Ethiopia is the fi fth-largest producer of chickpea in the world, producing more than
400,000MT annually. Ethiopia’s production currently consists of 90% Desi and 10%
Kabuli varieties. Kabuli or garbanzo type, ranging from 6 mm to 8 mm, and it has a
smooth, cream-white seed coat color. The Desi variety of chickpea, widely grown in the
country, is small-seeded, ranging from 3 mm to 6 mm, and it has a hard, reddish-brown
colored seed coat.

1 Mix together tomatoes, carrots, garlic, green chili and 1 tablespoon of oil and sauté for about 10 minutes
2 Remove from heat, chill for about 20 minutes
3 After its cooled, mix in chickpeas and parsley
4 Mix together 2 tablespoons of oil, salt, pepper and honey for dressing
5 Toss together chickpea mix along with dressing and serve fresh.

addition, many coff ees are certifi ed organic, fair trade, rainforest alliance, UTZ and bird-
friendly. Ethiopian coff ees are identifi ed by their distinct characteristics, fl avor, aroma
and taste. In prestigious global coff ee competitions, Ethiopia frequently outperforms
other origins, with coff ees scoring consistently in the specialty category. Ethiopia
exports sundried natural and fully washed from many distinct geographic areas and

2 Roll out into 1/3 inch thickness and place in a rectan-gular pan

1 Grind the toasted coff ee beans, cloves and cinnamon together in a clean dry mortar or coarsely in a ma-chine grinder.

Ethiopia produces 54,000 metric tons of organic forest honey annually making it the
highest producing country in Africa. There are approximately 1.5 million beekeepers in
Ethiopia and 8 to 10 million bee colony hives. With its unique characteristics including
its white, amber, red and black coloration, Ethiopia is an important source for specialty

1 In a bowl, mix fl our and eggs. Slowly add the milk and water.
2 After it’s all combined, add the salt and butter
3 Heat a large pan with a little oil in it
4 Pour ¼ cup of the batter at a time and tilt the pan in a circular motion so the batter is evenly coating the surface of the pan evenly
5 Each crepe will take about 2-3 minutes to cook
6 Remove from pan and drizzle honey on each crepe and serve warm.

African country has the largest livestock herds with 52 million head of cows, sheep and
goats with annual organic meat export potential of 111,000 metric tons. Currently, the
UAE, Saudi Arabia, Kuwait, Bahrain, Oman, Yemen, Egypt, Congo, Angola, Hong Kong
and Vietnam are recipients of Ethiopian organic meat exports.

1 Rub the meat thoroughly with berbere until its evenly covered. Let it marinate for about 3 hours.
2 In a hot skillet sauté onion in 3 tablespoons of oil until onion is golden and leave aside
3 In a heavy saucepan, over very high heat, place beef in a single layer and let it sear on one side. Slowly fl ip the meat and let it sear. Add rosemary and cooked on-ion and continue to cook the meat while continuously stirring, until it reaches the desired level of doneness.

2 Roast at 300 degrees F for about 15 minutes
3 In another bowl, mix, honey, garlic, ginger and berbere.
4 After roasting the beans, toss the beans in the sesame mix ensuring that beans are well coated.
5 Return the beans back in the oven and roast for another 10 minutes. Sprinkle with sesame seeds and serve.

3 In a hot skillet, pour a quarter of the teff mix in and let it cook 3-5 minutes, then turn it and let it cook for another 3-5 minutes. Do the same until you are done with all the batter.
4 Roll the teff bread and cut in slices.
5 Mix with sesame blend and serve warm or cold.
