Welcome to our Community Kitchens (CK) winter newsletter. This season we are focussing on Men as coming up is:

MEN’S HEALTH WEEK: June 12 - 18, 2017

In Australia, Men's Health Week provides a platform for challenging and de-bating key issues in men's health and to raise the profile of men, their health outcomes and health needs around the country. Because the health status of males in most countries, including Australia, is generally poorer than that of females.

This year there are two themes:

“If men can talk about match fitness” (of sportsmen)5 Why is it sometimes hard to discuss their own health?

“If men can look after their families”5 Why is it sometimes hard to look after their own health?

Creamy leek, potato and bacon soup

20g butter 1 leek pale part only

1 brown onion

2 celery sticks

2 large potatoes

5 cups (1.25L) chicken stock

1/2 cup (125ml) thickened light cream

200g bacon, diced

Sour cream to serve

Chopped fresh chives

METHOD

Heat the butter in a large saucepan over medium heat. Add the leek, onion, celery and potato. Cook, stirring, for 5 mins or until the vegetables begin to soften.

Add the stock and cream. Bring to the boil. Reduce heat to low. Simmer, uncovered, stir-ring occasionally, for 25 mins or until soft. Set aside for 10 mins to cool. Use a stick blender to carefully blend soup until smooth.

Meanwhile, cook the diced bacon in a medium frying pan over medium heat for 5 mins or until crisp and browned. Stir one-third of the bacon into the blended soup. Ladle into bowls and top with sour cream, chives and remaining bacon. Serve with toast.

Bannockburn Men’s Community Kitchen

What do you enjoy most about the CK? It is social as well as having an opportunity to choose recipes, cook lunch and eat it together. It is an opportunity to mix with others and talk.

What has been some of the memorable experiences for the Men’s CK? Every 6 months or so we have an outing. Golden Plains provide the shire bus. We have visited Science Works Museum, Lorne & Forrest and Blackwood.

Also Christmas in July. We start at 8am, so it is a long day. We bring in a BBQ with rotisserie and use the oven to cook a full Christmas lunch. We have had cards & letters of appreciation.

What are your early memories of food?

When growing up meat and 3 veg was put on the table every

night, except Fri fish & chip night. Sun lunch was always roast

lamb. Chicken was very expensive and a rarity.

“I remember being sent to the butchers for 2 Ibs two tooth mutton

for 2 shillings”

Storing tomato paste- When tomato paste is in a large jar store it by freezing it in tablespoon-size por-tions in an ice-cube tray. Once they’re solid, transfer the cubes to a plastic freezer bag.

Hot tips- Kitchen tips and tricks

Reviving crystallised honey-Place the container in a bowl of hot water until the honey is smooth and runny, 5 to 10 minutes.

Preparing a salad in advance- Just layer the ingredients in one large bowl. Place the dressing at the bottom, then add sturdy, wilt-resistant vegetables (such as cut-up peppers, carrots, cucumbers, and radishes) and top with greens. Cover it all with a damp paper towel and refriger-ate for up to 12 hours. Toss when serv-ing

How to prevent potatoes from dis-coloring- Once peeling and cutting potatoes, to maintain their creamy colour, refrigerate the pieces in a container of cold water. Fully sub-merged, they’ll keep up to a day before cooking.
