4th August marked the 100 year anniversary of the outbreak of The Great War. There are many events across the World to mark the centenary. This month we pay tribute in our own special way.Probably the most interesting and patriotic claim is that fish and chips helped win the First World War. Lloyd George’s war cabinet recognised its importance to the nation’s working classes and ensured supplies were maintained off ration. It helped feed munitions workers and kept the families of the fighting men in good heart. Also in this issue we feature Little Britain star David Walliams, who enjoyed Britain’s greatest dish, with

his super model wife Lara Stone. We catch up with new NFFF Welsh Chair Steven Muscat on his journey thus far & his plans for the future. Event wise there is lots going on with the open day at Isle of Ely Produce, plus the Christmas Ball approaching fast & of course the KFE open day too. We are also pleased to be supporting the number one chipper’s exhibition Fry It, held in Bournemouth next March.

The losses were felt in almost every town and village in the UK and throughout what was then the British

Empire.The fighting continued until the 11th of

November 1918, Armistice Day.When we bow our heads in reflection

during two minutes of silence we remember

those who fought for our freedom during the two World Wars. But we also mourn and honour those who have lost their lives in more recent conflicts. Today, with troops on duty in Afghanistan and other trouble spots around the world, Remembrance, and the two minute tribute, are as important as ever. Lest we forget.

The 4th of August 2014 marked the 100th anniversary of the day Britain entered the First World War, a war that saw over 1 million Commonwealth service men and women killed.

By 1914 fish and chips as we would recognise them now were approaching their fiftieth birthday, and there were

more than twice the number of chippies across the UK than we can count today.

Professor John Walton, author of Fish and Chips and the British Working Class, said “The cabinet knew it was vital to keep families on the home front in good heart, unlike the German regime that failed to keep its people well fed, and that was one reason why Germany was defeated.”

Geared up to feed a nationBy the start of WWI the British fishing industry was in a period of rapid growth due to the increased demand as fish and chips became a national favourite.

Grimsby was regarded as “Britain’s Greatest Fishing Port” The two fish docks, managed by the Great Central Railway, had been regularly extended since 1857 to cope with the increasing number of fishing vessels, that by 1912 totalled 587 steam trawlers and just 23 sailing smacks.

A large steam-powered ice factory had opened in 1901 and was the “largest in the world” supplying crushed ice for both the trawlers and fish merchants along the new concrete pontoon.

There were up to eight express fish trains every day distributing fish rapidly to London, Manchester and the Midlands.

Fishermen had more than the weather to brave

The Infrastructure was in place and the demand was there, but these were not easy times for fishermen. The cold rough seas around our island nation weren’t all our brave fishermen had to contend with, now there were Uboats and mines.

On the night of 25th Sept 1916 the German submarine U57, under command of kaptain Ritter von Georg, sank amongst others 11 Scarborough steam trawlers in an area approximately 25m NE of Scarborough

Chippies in the inter war yearsBy the inter war years a chippy trade of c35,000 shops consumed around two-thirds of the British wet fish catch, and the demand for the cheap fish captured by the trawler fleets of Aberdeen, the Wyre and the Humber necessitated the development of further rail links, which in turn fuelled the development of the great industrial fishing ports.

World War TwoDuring World War II, ministers bent over backwards to make sure fish and chips were one of the few foods that were never rationed.

Prime Minister Winston Churchill referred to fish and chips as ‘Good Companions’.

British soldiers identified each other during the ‘D’ Day landings by calling out ‘fish’ and the response or password was ‘chips’. Any other response and they would have certainly had their chips.

shop had a blank sign atop the frontage. They start thinking - “What are we

going to call our Chippy?”...

A chippy by any other name

would smell as sweet

So they asked the question of the members on the Chippy Chat community forum.

One of the members “chipsandthings” suggested - “Why not get your local press to do an editorial and ask the public to help find your new name. The winning name wins fish ‘n’ chips once a week for a year... it will whip up no end of interest for your new shop”Good thinking chipsandthings.Another member “Martin” suggested “Lickety Lips Fish & Chips.” With a logo designed around the old Rolling Stones album cover. Not bad.Then another member “APlaice” turned up with a stunning list that proves just what fantastic imagination and sense of humour chippies have.

But after a lengthy fight, The Only Way Is Fish has won the right to retain its name – however, the sign

has got to go.TOWIF opened in March in Ongar, Essex,

but production company Lime Pictures, who produce the hit show, accused it of ‘infringement of our copyright’.

Owner Dave Edwards was given two weeks to remove the sign – which was quite obviously inspired by the TOWIE logo.

Dave accused Lime Pictures of  an ‘infringement of human rights’ though and a battle insured.

However, now Dave and bosses at the production company have agreed that he can keep the name if he changes the sign.

The father-of-three, 37, said: ‘It was a stupid disagreement and should never have come about and they tried to ‘strong-arm us which should not have been their approach.

‘We told them there was no way we would change the name but agreed to change the logo as it was less stressful and time consuming that way and now it’s all dealt with.

‘It was coming to the point where it was getting silly.’

The sign will undergo a transformation with different lettering; different colours and the stars will be replaced with fish.

It seemed the only way really was Essex after a fish and chips shop that goes by the name of The Only Way Is Fish was threatened with legal action and accused of infringing copyright of the ITV2 reality show TOWIE.

Steve Lynton, of the famous chippy on North Albert Street Fleetwood, where Walliams enjoyed his dinner,

said the celebrity turned up “out of the blue”.“Not a lot was said – he just came in, enjoyed his fish and chips and posed for a couple of pictures,” he said.Mr Lynton said it was a shock to see the Britain’s Got Talent judge in his restaurant.He added: “I had to do a double take. At first I thought it might be a look-alike, but it really was him and he had his wife, Lara Stone, with him.“She was a really lovely person”. “They were probably with us for about 45 minutes to an hour, and I was watching the customers who were coming in do a double take when they saw him.”Lara was once asked by a top fashion magazine about foods she couldn’t resist and the Dutch beauty replied “I like nice comfort foods like shepherd’s

pie or bangers and mash. Or the simple things: nice English breakfast, fish and chips.”Steve is also celebrating his number one status on Trip Adviser too, in the area out of 46 restaurants his reviewers place him on top with their ratings.

Keeping it in the Family

People used to say “Go to the Greeks on Whitchurch Road, you know the shop when you go inside the guy can`t speak

very good English” (my Dad), well he`s still the same now and has been in the country 59 years.

The shop (Yans Fish Bar) was opened around 1969, the outside light box sign had a quarter moon on it so that’s why I think it was 1969, (the year the first man landed on the moon), the Greeks always had a funny sense of humour, but some customers say it was 1967.

I started working three nights a week at 11 years of age (you wouldn`t be able to do that these days) and I also worked the odd dinner hour so my Dad could go to market (not to get potato`s or fish) but to get cattle for his small holding. How times have changed in the years of trade.

We always closed the shop at the end of August for a month to go on holidays, so I missed the first month of school. It was always busy during school holidays not like today. In the trade today this is probably the quietest time, unless you are near a beach and the weather is fantastic.

Years ago if you wanted to buy a fish shop

you asked the pie man, he knew everything, also he would tell you what they were spending or if it was a good pie shop. Not any more as it’s about the traditional fish and chips suppers and side orders now. Menus and tastes of people have changed dramatically.

Since opening the shop there is one thing that we have never changed from and that’s

Frymax. Thank you Cyril Soloman for a great time in London it was a honour to be invited to the 50th year celebrations in London.

For the first 25 years we never had a name on the business, it was only after I took over in 1993 a couple of years later I thought I had better name the shop Yans (Greek for John`s). How many chippys in the UK years ago was called John`s, you will be surprised how many people take photos to take home from abroad because they got a relative called Yan.

The first ten years was all about building it up more than re-vamping the shop.In 2000/1 a new range was fitted by a local company Preston and Thomas . Originally we had an old Davies Range made by the same company and second hand so it was probably at least 45 years old when it got taken out.

In 2010 a new shop front was fitted with double doors it is amazing in the summer months.

In 2012 I fell ill and had to close the shop for two months because of the standing and seeing nurses every day.

With time off it wasn`t good, it was time to move forward and change. A website was designed which we don`t use as much as we should.

A new motif was made with new uniform, new menu boards by my friend John Sall, Managing Director of Harlequin Print and Design.

Attending the Isle of Ely open day and many other food trade shows was the start of my recovery. Also, being present at the NFFF Welsh Area Meetings, these things started to boost my imagination at a time when I was very low. It was great meeting loads of new people in the trade, chatting on and adding them on face book.

Luckily enough when I came back to work my five young staff all come back to work for me a great bunch of boy`s.

The end of 2013 we won the Quality Award an amazing feat with a small shop not many

staff and being only one of 250 shops in the UK to get the award.

In 2014 I was invited to the Fish and Chips National Awards by John Sall.

In 2014 we won Best Chippy Chips in Cardiff yet again off the potato council – amazing.

Recently I was voted in Chairman for Wales in Area 8, (a massive honour for me) - John Penaluna was made vice Chairman from Penaluna Famous Fish and Chips and Zohaib Hussain was made Treasurer from Zero Plus Fish Bar. In Wales we have got a great group going to meetings. Zohaib was young frier of the year, Mathew Williams, Crispy Cod winning Wales Twice. Penalunas being in the top five for a couple of years in Wales. Also, Paul Thomas from Dolphin Fish Bar.

It just proves that is you put your mind to anything you can turn things around.

Yans is a small chippy which has so much passion and determination for this trade.

Hugh can you tell us about your potato growing set up?

We are a small family run farm on the Romney Marsh, we are primarily potato producers but, we also grow cereal crops and look after our Romney Marsh Sheep. We only supply the chipping market with our potatoes and have been trading with Isle of Ely Produce for approaching 20 years who are our sole marketing potato agents.

What is the history behind the branding?

The Horses Bones branded potato bags are well known across the United Kingdom.

Many ask about the history behind the bag without realising that it actually stems from the Napoleonic Wars. It

is said that all of the returning horses (which had served the generals so well) were all retired and then ultimately buried on what would become the Balcomb’s land)

Can you tell me about the award winning Romney Marsh sheep?

The Romney Marsh sheep is a “longwool” sheep. Since the thirteenth century they have been a familiar site on the Romney Marsh and provided the foundation for the English woollen industry. It is bred for both wool and meat. .

Romney Marsh is reclamation land from the sea, throughout the centuries life on the Marsh was centred around sheep, smuggling and defending from invasion.

Romney Marsh covers an area of about 100 square miles, some 18 miles of coastline, with the coast extending from Hythe to Dungeness Point. The Marsh has always been vulnerable to attack from Romans, Anglo-Saxons, Vikings, Normans, Napoleon or Hitler due to its closeness to the continent.

The business moved to Eagle Hill, Donaghadee in 1975.

After having spent 25 years concentrating growing swede and early turnips Matthew decided the land at Donaghadee was better suited to growing potatoes. So, he used previous knowledge and experience alongside new technology to start growing up to 150 acres in the early nineties with his two sons Ian and Trevor. They started to market all their own potatoes around 1980.

Matthew has since retired and the business is run by Ian who buys most of his potatoes for the chip shops from England, Cyprus and Spain (in season). Trevor now owns and runs a chip shop called ‘The Golden Chip’ in Dundenald, N. Ireland.

All the staff at Eagle Hill have a comprehensive knowledge of potatoes

and can offer advice on growing, harvesting, storage, frying and also provide an excellent after sales service. A no quibble guarantee is offered on all of the produce.

Potatoes are stored in temperature controlled stores and undergo rigorous testing. They are tested for Dry Matter, Sugar Content which affects the fry colour and are counted to estimate the average size of potato per bag.

Delivery is 52 weeks a year to Greater Belfast and County Down area and they will consider delivering anywhere in Northern Ireland.

Customers have personal preferences so a “try before you buy samples” service is offered.

Eagle Hill likes to keep ahead of the game and is in the process of planning new warehouses and extensions.

Founded by Mathew McBride and Sons The McBride’s have been farmers and potato merchants for several generations. The family originates from Carricknaveigh in the Saintfield area of Co. Down since 1921.

Carlyn and Leigh, who works at Pantrini’s Fish & Chips in Whitley Bay, worked at the two fish and chip

shops run by Smiths in the Far Eastern country.

They also had a chance to see the sights and enjoy the local nightlife.

The biggest difference Carlyn noticed was the heat. “I know I live on an island in the middle of the North Sea so it is colder than most, but oh my heavens this was hot and humid!

After working a few shifts they realised how much of an effect it would have on everything. “With a temperature of 32 degrees along with the humidity, air conditioning was essential, not just for us two melting away behind the fryer but more importantly for all of the ingredients required to make great fish and chips.”

They suggested to owner Paul Lawless that they make some radical changes, not least because the chips they cooked very quickly went dark in the fryer, caramelising as they cooked.

“We spent a lot of time coming up with a new system that Paul was happy with and trained the staff on using Drywite and the best preparation methods, along with changing the temperatures of all storage,” said Carlyn.

But it wasn’t all work. Carlyn and Leigh attended the Queen’s Birthday celebrations at the British Embassy, visited Santosa Island and had lunch on the beach, enjoyed a bicycle ride to Chinatown and saw the zoo, the Marina Bay sands and Clarke Quay.

“We didn’t want to come home – we’d have loved to have stayed longer!”

Frankie’s shift manager Carlyn Kearney recently swapped Shetland for Singapore for 10 days – while keeping her day job. She travelled there with Leigh Foster, winner of the 2014 Drywite Young Fish Frier of the Year Award at the National Fish & Chip Awards.

What’s to like about  Anchor Fish & Chips? Well just about everything.

Starting with the fish and chips. It’s a generous slab of wild Alaskan cod, dipped in a delicate water-based batter and fried until an outer shell -- light, golden, gently crunchy and relatively grease-free -- forms a protective seal around the moist, succulent fish.

The slightest pressure from a fork breaks through that delicate crust, causing a clean-smelling steam to rise up, which tickles the nose and whets the appetite for the dense whitefish, which falls away in hefty chunks. Anyone raised on McDonald’s abominable Filet-o-Fish sandwich -- present company included -- will find it a revelation. Each table comes authentically equipped with a

bottle of white vinegar, and its bracing bite hits the spot.

The chips side of the equation is equally alluring: fabulous thick-cut, Minnesota-raised fried potatoes -- barely crisp on the outside, hot and tender on the inside. Order them with a side of the tangy, slightly sweet curry sauce, and you’ll know what it is to encounter bar-food brilliance.

The Anchor is a partnership of first-time restaurateurs Kathryn Hayes, Luke Kyle and Jenny Crouser. That they met and became friends  in a northeast Minneapolis bar speaks volumes about the Anchor’s good vibrations.

Those fish and chips not only headline the brief menu, but overshadow all that follows the zesty sausages, a blend of fine-ground pork and bright seasonings

made at Sentyrz Liquor & Supermarket -- battered and deep-fried, of course -- are terrific.

I’m crazy about the mushy peas, which are just that: A small, semi-creamy bowl of Green Giants mashed with vegetable stock and a rather sinful amount of butter. It’s baby food for grown-ups.

As for the Heinz baked beans, uh, not so much.

Good luck on the getting-a-seat thing, because the Anchor is that ruthless combination of popularity (crowds), scarcity (roughly 35 seats) and no reservations. My longest delay was 75 minutes, which, frankly, was testing my desire to wait for deep-fried fish and potatoes, even ones this good. But standing around taught me a few valuable lessons: Go early (before 5 p.m.) or late (after 9), and ask if you can cool your heels in one of the coveted chairs in the “library,” the cozy book-lined (Irish and British titles, naturally) nook in the rear.

The unpretentious setting meets all neighbourhood-joint qualifications. It’s nothing fancy, just blood-red walls, gleaming black tiles, a beautifully restored tin ceiling (a calling card from the address’ days as a butcher shop) and a wide-open kitchen, but it has character.

Included in the afternoon will be a visit to one of the biggest potato farmers in Cambridgeshire P.J. Lee & Sons. Here you

will see them in action, as they welcome you to their ‘office’ – thousands of acres of fantastic fertile land which is ideal for growing the UK’s best chipping potatoes. Richard Lee will be on hand to have a chat and will give you an idea of just how much investment they’ve made to ensure the end product you receive is the best in Europe.
