94% EFFICIENT AT GREASE EXTRACTIONAs tested by Underwriters Laboratories of Canada it has been proventhat Flame Gard 1 grease filters have the highest rate of greaseextraction of any filter on the market today while still maintainingextremely low static pressures. quoting U.L.C. SIMPLE BUT EFFECTIVE BAFFLE DESIGNFlame Gard’s “U” shaped baffles were arrived at after extensive testing.the smooth, deep baffles cause the grease to drain off the filter quickly,and they resist flame penetration without disturbing the movement of air.Flame Gards have more baffles per inch of filter which is a key factor inour high rate of grease extraction and out low static pressure. Morebaffles mean more grease impingement area and more paths for the airto flow smoothly and quickly through filter. these combined featuresmake Flame Gard I’s the most energy efficient filters available.

TEFLON® COATED BAFFLESFlame Gard’s high rate of grease extraction is aided by our tEFLON®coated baffle. In the same manner that grease rolls off a tEFLON coatedpan, it rolls down our baffles, out of the filter and into the hood’s remotecollection cup. Because Flame Gard’s filters retain only insignificantamounts of surface grease and do not load, you will have constancy ofair flow throughout your operating day. In addition, Flame Gard’s filterscan be easily cleaned in a pot sink or dishwasher with simple detergentand hot water.

If airborne sparks and embers can be generated by the solid fuel cookingoperation, spark arrestor devices shall be used prior to the greaseremoval device to minimize the entrance of these sparks and embers intothe grease removal device and into the hood and duct system.

not exceed 6% of the amount generated!”

METHODtwo sample steel filters were weighed and then mounted side by sidein the hood. the damper was adjusted to provide a stack velocity ofapproximately 1800 f.p.m. the distance from the broiler surface to thebottom of the unit was approximately 36 in. the grease generator wasweighed, partially filled with cooking oil, reweighed and the weighedrecorded.

the grease generatory was placed on the electric broiler and heateduntil the temperature of the cooking oil was 400˚ F. the sizing of thespray nozzle was such that grease was discharged at approximatelyone pound per hour per foot width of the test hood.

the test continued for 2 hours...

At the end of the test, the grease laden filters were weighed. the greasecollected from the filter run off was collected and weighed. the greasegenerator was weighed again to determine the weight of grease used.

HOW FLAME GARD® WORKSthe affluent from cooking processes contains aerosols of water vapor mixedwith evaporated fat or oil. these are carried from the cooking surface by themoving air being drawn into the exhaust hood.

Although small, each aerosol is much heavier than the air moleculessurrounding it.

thus, when the air stream containing these aerosols strikes the Flame Gard®

Baffle System, the inertial force of the moisture-grease aerosol is considerablygreater than that of the air molecule. while the air molecule changes directioneasily, the aerosol strikes the baffle with considerable force, causing it to“splatter” on the surface. Because the surface is coated with a teflon®, thegrease slides down to the trough and then to the collecting container.

whereas the heaviest aerosols, because of their greater inertial force, impingeon the surfaces of the baffles facing and perpendicular to the air flow, the lighterones remain in the air stream. As the air stream is drawn through the bafflesystem, the restrictions in area created by the baffles cause the air to increasein velocity while changing direction by 180 degrees. Since the inertial force is aproduct of the mass and the square of the velocity, this increase in velocityserves to increase the inertial force of the remaining smaller aerosols, causingthem to impinge on the inner surfaces of the baffles in the same manner inwhich the heavier aerosols impinged on the entering surfaces. the design of thebaffle system provides several impingement surfaces and two rapid 180-degreedirection changes.

Because Flame Gard® removes grease aerosols from the air stream and drainthem away instead of retaining them. there is no build-up of grease in the pathof the air Flame Gard® therefore, insures a constancy of air never beforeachievable with mesh-type filters.

WARRANTYFlame Gard® I has a one-year warranty against defective material or workmanship.

RECOMMENDED WORDING FOR GREASE FILTER SPECIFICATION

LONG FORMGrease filters shall be as manufactured by Flame Gard®. they shall consist of two offsetting baffle assemblies held in position by metal screws, allcontained in a metal frame with expanded metal trim on the face and back.

Baffle assemblies shall c onsist of “U”-shaped channels of 20-gauge steel,coated by no less than one mil of Dupont teflon® 22. Channels shall beseparated and held in parallel alignment by 14-gauge steel cross members.Baffle assemblies shall be mounted in their frames reserved one to the otherand staggered so that the side of each channel is aligned with, and spacedevenly from, the side of an opposing channel.

Frames shall be constructed of nickel-plated 18-gauge cold-rolled steel with 3/8inch diameter openings for drainage of grease. Frames shall consist of two partspermanently held together by metal screws.

protective trim shall be made of 16-gauge nickel-plated, diamond-shaped,expanded cold-rolled steel.

Stainless steel handles shall be provided on each side of the front frame forease of removal and replacement in exhaust hoods.

SHORT FORMGrease Filters shall be as manufactured by Flame Gard®. Filter shall consist ofan outside rear and front frame of nickel-plated steel welded to a front face ofexpanded steel. with two opposing teflon-coated baffles inside.

OPERATIONGrease laden air isdrawn into the filter bythe exhaust fans. As the air starts throughthe aerodynamic “V” baffle system, itundergoes a series of compressions, expansions andpressure changes. the heavy grease is depositedsafely and quickly on the baffles while the grease-freeair passes through the filter and up the exhaust duct.the baffle’s smooth surface enables the collectedgrease to run off into collection troughs withoutdripping on food,utensils or burner surfaces.the ChGGrease filter method of separating grease and air hasachieved superior levels for efficiency and safety notattained by competitor’s filters.

CONSTRUCTIONChG stainless steel grease filters are constructed ofheavy duty type 304 stainless steel, providing themost durable filter available in today’s market, andwill provide years of trouble-free operation. thereare no coatings to wear out and no involvedmechanisms which can jam.All stainless steel grease filters are guaranteedagainst defects in workmanship or materials.

MAINTENANCEthe all-stainless steel construction allows the filter to be soaked, sprayed or placed in a dishwasher for simplified cleaning, without concern for rusting orwearing out of surface coatings.

AIR FLOW CHARACTERISTICS

SELF-BALANCINGwith conventional mesh filters, it isnecessary to pull two to five timesas much air through the center filterto get good smoke and greasevapor capture on the ends of ahood. this is a needless waste ofcostly heated or air conditioned air.ChG grease filters areaerodynamically designed toprovide a self-balancing air flowthroughout the entire length of ahood. Actual field tests haverepeatedly shown a variation of less than + 10° air flow from end to end.this unique design assures good capture through theentire hood length, with 25 to 50% less volume ofexhaust air.

HOW FLAME GARD® WORKS

the affluent from cooking processes contains aerosols of water vapormixed with evaporated fat or oil. these are carried from the cookingsurface by the moving air being drawn into the exhaust hood. Althoughsmall, each aerosol is much heavier than the air molecules surroundingit. thus, when the air stream containing these aerosols strikes theFlame Gard® Baffle System, the inertial force of the moisture-greaseaerosol is considerably greater than that of the air molecule. while theair molecule changes direction easily, the aerosol strikes the baffle withconsiderable force, causing it to “splatter” on the surface.

whereas the heaviest aerosols, because of their greater inertial force,impinge on the surfaces of the baffles facing and perpendicular to theair flow, the lighter ones remain in the air stream. As the air stream isdrawn through the baffle system, the restrictions in area created by thebaffles cause the air to increase in velocity while changing direction by180 degrees. Since the inertial force is a product of the mass and thesquare of the velocity, this increase in velocity servesw to increase theinertial force of the remaining smaller aerosols, causing them toimpinge on the inner surfaces of the baffles in the same manner inwhich the heavier aerosols impinged on the entering surfaces. the design of the baffle system provides severalimpingement surfaces and two rapid

180-degree direction changes. the grease slides down to the greasetrough and then to the collection container.
