landscape, Chingon’s captivating decor and unique take will lift this

restaurant off the ground.

Chingon cantina and taqueria, founded by two New Mexican brothers - Mick and Will Baleaus - longing for the simple flavours of their mother’s kitchen, serves Australia’s most authentic tacos.

Our tortillas are hand-made to order, our salsas mexicanas are created daily and our carnes y mariscos are grilled to order. Everything is served in the traditional way. We live above the venue and view the entire restaurant as a continuation of our dining room. The menu is simple but perfect- just like our mother’s.

On virtually any street corner in Mexico you can find people gathering amongst the aromas of fresh tortillas, wood smoke, roasted vegetables, toasted chili and grilled meats. The crowds are brought together by the work of a small group of family members who sell traditional street food from a tiny cantina, a mobile food cart, or a makeshift street stall. Although the menus

they offer are small and the preparations simple, the flavours are unforgettable. Everything is fresh and the food is eaten from a couple of napkins. The goal is to stay true to a style that has existed for generations. My brother and I opened Chingon as a celebration of the flavours, music and decor that we grew up with. We invite you to explore the venue, talk to the chefs and ask any questions you may have.

You are also invite to visit our rooftop; This lovely and rustic space in the heart of Swan street in Richmond is the perfect place to drink an original sangria and meet your friends to have nice conversations while you enjoy the mix of luminosity of the stars with the shining candles that decorate and kindly heat the environment.

We view Chingon as a continuation of our home!

Opening hours: Monday and Sunday 17:30 until 23:00

Chingon will open for lunch any day for a booking of 10 or more.

Chingon is a cash only business.

The terrace must close at 22:00 everyday.

Sittings after 8:30 will not attract an “out by” time.

Bookings are not confirmed until responded to by us in writing.

truck The Chingon Taco Truck is a fully self-contained mobile kitchen available for private functions, corporate catering, festivals and street-side trade. When not being used for private events, the striking copper caravan can be found on the streets of the Eastern, Northern and Western sub-urbs of Melbourne.

As for the offering it’s genuine Mexican street food, “Tacos are the king of street food,” and they form the basis of the offering. Tacos are handed from a blue corn recipe and the ingredients speak for themselves. “In Mexico, street vendors are mainly subsistence families, just getting by on what they sell. So there are no lavish ingredients, just what’s available locally. And nothing goes to waste.”

The menu also offers beyond the tacos, more of the traditional Mexican street cuisine such as

charred corn, salsas, spicy soups and sopa seca.

Chingon’s menu is purposely limited - we don’t try to showcase a full cuisine as diverse as the Mexican kitchen. This simple taquería focuses on a small but

mighty aspect of Mexican food: tacos.

The six varieties at Chingón stay true to the history of each dish - everything in each taco we offer is made in the old style,

in house and by hand.
