Lay the lamb on a double thickness of heavy-duty foil and whisk
together all the remaining ingredients. Pour onto the lamb and rub
in well on both sides then wrap the lamb in the foil and place on the
barbecue, slightly to the side of the hottest part and cook for an
hour and a half, turning frequently. Unwrap from the foil and cook
directly on the grill for another 40 minutes, taking care the glaze
doesn’t burn. Place on a carving dish and allow to rest for 10
minutes before serving.

2 tablespoons redcurrant or
quince jelly
