Riofrío Caviar At Riofrío (Spain), Riofrío produces one of the highest quality caviars in the world. Learn how the combination of time, effort, tradition, know-how and research, can bring about great results. Caviar is taken out from the Acipenser naccarii or Adriatic sturgeon, an almost-extinguished species, which we have been able to rear in captivity. This kind of sturgeon is more than 250 million years old, and it stands out for its slow growth. This fish is a real treasure, and its taste and color are full of different notes. It is usually pearl gray, although it can also shed different shades. Since the caviar we offer is completely fresh, we can guarantee that its taste and notes will be always be reveled despite of the time, salt or the preservatives added. We have re-adapted the Russian process called Mallosol, whereby only a tiny amount of salt is added, approximately 3% to 4%.

Excellsius The spawn is bigger, and its flavor and texture have been selected from the very beginning. It will dazzle your guests, and their taste, in an explosion of notes inside your mouth.

Payusnaya (Pressed Caviar) Payusnaya is a smooth, dense, nicely salty paste made from the fish eggs that break during the packing of traditional caviar. Traditional Russian pressed caviar recipe, the purest essence of caviar concentrated to give their best recipes and dishes of pure flavor of caviar. The payusnaya is a product for the true connoisseurs of caviar and a delicatessen to Russian experts. The payusnaya requires 2 kgs of caviar to extract 1 kg of payusnaya with all the essential core of the flavors of the caviar. Made with exclusively eggs of our species and not many caviar mixture, the authenticity of naccarii along with our recipe makes our payusnaya remember the original products that were consumed in Russia for over 100 years. A doubly intense flavor, the first time you try it the palate is filled with intense notes that, far from saturated, make you want to continue exploring. It is therefore a product for who want thrills palates, tastes in which recreate, to assess the nuances and textures that slowly dissolve in the mouth.


Riofrío Tinned Products Through the preservation process, products are treated and preserved with the best possible conditions for long term preservation, so as to protect food against microorganisms action, as these microorganisms can alter sanitary conditions, as well as the food flavour. The time range food is preserved, is much longer than without the food preservation process. Refrigeration is not required for preservation, just keep it in a cool and dry place. Once opened, keep in the fridge, and consume before 7 days. Sturgeon Pudding It can be spread on canapés or pastry. All ingredients used are ecological, except salt. Sturgeon in Extra Virgin Olive Oil All ingredients used are ecological, except salt. Give a personal touch to your salads. Try to add it to salmorejo (dense gazpacho). Pickled Sturgeon Pickle done with balsamic vinegar of Modena.


Riofrío Smoked Products Traditional and new methods fusion. Products have been smoked through certified eco-processes, thus being suitable for health, and environmentally-friendly. It features smooth flavors, and respects the product aroma, and delicate textures. These assets are the most representative features of our products, which combine traditional processes for the smoking procedure, and our personal touch. They require a cool environment for its preservation, and once opened, they must be consumed before 7 days. Cold-smoked sturgeon Smoked using noble woods in the same way as above but, this time, the smoke received by the sturgeon is already cooled. This is the well-known cold-smoking process, with the added value of being preserved in eco-oil. It must be eaten at room temperature. It is recommended to leave the product out of the fridge 2 hours before being consumed, since the oil will be semi-solid due to the fridge temperature. It is presented in a 88 gr tray, precut and ready-to-eat. Suggestions: It is ideal for canapés, salads and starters. Hot-smoked trout The whole piece is hot-smoked, ready to eat. It is tasty and healthy. Suggestions: Warm up in the microwave; slice o flake it for canapés, salads, and cocktails. It is also suitable for scrambled eggs, or as pasta side-serve, both cold and hot. Hot-smoked trout fillets without bones. Just, warm and serve. Suggestions: Warm up in the microwave, and serve as second course, together with peppers, ratatouille, potatoes or salad.


Cava Brut Gold

From the most demanding harvesting to a delicate grape collection, Tier Elyant entails the marriage of white varieties Macabeo, Parellada, Xarel•lo and Chardonnay, dressed with Pinot Noir. This excellent cava rests on a noble, exclusive and powerful element: gold.

Brut Elyant Tier Gold Description Straw yellow waved for a gold that enriches and distinguishes the bottle, the flashes emulate landscapes of vineyards with a history. Tasting Tier Elyant is a combination of soft and aroma balance. Long finish and nuances compensated worsens due to the fineness of its bubbles to find bright colors. Tier Elyan Brut Rose Description After a long period of aging is born this varietal rosé cava. Made from 100% based on the prestigious Pinot Noir and purity and gold dress, Tier Pink Elyant emanates liturgy, elegance and innovation. Tasting In transit silky and fresh, is shown as a pink champagne subtly reminiscent of red fruits with floral notes in each bubble. Tier Elyant – The fabulous brut Rosé Our single grape rosé cava is born after an extended aging period. Produced 100% with the prestigious Pinot Noir grape variety and dressed with purity and gold, Tier Elyant Rosé emanates liturgy, elegance and innovation.


Tier Vintage The perfect and fine bubble with its golden color suggests a very drinkable champagne and ripe Chardonnay. Tier Vintage is a tribute to the most demanding palates, the long tradition of the culture of Champagne captured in a sublime and elegant bottle. Tier Vintage – Cuveé Reserveé Soft and fruity, complex aromas reveal their nuanced champagne inherited from the purest tradition of French Champagne. A hint of pear compote on the nose, fruity character shows its sweetness on the palate giving at any time without losing subtlety.


Wine Flor de Lola Crianza (2008) This wine forms a perfect complex of aromas of

Wood and Fruit, presenting an intense cherry color with ruby tones. Composed by the varieties

Tempranillo, Mazuelo and Garnacha, this vin mature has been aged for 12 moths in American

and French oak barrels before being aged for another six months in bottle.

Wine Flor de Lola Joven (2011) This wine is made from the variety Tempranillo and has subtle parts of Garnacha and Mazuelo. Clean and vibrant with ruby color characteristic, this vin noveau presents a personal and fruity aroma. Alcoholic grade: 13º Total acidity: 5 gr./liter Grames of sugar per liter: <3 Coupage: 85% Tempranillo, 10% Garnacha Tinta, 5% Mazuelo .

VALENTINA Blanc de Blancs Aging: The second fermentation takes place in the bottle by the traditional method. Remains in the cellar about 15 months before disgorging. Tasting Notes: Its color is pale yellow. Good release of bubble. Its fine fruity aroma it’s due by long months of aging. Its great personality is characterized by a solid structure, elegance and sensorial amplitude. Blend: Chardonnay (30%), Pïnot Blanc (10%), Xarel·lo (30%), Macabeu (15%), Parellada (15%)

VERA Brut Nature Aging: A slow second fermentation in the bottle is made by the traditional method at controlled temperatures. It remains in the cellar about 12 months before disgorgement. Tasting Notes: Bright yellow colour with fine bubbles. It has a soft aroma and a subtle and dry bouquet, balanced and persistent Blend: Xarel.lo (30%), Macabeu (40%) y Parellada (30%)

VICTORIA Brut Reserve Aging: Low temperature fermentation in stainless steel vats. Second fermentation in bottle aged for 18-20 months. Tasting Notes: It has yellow and green reflections, with fine and lively bubbles forming a top crown. White fruits and citrus nuances on the nose, with pastries and fresh yeast notes. On the palate fresh and balanced. Blend: Xarel.lo (40%), Macabeu (40%) y Parellada (20%)
