INGREDIENTS1.5 lbs Pure Flavor® Mini Cucumbers1 Pure Flavor® Beefsteak Tomato½ red onion, finely diced1 package of dried Italian salad dressing mix1 avocado, peeled and diced1 large mango, diced
DIRECTIONS
1. Peel, seed and dice tomato.
2. Peel, split lengthwise, seed and dice cucumbers.
3. Thoroughly drain all liquid from tomato and cucumber
4. Mix all ingredients and chill before serving.
5. Serve with chips or vegetables, or use as dressing for chicken salad.
