hOw TO Make The ChOCOlaTes?

YouusetheautomatictemperingmachineCW24.Oncethechocolateistempered(meaningthatthetemperatureofthechocolatehasreachedthewantedtemperaturesetatthetemperingthermostat)themachinegivesasignalsothatyouknowyoucanstarttheproduction.

Youswitchonthevibratingtable.Youstopthechocolaterunforamomentbypushingonthefootpedal.Youthenslidethemouldintothedeviceonthevibratingtableinordertofillthemould.Youreleasethepedalandthechocolatestartsrunning.Thedepositingplatemakesthatyoudosethechocolateinthindosingsdirectlyinthecavitiesofthemoulds.Thevibratingtableavoidsthatyouobtainairbubblesenclosedinthemould.Airbubbleshavetobeavoidedbecausetheyareseenatthesurfaceofthechocolateafterdemoulding.Oncethecavitiesofthemouldarefull,youpushthepedalagaintostoptherunofchocolate.Youtakethemouldoutofthedeviceandyounowvibratethemouldalittlelongeronthesideofthevibratingtable.Thetimedependsonhowdetailedthechocolatemodelinthemouldis.

Ifyoumakeasolidproductyoucanputthemouldinthecooling.If you make a filled product you turn the mould upside down so that the chocolate runs out again out of the mould. Youthereforeputthemouldintocontactwiththevibratingtablewhichhelpsthechocolatetorunout.Thelongeryoukeepthemouldupsidedownthethinnerthechocolateshellwillbe.Onceyouhaveobtainedthewantedthicknessoftheshellyouturnthemouldagainandputitintothecooling.

Aftercoolingfor+/-10minutesthemouldisreadytobefilled.

YounowusetheEasyfillfillingmachineM1600

Withthismachineyoufillthechocolateshellswithafilling.FortherecipiesofthefillingswewouldliketoadviseyouourbookBELGIANCHOCOLATESbyRogerGeerts.Youcanfindplentyofhighqualityrecipiestochoosefrom.

YouputthefillingintothefunneloftheEasyfillmachine.Youputthemouldwiththechocolateshellsunderthenozzlesandyoudosethefillingintotheshells.Youhaveahandletodeterminehowmuchyoudose.Youhavetoleavesomespacefreefortheclosingwithchocolate.Thefillingmachinefillsthemouldrowbyrow.Afterfillingyouvibratethemouldagainshortlysothattheairbubblescanescapeagain.

Aftercoolingfor+/-10minutesthemouldisreadytobeclosed(sealed)withchocolate.

YounowusetheautomatictemperingmachineCW24M1300again.Youputthemouldintothedeviceonthevibratingtableandyoufilltheemptyspaceinthecavities.Withthepedalyoudoseathinlayerofchocolatewhichcomesontopofthefillingandsealsyourchocolates.

After a final cooling the mould is ready to be demoulded. You can twist the mould manually and demould on a table.Thedemouldinghastobedonebyknockingthemoulduponthetableinananglesothatyoudon’tdamagethechocolates.Yourchocolatesarenowready.

M1300 CW24 capacity 24 kgThisisanautomatictemperingmachinewhichcanmeltandtemper(cool)thechocolatetotherighttemperatureofapproximately30°C(dependingonthetypeofchocolateyouwanttoworkwith).Bowlcapacity:24kg(biggerversionof40and60kgavailabletoo:M1500andM1400)Theusersdisplayisverysimpleandconsistsof:athermostatforthemeltingofthechocolate,athermostatforthetempering(cooling)ofthechocolate,aswitchtoactivatethemixingarm,aswitchtoactivatethefloodofchocolateandaswitchtoactivatethecooling.

Thereisalsoaheatedvibratingtableincluded,adosingprogramtodoseacertainweightofchocolateinashot,afootpedaltodosethechocolate,andalsoanemergencystop.

Theoptionwhichisrecommendedisthedosingheadincludingtwodepositingplates.Thisdosingheaddividesthemainfloodofchocolateintothecavitiesofthemoulds.Importantadvantagesarethatyousavetimebecauseyoudon’thavetoscrapethemoulds,thatyoucanworkveryhygienicallybecausethemouldstayscleanandfinallythatyoucanmouldthemostdetailedshapeswithoutairbubbles.Moststandardmouldshaveacavitylayoutof3x7or3x8.Firstyoufillallyourmouldswhichcorrespondto3x7layout.Afterwhichyoucaneasilychangethedepositingplateinordertomouldthe3x8cavitymoulds.
