Introduction

About CHOCOA CHOCOA is organised by Equipoise in cooperation with the Chocolate Festival Foundation, in order to promote sustainable cocoa and good quality chocolate production and consumption. The event attracts a wide audience and consists of a Trade Fair, the Cocoa Dinner, Conference and Festival.

The strategic position of Amsterdam, being the largest port for storage, handling and processing of cocoa, makes this region an international hub for the cocoa and chocolate industry. This reputation is further consolidated by the city’s contribution to the developments in sustainability to the cocoa chain.

About Equipoise Equipoise was created in 2014 by Caroline Lubbers and Jack Steijn, organisers of Chocoa since 2013. Equipoise is involved with projects improving the sustainability of commodity chains and develops initiatives that improve market conditions, on different levels of scale and impact, focusing on both the demand ánd supply side of the market. Chocoa is a practical demonstration of how this philosophy works, with two days of business to business events, the supply side, and two days of consumer events to increase demand for sustainable chocolate and cocoa.

Chocolate Festival FoundationThe Chocolate Festival foundation aims to boost the production of good cocoa (fine or flavour, single origin and sustainable cocoa) by informing consumers about the advantages in terms of quality, flavour and the production process.

Rodney and Enver started Chocolatemakers in 2011. We are a dutch bean to bar chocolatemaker based in Amsterdam with very good connections to farmer cooperatives.

Good quality chocolate for an affordable price thru direct trade is our main goal. In 2014 we have been awarded being the most sustainable company in Amsterdam. Making chocolate in the most sustain-able way is our quest, we need to show how the future should look like.

We sell our bars and couverture straight to shops in the Netherlands. We are well know with our ‘Tres Hombres’ bar. The beans from the Dominican Republic are brought in by the only sailing cargo vessel of the world; the Tres Hombres.

Due to our technical knowledge and enthusiasm and the lack of good machinery for small scale production, we started to make our own machinery and even selling it now.

Direct Cacao is a new association that was launched to give a voice to chocolate makers, chocolatiers and independent tasters, working with and supporting directly sourced fine cacao, as well as to the cacao growers that supply fine cacao. The association promotes the production of fine flavour cocoa and the consumption of fine chocolate.

The first objective is to develop a label that will assure the consumer that the cocoa in the chocolate bar has been directly traded between the cocoa grower and the chocolate maker, at a fair price.

Chocolate Baure is one of the very few, if not the only worldwide company making chocolate from the wild amazon harvest to the bar. The main feature of our product, is that the human being has no intervention in the growing of our cacao beans. This is why the chocolate that our custom-ers enjoy is made with real wild beans. The local people from the jungle, go deep into the rainforest to find the cacao trees, which are not all together. When they find them, they pick the pods and start fermenting and sundrying under our company s standars. When the beans are dried is when we buy them and start the process.

Hence, we talk about an amazon chocolate made in origin under the european know how and with the new european technology for chocolate. The result is a chocolate with a great potential in terms of quality and taste.
