8 teaspoon salt 11⁄4 cups milk

2 tablespoons light corn syrup 4 tablespoons butter, cubed 1 teaspoon vanilla extract

1 cup chopped, roasted nuts, optional

MethodCombine the chocolate, sugar, salt,

milk, and corn syrup in a large, heavy-bottomed pan over medium-high heat.

Heat, stirring constantly, until the choco-late melts and the sugar dissolves. Reduce

the heat to medium and cook, stirring frequently, until a candy thermometer inserted into the mixture reads 238

degrees, soft ball stage.

Remove the pan from the heat and add the butter.

Let the mixture cool to 120 degrees, 10 to 15 minutes. Add the vanilla and stir

the mixture until it thickens, 3 to 5 minutes. Stir in the nuts, if using.

Pour the mixture into in a greased 8-inch square glass baking dish and let sit until firm, about 1 hour. Cut into

1-inch squares. Any fudge that isn’t eaten immediately can be stored in an airtight

container for several days.

Yields 16 (1-inch squares)

High-Tech TipsWedding Hashtag: Anyone can create a

hashtag about anything, so make sure that your wedding hashtag:

Isn’t already taken or isn’t something common that could get mixed with another couple’s wed-ding photos, especially if you have a common last name. Hint: #joneswedding is taken.

Is easy for guests to remember. Keep it as short and sweet as possible while staying original. Avoid: #ashleighandjacksengordonsperfect wedding2015omgyessss

Can be easily found. Don’t make guests learn by word of mouth what the hashtag is or else they may get it wrong or just create their own. Display it prominently in a fun but not obnoxious way.

Live-streaming: This is a thoughtful way to ensure that faraway friends don’t miss out on the excitement, and with options like Facetime, Skype or Ustream, it’s easier than ever to make this happen. Just make sure you designate someone to be in charge of filming (ensuring they’re not in the photographer’s way), and have the necessary wifi information handy and tested so that you’re not scrambling at the last minute.

Charging Stations: Along with having the most commonly-used Smartphone chargers present, you’ll also need to think of a creative way to set up your charging station so that it’s not just a power strip with a bunch of cords tangled together. Adorn your station in a way that matches your theme, whether it’s rustic apothecary-style drawers or containers filled with plants to hide those unsightly wires. Make sure to display a sign designating the area.

By now you’ve probably downloaded all the necessary apps that go along with planning your wedding, but have you given any thought to how technology will be applied on the day itself? Ultra techie couples are getting creative with ways for guests to be digitally interactive like live streaming the ceremony for out-of-towners, designating a hashtag for everyone to share pictures and even featuring charging stations at the reception so that no guest will risk the dreaded low battery alert as they capture the bride and groom’s first dance.

On the other end of the spectrum, some couples consider technology to take away from the simplicity and true meaning of the wedding, and they’re going as far as asking guests to leave their phones at the entrance and collect them upon departure. Here are some tips for harmonizing the iPhone with the I do, whether you want your wedding day to be high tech or no tech.

No Tech TipsUnplugged wedding: When guests are buried into their phones,

whether they’re sharing photos or playing Candy Crush Saga (Aunt Joyce, how could you?), it’s hard for them to truly be present in the moment. Besides, you paid good money for your photographer and aren’t relying on anyone else’s photos they snapped on their phones. While this logic is reasonable and understandable, prohibiting phones altogether could make guests feel like they’re being punished.

Consider only banning phones during the ceremony but not the reception.

If you decide to ban phones from the whole wedding, make sure guests will know in advance by posting your power down preferences on your wedding website.

Rather than confiscating guests’ phones upon entrance, a simple announcement from your officiant or in the wedding program will suffice. After all, you guests are not children and won’t appreciate being treated as such.

If you’re banning technology, don’t try to make up for it by plac-ing disposable cameras on guests’ tables. It’s 2015. You’ll just look dated and/or cheap.

When a bride or groom checks their phone excessively on their own wedding day. You’ll get a chance to respond to that text and check out those photos of you walking down the aisle—at a later time. Focus on the people who are there with you in the moment: specifically your new spouse.

When a bridesmaid posts a picture of the bride before she walks down the aisle, spoiling it for guests and for the groom.

When a bride walks down the aisle and is greeted with a sea of phones and tablets rather than guests’ faces.

When guests get in the way of the photographers’ shots by holding their phones or gigantic tablets up high, kneeling in the middle of the aisle or ruining the lighting with their excessively bright flash.

When a guests’ cell phone rings during the vows—yep, it still happens.

Who: Kallen Harcourt, account executive, and Kyle Carlson, career firefighter. When: Sept. 6, 2014. Where: The Yacht Club at Marina Shores in Virginia Beach. The couple chose their venue for its beautiful deck overlooking the yachts during the ceremony. The marina was a lovely location with ample space for their coastal reception. Guest List: Approximately 115 guests mainly traveled from Virginia but as far as Michigan, Ohio and Florida. Where They Met: Kallen and Kyle met while attending college together at Radford University. The Engagement: After Kyle asked Kallen’s father for her hand in marriage, they customized the engagement ring together. The two then devised a plan for Kallen to meet Kyle at a hotel at the Virginia Beach Oceanfront for a fun night out on the boardwalk. “Once I opened the door to the hotel room, I heard music and saw petals everywhere! I assumed we were in another person’s room so as I turned around in a hurry to get out the door, Kyle was already on his knee,” Kallen says. Wedding Wishes: When planning their wedding, Kallen and Kyle wanted to play on their personalities—“low-key, relaxed but fun and beachy,” Kallen explains. “Knowing that we had very similar taste in colors and decorations made the beachy-relaxed wedding atmosphere very easy to organize.” Instead of flower arrangements for centerpieces, the couple opted for palm leaves and bowls filled with sand and shells to accent their theme. Guest List: Approximately 150 guests traveled from Virginia, Maryland, Pennsylvania, Nevada, New Jersey and Wisconsin. Where They Met: Malcolm and Brittney met at a party through mutual friend and groomsmen, Brian. “We kind of just ran into each other; it was a flirty exchange,” Brittney says. After hitting the dance floor together, they left the party without exchanging numbers. A few days later Brian asked Brittany’s permission to give her number to her future husband. Once she obliged, Malcolm called her the next day. The Engagement: The day after Brittney’s birthday, she drove from Charlotte, N.C. to Chesapeake to spend a weekend with Malcolm and their friends. She arrived at his mother’s house to wait for him. But she then began to receive instructions from Malcolm to come meet him. “As I’m leaving I say bye to his mom, Ms. Valerie, and she looks at me a little funny and says, ‘Will you be back?’ I now know that her funny look was probably because I was not dressed for a proposal, and she knew it was coming!” Brittney recounts. Once she arrived at a hotel, Malcolm gave her a room number. She opened the door to a candlelit room with birthday balloons and champagne. Still clueless and distraught from the long day, he began to tell her how much he loved her before reveal-ing a ring. “I immediately started laughing, and said ‘Are you serious?’” Brittany says. “I then reached over...laughing and crying and responded, ‘I almost ruined it.’ Of course I said yes!” Wedding Wishes: “The most important element to me was the black tie dress code. It is so rare that our families get together, and even more rare for us to get dressed up for a night out. I wanted our wedding to be an event that everyone would remember for years,” Brittany says. What’s Next: Brittney will graduate in May 2015, then pursue her law career. Since they love to travel, they’re hoping to celebrate their first wedding anniversary in Europe.

ood trucks are appearing at more and more wedding receptions throughout Coastal Virginia, and it’s not just because it’s a trendy thing to do. Having a food truck allows guests to experience an incredibly diverse menu. And the price fits in with most any budget.

So how do you decide which food truck is right for your reception? Eat the Streets 757 is a group of food trucks in Coastal Virginia that meet certain criteria: offering quality, out-

standing food, which sometimes qualifies as farm-to-truck, having excellent references and amazing customer service and being highly branded, meaning that the trucks have great curb appeal. All of the food trucks featured on their website, ets757.com, are available for wedding receptions and can create their menus based on what the couple is looking for.

“We have the ability to be extremely creative,” says Cassandra Ayala, creator of Eat the Streets 757, which she manages with Nichole Malbon of Malbon’s BBQ The Flying Pig. Ayala started Twisted Sisters with her sister, Tracy Busching, but now owns Sofrito, a food truck offering Puerto Rican street fare. Ayala says that food trucks bring a different kind of variety to weddings, and the option of bringing in different trucks offers multiple levels of excitement.

For instance, she says, a couple may elect to have one food truck set up to serve appetizers during the cocktail hour. Then a different truck may come in for the main course. And after that, perhaps a third truck will arrive for late-night snacks or even a full-on dessert truck. Or, the couple may favor having a variety of food trucks present all at the same time to give guests a variety of meal options. “If you have the budget it’s always fun to have two or three trucks come,” Ayala says.

Couples can create a ticket system for guests to control cost and food consumption, whether they want to have guests pick one full meal from a truck, with several trucks to choose from (running about $10–$15 a guest), or guests can taste items from a number of trucks (running about $15–$20 a guest). “Every food truck is able to fit within your budget,” Ayala says. “Tell us up front what your budget is and we can sit down and formulate a menu that’s going to fit in that budget and steer you toward amazing options that are going to pack a pow.”

The majority of trucks featured on Eat the Streets 757 are Whole Foods-approved with no preservatives, additives or even artificial coloring. It’s part of a movement called Farm 2 Truck, a partnership with Buy Fresh Buy Local Hampton Roads.

Food trucks are 100 percent self-contained, so if you’re looking to have a wedding in the middle of a field with a barn, a food truck can come to serve food, bringing its own water and power and taking away any trash.

This aspect makes mobile vendors ideal for backyard weddings, adding the element of upscale foods and desserts without having the additional workload. “It fits in with the budget of a backyard wedding but with the elegance of a formal reception,” Ayala explains.

l Before booking your food truck, you must first get permission from your wedding venue to make sure they permit food trucks on the premises. Some venues may approve couples to bring in a food truck for a late night snack menu even if they don’t allow them to cater the reception.

l Food trucks can be extremely busy, depending on the season. Be sure to book your truck far in advance.

l Make sure your mobile vendor has had experience serving large crowds. The last thing you want is for the truck to unexpectedly run out of food.

l Meet with your food truck owner in person. “Something like a wedding is too important to go over details on the phone, Ayala says. “Ask to meet face to face, sit down and talk about what you like.”

l Be honest when discussing budget. Most food truck owners are will-ing to work with couples in creating a menu that suits their tastes and financial needs.

l Go over specific details with your food truck owner and make sure it’s understood where they’ll be pull-ing up. “You don’t want a food truck pulling up and not knowing where they’re going to park as you’re get-ting ready to walk down the aisle,” Ayala says.

l Food trucks aren’t just for outdoor receptions. Plenty of couples arrange for their guests to go outside to grab their preferred meal from the truck, then come back in to eat.

l To alleviate long lines, have tables go to the food truck one at a time, just like you would if you were offer-ing a buffet.

l Even if you decide against having a food truck at your reception, there’s still the option of booking them for the bridal shower, rehearsal dinner or even to feed out-of-town guests staying at a beach house—no shop-ping, no prepping and no dishes.

eruption of tulle skirts bursting from the hangers at Coastal Virginia’s bridal shops meant one thing on our minds: a day at the ballet. We chose the most ethereal selection of gowns for our dancers to spend a morning pliéing, pointing and pirouetting at Norfolk’s Ballet Virginia International. Then we scurried downtown to Todd Rosenlieb Dance to put our prima ballerina on display for her final act and to catch the most magnificent sunset from a Norfolk rooftop.
