EXPLORING FOOD SCIENCE By Disciples Escoffier HK

Exploring Food Science is an exciting new initiative for Restaurant & Bar Hong Kong 2010. Within this theatre a select group of the regions and the world’s leading chefs explain why an intimate understanding of the chemistry behind cooking is essential for ambitious chefs. This will involve the deconstruction of some of the most familiar base ingredients and cooking techniques. They will explain, at a molecular level, what the characteristics of the ingredients are and why chefs do things in a certain way to produce perfect results. Armed with this knowledge they will then explain how chefs can experiment and create exciting new dishes by using ingredients in different ways.

This dedicated theatre has a reserved capacity of 45 chefs per session. The content and participating chefs would be nominated by the Disciples Escoffier (HK chapter) under the watchful eye of its President Jaakko Sorsa of FINDS and Secretary General Oyvind Naesheim of Nobu.

GOURMET JAPAN

Restaurant & Bar Hong Kong 2010 will have a strong focus on the Japanese restaurant sector in the region supported by the launch of Gourmet Japan. It provides the ideal platform for suppliers of Japanese foods, beverages and specialist equipment to sell to the senior decision makers within this important sector.

The Japanese food service sector in Hong Kong and Macau is very large and growing fast. With over 1,300 Japanese restaurants in Hong Kong and Macau and hundreds more in Guandgong Province, it is the second biggest sector behind Chinese restaurants. A heavyweight marketing campaign targeted at the Japanese restaurants and bars will make it one of the busiest and most exciting events in the hall.

ASIAN SEAFOOD EXPOSITION

Hong Kong is one of the world’s biggest market for seafood and with a total value of US$2.8 billion of imported fish and seafood products in 2009. The Asian Seafood Exposition is to be launched in recognition of this and will run alongside Restaurant & Bar Hong Kong 2010. Diversified Business Communications, the organisers of Restaurant & Bar, also run the largest seafood exhibitions in the world in Brussels and Boston and will bring all this experience with them to create a large and successful seafood event in 2010.
