Ingredients: 5-6 small to medium sized potatoes 2 tbsp tablespoons of olive oil 1 small to medium sized onion 1/2 tsp teaspoon of Salt 1/2 tsp teaspoon of ground pepper 1 tsp teaspoon of garlic powder 1 tsp teaspoon of dried basil 1 tsp teaspoon of oregano 1 cup of shredded cheddar cheese (optional) Directions: 1. Wash and dry the potatoes and carefully dice into small pieces (the smaller they are the easier and quicker they will cook). Dice the onion into small pieces as well. 2. In a large frying pan on medium-high heat drizzle one tablespoon of olive oil and place the diced onions in the pan allowing them to cook from white to translucent. Drizzle another tablespoon into the pan and add the potato pieces in with the cooked onion. Continue to cook for 5 minutes on medium-high heat adding extra oil if needed. Season potatoes with herbs of your choice, add salt, pepper, garlic powder, basil, and oregano and continue to cook until golden brown and crispy on the outside. Once cooked sprinkle cheddar cheese to top and serve alongside other breakfast foods like bacon and scrambled eggs! BREAKFAST POTATOES Preparation: 30 minutes Yield: 5 servings 27 OCT
