Mohegan’s Recycling Program

• Avoided Incineration Costs– Waste meat and vegetables from Mohegan kitchens and restaurants are picked up every morning by Millaras Piggery

– Grease from all kitchen and restaurant wastewater is removed by AGRUs and waste fryolator oil is picked up by Western Mass Rendering and used as a constituent in animal feed stock

• 13 Somat machines pulverize, mix, and press water out of most food waste

• This vastly reduces the volume and weight of the food waste sent to the piggery; moreover, it reduces the excess water consumed by the pigs, which can be a problem.  

• More importantly, it reduces the cost, since the water is heavy, and removing it removes cost

• Other stations, including the pot room, simply scrape food waste into a barrel

• The food waste is moved with wheeled gurneys to refrigerated locations, to await pickup by the farmer.

• Waste oil is divided into two types—the more valuable, yellow grease, which is spent oil from the Frylolators, and e.g. bacon cooking

• The “brown” grease, which is trap grease

Yellow Grease/Brown Grease

• Yellow grease is pumped into waste fryolator oil tanks located on both Earth and Sky Loading Docks

• Yellow grease is recycled by Western Mass Rendering for use as an animal feed constituent

• Brown grease is extracted from wastewater by AGRU and placed in 55 gallon drums for pick up

• Brown grease is also recycled by Western Mass Rendering for use as an animal feed constituent

Some Continuing Issues

• Food waste recycling sequence is more effective than bottles and cans recycling.  Also, employees put bottles and cans in the collection unit in plastic bags, creating contamination and extra air space.  

• “Fast food,” from tenant restaurants at the casino, is lost as regular trash.  Millaras Piggery is the end destination, going to compostable tableware and food packaging would not help here.

• The casino has two systems to handle the trap grease and the residual food scraps in the wastewater; one does not accommodate all of them.
