Easter is a great time to spend in the kitchen with friends and family, enjoying the fun and laughter that comes with cooking. So this long weekend, rattle the pots and pans and cook up some yummy WA produce. For me, it will be grilled WA fish on the bbq, plus some pan-fried Shark Bay King Prawns with wild-honey and sesame.

Traditionally, fish is served at Easter, so try another stunningly simple recipe: whole oven-baked Cone Bay Barramundi, served with a crisp Riesling. Or for your mates, whisk up a simple beer batter and shallow fry some WA Whiting. With a frosty cold beer, it’s the perfect marriage.

For dessert, add a splash of Tia Maria, Cointreau or Drambuie over your ice-cream, and top with a sprinkle of Great Southern Blueberries. Why not have a wee tipple yourself - happy cooks prepare happy food! But please, always drink and serve responsibly. Ensure there’s plenty of food and non-alcoholic drinks on hand. And nominate a Skipper or stay over if visiting.

Yo ho ho!and a bottle of....Rum has a history of blood and tears, born into the agony of

slavery and plundered by one of the most colourful band of misfits to grace the seven seas.

The first distillation of rum took place on the slave laboured sugar plantations of the Caribbean in the mid 17th century. Early documentation from Barbados describes the “Rumbullion, better known as Kill-Divil, this is made of sugar canes distilled, a hot, hellish and terrible liquor” [sic].

Rum’s association with pirates began with British privateers, who traded the valuable commodity. One of histories most notorious and successful privateers was Henry Morgan. The ruthless Morgan made his fortune primarily by raiding Spanish settlements and piracy in the Spanish Main, now known as the Caribbean Sea and the Gulf of Mexico.

Long ocean voyages with ample supply of rum in wooden barrels brought a mellowing of the “hellish liquor”. It was not long before the enterprising buccaneers added another commodity of the Americas, spice. It is believed that mixed storage purposes of the oak barrels showed a vast improvement to the liquor and it soon became common practice to add to the barrelled rum the exotic flavours of cinnamon, nutmeg, cloves, vanilla and all spice, to name a few. The British navy were not so savvy, mixing raw rum with water or beer to make “grog”. In time the Brits caught on and followed the recipe of the wayward mariners.

The “terrible liquor” had come of age, so much so that George Washington insisted on a barrel of Barbados finest at his 1789 inauguration. Today we are seeing a resurgence of taste towards rums and spiced rum in particular. We encourage you to experience the fine selections now gracing our shores, but please leave polly and the cutlass deep in the watery depths with Davy Jones locker.
