    Original stills, known as pot stills or the alembic {Arabic term}, were

    basically enclosed kettles, which narrowed towards the top to collect the

    vapours created by boiling. A downward pipe from the head carried the

    vapour through the cold water which caused it to condense and then it

    could be collected in a receiving chamber.

    Copper is the best material for making a still as it draws out the impurities

    from the alcohol. As the distillation using this kind of setup can only be

    done in batches, it is a laborious and time-consuming process. The stills

    have to be loaded up, boiled off, cleaned and recharged for every run.

    In late 1820s that a new form of still was invented which produced

    spirit as long as the wash was fed into it. It was called the continuous

    still or patent still. It had 2 columns, the analyzer and the rectifier.

    The former had steam rising up and meeting the hot wash, which

    was sprayed down. The rising alcohol vapours proceeded to the

    adjacent column where they cooled down on coming in contrast with

    the cold wash. As this process produces lighter style of spirits it wasnot used to make single malt and congnacs that required retention of

    impurities or congeners and fusel oils.

    1.1 BRANDY

    Brandy is a spirit distilled from fruit juice or the pulp or skin of any

    kind of fruit that will ferment and may be used in different ways to

    produce brandy.

    The most familiar brandies came from grape wine. Wine brandy is

    distilled and usually aged in oak barrels, a process that mellows the

    spirit and adds aroma, color and flavor to it.

    An age statement on the bottle gives an idea as to the quality for

    example: 2 years old is very young; 10-12 years old brandies are

    good brandies.

    Promace brandy: - a type of brandy is also made from the mass of

    grape skins and stalks left behind after grapes have been pressed to

    make wine.

    Fruit brandy: - brandy produced from fruits other than grapes is

    called fruit brandy.

    Plum - Mirabelle, slivovitz Pears - Poire William Apples - applejack(America),calvados(France) Cherry - kirsch

    Cognac and Armagnac are most well known of the European brandies

    and California brandies come a close second.
