A perfect way to start your day or any time you need a snack.

Sustain pr tein powder

Vanilla Chia Seed Mousse, 3 servings

1 can of full fat coconut milk

1 teaspoon vanilla extract

¼ cup chia seed

5 – 7 drops of stevia, to taste

Blend all ingredients together in a high-speed blender until thoroughly blended.

Chill in the refrigerator for 2 – 3 hours before eating.

Serve with unsweetened coconut flakes and fresh blueberries.

Consume within 2 days.

Chocolate Chia Seed Mousse, 3 servings

1 can full fat coconut milk, chilled in the refrigerator overnight

3 tablespoons unsweetened cocoa powder

2 tablespoons chia seeds

1 tablespoon raw almond butter

5 – 7 drops of stevia, to taste

Scoop off the top layer of thickened coconut cream from the top of the can;

reserve the remaining liquid for future use in shake or smoothie.

Blend the coconut cream, and the remaining ingredients in a high-speed blender

until thoroughly blended. Chill in the refrigerator for 2 – 3 hours before eating.

Serve with fresh raspberries or blueberries.

Consume within 2 days.

For an extra treat, serve with a dollop of whipped coconut cream (recipe below).

Whipped Coconut Cream

1 can of full fat coconut milk, chilled in the refrigerator overnight

¼ teaspoon vanilla extract

5 – 7 drops of stevia, to taste

Scoop the thickened “cream” off the top of the coconut milk and place it in a

deep bowl, (reserve the liquid for smoothies).

Using a standing mixer or hand mixer, whip the cream until it resembles whipped

cream. Add vanilla and stevia and whip again till thoroughly mixed.

Store in a sealed container in the refrigerator for up to 5 days;

re-whip if it hardens in the refrigerator.

Coconut Yogurt, 4 servings

2 cans full fat coconut milk, chilled in the refrigerator overnight

1 teaspoon probiotic powder

1 tablespoon lemon juice

Pinch of sea salt

Scoop the thickened “cream” off the top of the coconut milk, (reserve the liquid

for smoothies). Place in blender with the remaining ingredients and blend until

smooth. Serve on its own, or with sliced fruit or berries, or in the parfait below

Apple and Coconut Yogurt Parfait, 1 serving

1 organic apple, peeled and diced

1 tablespoon grass-fed salted butter (such as Kerrygold) or coconut oil

Pinch of ground cinnamon

1 tablespoon chopped walnuts

Sauté diced apple in coconut oil or butter until soft.

Sprinkle apple mixture with cinnamon.

Layer apple with chopped walnuts and coconut yogurt, repeat, and

finish with the remaining chopped walnuts.

Sautéed Pears with Coconut Cream, 2 servings

2 – 3 medium-sized pears

2 tablespoons coconut oil or salted grass-fed butter, such as Kerrygold

1 – 3 generous dashes of cinnamon (and/or nutmeg or cardamom), to taste

Thinly slice the pears and discard the cores. Heat the coconut oil or butter in

a sauté pan and cook the pears until lightly browned. Sprinkle with cinnamon

and serve with fresh berries and/or Whipped Coconut Cream (recipe above).

Grain-Free Peach Crisp, 6 servings

Adapted from Elana’s Pantry

6 large peaches, sliced

1 tablespoon lemon juice

1 tablespoon vanilla extract

3 tablespoons arrowroot powder

1½ cups blanched almond flour

½ teaspoon sea salt

¼ cup coconut oil

1/8 cup raw honey

4-5 drops of stevia to taste

Preheat oven to 350°. Place peach slices in a large bowl, sprinkle with lemon juice,

vanilla, and arrowroot; toss to incorporate all ingredients.

In a smaller bowl, combine almond flour, salt, coconut oil and honey for topping.

Place peach mixture in a 3 quart baking dish or 9 inch pie dish.

Crumble topping over peaches.

Bake covered at 350° for 45 minutes, until peach juice is bubbling.

Remove cover and bake a few more minutes if topping is not yet browned.

Serve alone or with Whipped Coconut Cream (recipe above) or Coconut Yogurt

(recipe above).

Power Bars, 20 bars

Adapted from Elana’s Pantry

2 cups raw almonds or a mix of almonds, cashews, pecans (raw)

½ cup golden flaxmeal

½ cup unsweetened shredded coconut

½ cup raw almond butter

½ teaspoon sea salt

½ cup coconut oil

4 drops stevia

1 tablespoon raw honey (can be left out and replaced with additional stevia instead)

1 tablespoon vanilla extract

Shredded coconut to sprinkle

Place almonds, flax meal, shredded coconut, almond butter and salt in a food

food processor and pulse briefly, about 10 seconds.

In a small sauce pan, melt the coconut oil over very low heat. Once melted,

remove coconut oil from stove, stir stevia, honey and vanilla into oil.

Add coconut oil mixture to the food processor and pulse until ingredients form a

coarse paste. Press mixture into an 8 x 8 inch baking dish and sprinkle with the

shredded coconut.

Chill in refrigerator for 1 hour, until mixture hardens. Remove from refrigerator,

cut into bars and serve.

Thrive Market’s Matcha Ice Cream Cake, 1 cake

Special equipment needed: Springform pan

For the Crust:

1 1/2 cups raw almonds

1/4 cup coconut oil, melted

1 tablespoon raw honey

1/2 teaspoon sea salt

Line the bottom of a springform pan with parchment paper. Place the ingredients

for the crust in the bowl of a food processor and process until they form a paste.

Press mixture into the bottom of the springform pan. Chill in freezer.

Place both the bowl and the whisk attachment of a stand mixer in freezer for 15

minutes before use. Take out coconut milk cans from the fridge, remove the top

and scoop out the hardened cream, leaving the liquid behind.

Remove the chilled bowl from freezer and place the thickened cream in bowl of mixer.

Whip for 1 minute until thick and fluffy. Whip in matcha, vanilla, and honey. Whip in

coconut cream. Remove tin from freezer and pour matcha mixture over the crust.

Cover and return to freezer for at least 8 hours.

When ready to serve, remove the sides from springform pan, top with raspberries,

-and serve frozen.

For the Matcha Ice Cream:

2 cans full fat coconut milk, refrigerated overnight

2 tablespoons matcha powder

1 teaspoon vanilla powder

1/4 cup raw honey

2 tablespoons coconut cream

1 cup raspberries
